  • Let’s grind sliced meat to make Menchi-katsu, deep-fried breaded ground meat. Fresh and crispy Menchi-katsu with homemade ground meat is absolutely delicious!
    How to Make Menchi-katsu
    cookingwithdog....
    (serves 2)
    100g Thin Beef Slices (3.5 oz)
    60g Thin Pork Slices (2.1 oz)
    100g Onion (3.5 oz)
    ½ Beaten Egg
    3 tbsp Nama-Panko - Soft Bread Crumbs
    ¼ tsp Salt
    Pepper
    Nutmeg
    ½ tbsp Tomato Ketchup
    1 tsp Japanese Worcestershire Sauce
    100ml Cake Flour or substitute all purpose flour (3.5 fl oz)
    ½ Beaten Egg
    600ml Soft Bread Crumbs (2.5 cups)
    Vegetable Oil: 170°C, 1.5cm deep / 340°F, 0.6 inch deep
    - Menchi-katsu Sauce -
    1 tbsp Tonkatsu Sauce
    1 tbsp Japanese Worcestershire Sauce
    1 tbsp Tomato Ketchup
    1 tbsp Hot Water
    - Side Vegetables -
    Shredded Cabbage Leaves
    Baby Salad Greens
    A Thin Tomato Wedge

    Even after all these years. I come back to watch cooking with dog’s videos when i want to cook japanese food.

    I'd love to see Chef go against Morimoto for the Japanese Iron Chef title. I think she could beat him! She makes things look so easy and delicious! It really is a joy to watch her and Francis in the kitchen. :)

    The winner of the 2015 Burger Bash at the SOBE Wine & Food Festival in Miami, was Chef Morimoto's Menchi-katsu burger. I have NEVER tasted a burger as delicious as that in my life!!!!

    Thank you for this recipe, Chef and Francis (R.I.P.). I made this today and it turned out great. I didn't have ground pork on hand, so I just used ground beef. Came out perfect. This is a keeper and I will be sure to make it again in the future.

    I love how sometimes this show randomly shows variety of cool tools like that automatic pepper grinder. And the way she cooks! It's just super neat and calm and smooth, total opposite of how I would ever cook lol. Love this channel so much.

      Because humans are known to do whatever gives them even the slightest feeling of happiness to sway them from the reality if their ultimate demise, you could always buy ingredients later

      I'm in the same predicament at the moment. All I have is a tin of tomatoes in the cupboard and some milk in the fridge. It's like my brain says "aha! No ingredients in the house - time to watch cooking videos!" lol

      One time in my life when I was young all I had in my kitchen was white rice and ketchup. It happened to be on Thanksgiving day too. After seeing what other people in this world may or may not have to eat sometimes, I now am honored and have much appreciation for that day and I'll always be grateful that I even had that. It actually tasted pretty good too.
      As far as not having all the ingredients to make something that you watch on RUclips that makes you hungry, I still run into that. Good Luck and hope your belly gets filled with something delicious.

    Thank you for this recipe. I love Menchi Katsu ever since I was a child growing up in Japan. Neighborhood tempura venders always had menchi. They sometimes brushed with sweet "Tare". Childhood nostalgia.

    You can add oyster sauce to the ground meat instead of Worcestershire sauce but Chef doesn't recommend using it for the menchi-katsu sauce.

    No problem. Since discovering Panko it has been great on just about everything needing breadcrumbs, Much lighter and fluffier than regular stuff.

    I just made this! I used panko instead of soft crumbs and store-bought lean ground beef and they turned out AWESOME! I had to do mine at a lower temp (somewhere between 250 and 300F) for longer to get them gold instead of charred, but mine were probably much bigger (bass player hands, yo.)

    These were absolutely delicious. I didn't have any nutmeg so I substituted it with Chinese Five Spice blend and it worked out well.

    We have a dish like that here in Scotland, called a "Scotch egg" - it's just like menchi-katsu but with a hard-boiled egg inside.

      I was given to understand that a Scotch Egg was covered in sausage, rather then a Hamburger/Onion mixture?

      That's true, it is usually pork sausage meat and sometimes with a little minced onion mixed in too (though I've seen versions with chicken or Quorn, the pork ones are the most usual.)

      Scotch eggs are very popular in Japan, too. Sometimes we make mini Scotch eggs with quail eggs. Kids love them.

    It's ok to use tonkatsu sauce instead of Japanese Worcestershire. Bull-Dog Sauce is a name of a company that sells a variety of sauce :)

    Regular Worcestershire sauce and all purpose flour can be used instead of Japanese Worcestershire and cake flour. (^_^)

    Soft bread crumbs give the menchi-katsu a pleasant crispy texture. Dry bread crumbs give it a crunchy texture. You can lightly moisten the dry bread crumbs if soft one is not available :)

    Yes. Panko has a much lighter texture than normal bread crumbs. I have found that they also cook differently as well. If you were to use typical western style bread crumbs the outer portion wouldn't hold together the same way and you wont end up with that light crispy texture that you get from panko.

    It's the gluten content. Bread flour has a higher gluten content, which enables the rising and structuration of the bread; cake flour has the lowest gluten content, which results in soft cakes (you can make cake flour by mixing 1cup minus 1-2 tbs all purpose flour with 1 tbs cornstarch). All purpose flour has an intermediate gluten content, and self rising flour is AP flour with a leavening agent.

    I had to substitute cake mix with pancake mix, I also added cheese in the middle. It came out great! Thanks for the recipe!

      It's not cake mix, hun, it's cake flour. Just plain ol' white flour with a different protein percentage than say, bread flour (which is also just white flour).
      I can't believe pancake mix worked. Sounds interesting!

    Japanese Worcestershire sauce is just thicker and sweeter. you can purchase it at a Asian market and in cities with large Asian populations you can also sometimes find it at large markets. Usually comes in a plastic oval shaped squirt bottle with a flip cap marked okonomiyake sauce.

    合挽ミンチをキッチンでお作りになるとは驚きです。
    確かに、できあいのミンチ肉は少しこわいですから。
    私も以前、ハンバーグ用に包丁で試してみましたが、
    叩き方が不十分だったのでしょう、上手にできませんでした。
    最近は、油で「揚げる」、「炒める」料理はできるだけ控えるようにしています。
    トンカツなど揚げ物は、もっぱらオーブンを利用するんですよ。
    昨夜は、広島風のお好み焼きを作りました。一度試してみてくださいな。
