I work for a craft distillery in AZ and we take beer that has gone bad from a few craft breweries. You should reach out to a small craft distillery near you and I’m sure they would love to try to turn that into something good.

You could potentially get some good vinegar from those wines. To experiment with making vinegar, just pop the cork and leave it in a dark warm place for a couple weeks then taste it. If it doesn't taste too acidic, let it sit longer. You could then sell the vinegar to local restaurants or keep it for when the resort opens.
I love seeing what you're going to do with this place. I think it would be cool if you'd build like a huge barn for the event hall and or maybe even a barn chapel ❤
Thats why you always ALWAYS take a bug heavy blanket or carpet or something, drape over the chain. So if it snaps, it helps contain and obsorb the energy

I think when you’re close to finishing the resort, you should put a tribute or something on the ranch/resort for him. I’m sure he’s up there smiling and watching your adventures, and doing what he can to make sure you succeed.
Might be worth checking out the I-beams to see if they're still straight. Those things aren't cheap and (may) still be reusable even if that means having to cut them down to size for window and door lintels.

Put something heavy on the middle of the chain when your pulling for when it breaks. We've always used big pipe slings for it but people get heavy blankets or something so the chain doesn't snap back and hit people or your truck.

Definitely a lesson you should know by. But, having a ranch, resort, a house on a hill, and pneumatic tires on your equipment.... You should know that having a tire plug kit with extra plugs will ensure your equipment that is bound to catch leaks will be field repairable. If you have enough plugs, you can fix 1 inch slashes in sidewalls. A small puncture on a tractor can be plugged easily.
I love watching you demolish those buildings. Very satisfying to watch lol. Really sorry that none of the wine was salvageable. Was hoping some might of bee good.

I've read that there are centuries old wine bottles (containing wine!) that are worth many tens of thousands of dollars. They are valuable due to their age and rarity and investment value even though the wine can never be drunk as it's basically battery acid. So, keep those bottles for a 1,000 years or so and your descendants will be rich!
Those are usually properly stored or famous for whose collection they come from. But also usually aren't collected to be consumed. Also pre nuclear radiation wine can have an increased price. But none of his wine would fall under that.
This has been an amazing journey so far, but I am going to be that guy a little bit and say please be careful when knocking over buildings! With you new events centre, built it to be able hang more than you need. So you can hang a big PA and a whole lighting rig plus cables and make it so you have the ability to hold band tours.

I’m thinking about you repurposing all the spent wood on a giant fire pit and if you put in a random place out of sight, use a loader to fill up “PEARL” for giant fire nights during the rainy/cold season, it would be a cool gathering place for the campers and guests. Just a basic pole barn to cover it from the rain and weather so it’s usable as firewood. Even if there are nails/screws etc… you can go through with a pole magnet to pull them out every once and again to prevent issues. Maybe like a fire ring with a ring inside so that when it’s all aflame it is an actual ring of fire - what a cool shot from a drone that would be, especially good B-roll for advertising.

Yeah, I know this video is about a year old. But it made me thirsty so I went to my liquer closet to get something to drink. I was rummaging around and found 2 bottles of my favorite wine and checked the dates. 1 was 8 years old and the other was 5. They were NOT stored properly. Standing and kept between 60-70 degrees. Never meant to keep them for long, just forgot about them. 8 year old was BAD. 5 year old, not bad. I'm only commenting because without watching this video I wouldn't have known they go bad AND I never would have found them till it was way too late and tried to drink them. In other words, Thank you Matt for this video.
Here's an idea, have you thought about building an amphitheatre type structure down in the southern section of your property? You could have a venue for concerts or other special events. And if you put it down in one of the ravines the noise wouldn't travel as far, there would be plenty of room for parking and you could even build it's own dedicated entrance. Just a thought.
