Hats off to you Sally, when probably all you wanted to do was chill out as you’re not feeling 100% well, here you are bringing us mindful baking. Hope you’re feeling better soon.
As much as I enjoy another lovely recipe with Sally, I must disagree with you, as I believe that the culture of 'I'm not feeling so well but I'm gonna muscle it through' and maybe spread the cold to someone else in the process is very harmful both to the coworkers and the employers, therefore also for economy🤷
Tried and tested - absolutely amazing! I loved making these by hand, it was so therapeutic, I skipped on the white chocolate, added an extra lemon worth of zest and used sunflower oil instead of light olive oil as I couldn't find any and they're genuinely the best muffins I've ever tasted, absolutely beautiful and the crunch top, oh my just gorgous! I've baked so many cupcake jemma recipes and loved them all but this, THIS is my favourite!
Hi, Jess! I was wondering if I could use vegetable oil instead of olive because it can be quite expensive in my country. Did you use the same amount of sunflower oil as the recipe asks for, or did you have to make adjustments? Thank you very much for your time!
When having a bad mental health day...just listening to this just makes me calm down. All of these are incredible. Your voice and the music is just perfect!
👏 REVELATION! I’ve ALWAYS struggled with muffins, they splurge out along the top and never rise into the dome shape. Chilling the batter is such a fantastic tip! Thank you to Sally and the Cupcake Jemma team for being so generous with your recipes and nifty tips. You’re the best xxxx
Just made these with my 6yr old grandson, and although it wasn’t a ‘mindful’ experience it was fun and the results are AMAZIING!!! I have always baked with my grandchildren from toddler to teens and our go to recipes are Cupcake Jemma’s as they always turn out so well. Thanks for this one Sally x
My kids and I LOVE your channel. My 3 year old requests "cake video" for her to relax to for quiet time. The other two have a long list of cakes, muffins, cookies, etc. that I absolutely must make for them now, of course. And I must add I'm very happy every time I get the notification of a new video. Much love from Canada 🇨🇦
I had another go at these and turned them into lemon meringue muffins. I just made the plain version with a bit more lemon zest and added a couple of tablespoons of lemon juice. I made holes in them and filled with lemon curd (the recipe from this channel), then topped with toasted Swiss meringue. They turned out amazing and I'm looking forward to trying other variations.
Thank you Sally! I will try these for sure. I know they’ll be delicious. I’ve been making your NY Cookies and they are soooo good! My family loves them and the fact that you can bake one up whenever you want is a bonus. I look forward to coming to England and visiting Crumbs and Doilies.
I really like this series because you really don't need any mixer or anything, I like there is no noise from mixers etc. because sometimes I really don't feel like it. I tried the crumble bars with pears from my garden and shortbread with walnuts from my garden and liked it a lot. Thank you.
Here I am, baking these delicious muffins, can’t smell anything because I got stuffy nose, but soon as I started zesting the lemon, my nose is not blocked anymore…😀 Best baking therapy ever! Thanks Sally ~~🥰😍 Also the muffins are DELICIOUS!! Thank you for this lovely recipe ~🥰😘❤️💕
I love these mindful videos. I know the perky high energy ones are really popular and engaging, but baking is a relaxing and grounding activity for me, so I really appreciate these ones.
Just made another batch today as chocolate muffins. I took out 50g of flour and added 100g of cocoa powder. I also left out the lemon zest. I know that is a bit more dry stuff but I also added some coffee and a little extra milk. I used about 200g in total of assorted chocolate chunks. The result was a slightly thicker batter but they baked well and taste amazing.
I’ve watched this SO many times. It is incredibly relaxing to watch! And I finally made the muffins last night…currently in the oven and smelling delicious! Thanks, Sally, for making such beautiful videos 🥰
Made a batch of these muffins for my child to share with her classmates in school, they were gone in a flash. I made the blueberry with lemon zest version, they're sooooo good! Thank you!
This is my favourite type of baking. Just you and your hands (and of course the electric oven and scale) experiencing every little transformation of the mixture as you add in yet another ingredient.
What a coincidence. I've been obsessed with making muffins lately and i was just about to check if your channel have a raspberry muffin and here it is! Thank you so much for the lessons and definitely will be making muffins again in a few days.
I made these for Xmas with white choc and cranberry and topped with the granola topping from Jemma’s muffin recipe and everyone’s loved them. Made 24 and they all got eaten
These muffins are perfectly delicious! I used freeze-dried raspberries. I just ate one which I had put into the freezer the day after baking ... still perfect. With a great cup of coffee.
@@louiseoreilly5638 I don't remember exactly, but I think I used about 20 grams max. 100 g of freeze-dried raspberries would be way too much (and too expensive 🙃). Enjoy!
Thanks a lot for this sweet delight! I tried it and it’s so fluffy tastes like clouds in my mouth. For the 6 muffin pan, I only did half the ingredients written and worked great 👍🏼 keep up the Mindful work 🍭
I've just made these but with Cape gooseberries( I'm in Cape Town!) instead of raspberries. Really delicious & nearly all finished already!( I put the white chocolate chunks in the batter so they could get cold overnight too; otherwise our white chocolate melts too quickly). Hope you're feeling better, Sally.
Yayy just made these, reduced sugar by 25% and ended up with 15 delicious muffins, in loveee Do remember the sugar topping before baking, I forgot for my first 12 and the texture was a bit too the same throughout… also could probably up the raspberries to 150 or 200g
I've just made these and they're sooo tasty! Thank you for another amazing video. I'd love to know if you have ideas for a savoury/cheese muffin, or carrot cake inspired ones 😍
Lovely video Sally! and just perfect timing.. Am also having a cold now 🤧 and i can imagine these muffins will be heaven for my taste buds.. Get well soon!
Thank you for sharing this awesome recipe. I've been failing to make good muffins for awhile now but you have just changed that! I made chocolate chip muffins using this base recipe and the family love them.
Love the mindful series as it reminds me of why I started baking as a hobby! Thinking of making the chocolate orange variation, any tips on how I can incorporate cocoa powder into the muffins? Thank you!
We dont have light olive oil in France, only extra virgin. Which oil should I use I'm your opinion, to have the same result? Also thank you for sharing your mindful recipes I love them. And even with a cold you light up the room.
I can't wait to make the cinnamon-apple ones. They have such autumn/winter vibes~ But these raspberry ones look so lovely, too. I hope you're feeling better by now
These are awesome! I just went with the raspberry and white chocolate version this time but it would definitely be good to experiment in future. I used demerara sugar for the topping instead of caster and got 16 out of that quantity of batter, though I was perhaps being a little conservative on how much I filled each. I've nothing against using machines to aid in baking but I do love a good recipe that I can get more hands on with, which may be why I always knead bread dough by hand.
So beautiful Sally! If only I looked like you whwn I'm sick 😂 and love that sweater! Would you tell where you got it maybe please? 😊 Thank you so much for another mindful baking session
Another yummy recipe! 😋 (as always!) Hey if it's got white chocolate in it then it's a winner in my eyes 👀 Hope you feel better soon Sally 🤞 As my mum always says, men get colds, women get on with it!! 😃 You just proved her right! x
Hi sally I think I'm gonna be making these!!! I just have one question though , do u think I can use normal vegetable oil instead of olive oil??? Thank uuuu!🤗😘😇
