    So glad to see that you're doing things like pastry fundamentals. I remember when I boght Cedric Grolets cookbook on fruit based deserts. I felt I was in over my head. But your videos helped me to visualize the progress and understand the recipies better. And I also gotta admit that I like some of your interpretations better than Cedrics, you're a real master!

    I have diverticulitis... if I found a pastry / dessert dot-dot-dot... that would be my suicidal dish...       You can use Agar Agar it’s a vegetal gelatine . Pectine is another one
