- Originally of Chinese origin and similar to the spring roll, this appetizer is very popular in Mauritius.

Ingredients:
2 Chayotes (grated)
2 Carrots (grated)
1 Bamboo Shoot (julienned)
500 g Chicken (minced)
250 g Shrimps (cut into small pieces)
3 Garlic Cloves (crushed)
3 - 4 Mushrooms
(Shiitake or Black Mushroom)
2 - 3 TBSP Cornstarch
Salt & Pepper
1 TBSP Light Soy Sauce or
1 TSP Fish Sauce
For the batter:
150g All purpose Flour
9 TBSP Oil
225 ML Water

Hello, yes it is 9 tablespoon of oil and for the sauce it's either 1 TBSP of soy sauce or 1 TSP of fish sauce 🤗

How to freeze the hakien?
Fry the Hakien once in the batter, then freeze. To serve, remove Hakien from freezer and prepare the thin batter, they should be at room temperature before frying. Fry 2 times in the thin batter to make it crispy! The oil should be hot, else the Hakien will soak the oil.
How many pieces did u get approximately?
Around 15 -20 Hakiens depending on the size 😊
Hi is there a chance of knowing an approximate ratio in weight for the meat/shrimp to the veg (carrots/chayote/bamboo shoots) as two carrots and two chayotes can leave a wide margin for end results ?

Hi there, difficult to say as the size may vary and we did not take the weight of the vegetables. But we used 1 medium carrot and 2 big chayotes.

I live in London and the chayote is an imported vegetable and hopefully I’ll manage to get the size you mentioned.

By the way you mentioned in the batter that 9TBSP ( which I understand table spoon of oil with 225 ml of water in 150 gram of flour ?
As I understand 1tsp is approximately 5 ml and 1TBS is approximately 10 ml and it looks like 90 ml of oil is that the right amount or a typing error ? Or the right measure ?Just to make sure before I take the plunge !!! LoL.
Yes it is 9 TBSP for the batter to have the right texture.

Hi. Can I use cabbage instead of chayot?
Hello 🤗 yes you can but need to cut into thin slices, else it won't bind with the mixture and will break in the process as for this recipe we did not wrap in a spring roll 😊
