this is by far the most comprehensive hotpot/shabu shabu video i've seen so far. thank you so much for showing not only the prep but the delicious eating part as well~ 💗💗💗 i can't wait to try this out.
My stepdad is Japanese and he always makes hotpot in the winter. Omg it's one of my favorite dishes, I need him to teach me how to make the broth. He makes his a bit different and I haven't tried it with the 2 different sauces before. Usually we use ginger and add it to the broth, then I use a bit of soya sauce to my tofu. He also only cooks veggies in the hotpot, sometimes he will add a hard boiled egg for us. I'm glad I found this video bcuz I would like to try and make it for myself, I will have to buy a small pot and a small heating element 😁
wow that sounds good as well! well, in Japan there are surely more than 50 to 100 variation of Nabe Hotpot and it also depends on regions. so just be creative with it! you actually don't necessarily have a special pot, but I used to use just regular metal pot for it and heated on the stove and brought to the table when ready.
I lived in Kainan Shi in Wakayana Ken for a year. A local family invited us for nabe dinner most weeks. In winter we sat at the kotatsu with the warm blanket. It was very warm, the food was delicious, and the company kind and hospitable.
Your tutorials just couldn't be better! Such a perfect simple instruction and also really fun to watch. You make it feel achievable to do at home. I love that you think of all the replacement ingredients if it's not easy to buy in other countries. Thank you for all your effort and hard work. I really enjoy it 🙏👌
I love Japanese food, especially the soups, especially the miso. But the way you eat, man, I really want to go immediately into a restaurant! This is the best channel I have seen about Japanese food!
My local Asian market has changed my life. They’ve got it all. From thin sliced meat for amazing prices to noodles and sauces and my favorite trumpet/king mushrooms. Plus you get so much more food than traditional American stores. To top it off next door is an Asian market for restaurants and they carry every cooking utensil you could ever need for great prices as well. And now I’m hungry. Love these videos.
Awesome, love your channel. You’re actually a lot fancier than me but the way you make shabu shabu is way more realistic for me than the other channels :)
@@taijiskitchen I made it!! It was great fun, made both types of sauces as well. Am looking forward to experimenting with different vegetables and flavours!
You make me want to eat whatever you make. So I shouldn't plan on watching whatever delicious food you make before cooking whatever I had planned! The way you enjoy your food is very contagious! I read the thanks you say before and after eating, but it sounds different than what I read. I want to learn that, too. Eventually maybe they will absorb into my brain...
Hotpot is one of my sons favorite meal. Eating hotpot is the only time my boys eat lots of vegetables 😁 with their meat. Now I know how to make the two sauces from scratch. Thanks so much for sharing the recipe.
Ahhhh, Shaun Shaun is my favorite, I grew up next to little Saigon in S. Cal. I moved to Oregon and there aren't any restaurants in my town, I would have to drive at least an hour or more to get to one. Thank you for the recipe, now I can make it at home anytime I want!
Thank you for this great video. Love to hear your enjoyment of the food! The Slurp Alert was cute too :-). Thank you for sharing your joy with us! Your instructions are clear and understandable, I will be making this soon! Thank you and Many Blessings from a new subscriber!
i don't know too well about meat parts, but depending on if you like lean or fatty cuts. if you prefer lean, then round or shoulder, but if fatty, then loin or rump. for the pot, in most asian supermarket or surely online.
I often watch this video and can't figure out what kind of soysauce you are using with the grey lid. I only know red lid and green lid. Is it salty or sweet soysauce? Thanks for all your free receipes and amazing, clear video's.
I love this set of ingredients. Almost the same for sukiyaki. I just throw everything into a pot of water and sukiyaki sauce and just boil the entire thing over a low flame until the cabbage and carrots become soft. Then I have it with rice or udon, and dip the ingredients in either raw egg or some sesame sauce. So technically, it's like a lazy person's hybrid meal.
I did not know you could eat the konbu. I always thought that maybe it was too tough? As I've always onlys seen it used to flavour the broth. Glad to see it's not wasted 👍😊😁
I think of japanese cooking as being the healthiest there is. Now I learn from your channel everything I need to know to cook healthy at home. I want home cooked japanese food, not the delivery or restaurant, which is not traditional in restaurants in Europe. There is a tndency in restaurants to make a europenization" of recipes. Thank you a lot
Just out of curiosity, are all the ingredients washed prior to cutting? And the sound you made is soooo cute when water came out from the tofu box as well as oil dripping from sesame paste bottle, hahaha~~
What is that strip of something ( couldn’t understand and didn’t find anything in recipe below that sounded like what you said) What is it? And where would you purchase?
oh, that is strip of KOMBU, or Kombu kelp. I forgot to put it in the ingredients... sorry about that, and thank you for the question! it is a type of dried seaweed, something to make a broth out of. you could buy in most asian market or online. more exactly, I am explaining in this video of Dashi (Japanese stock), if you are interested. ruclips.net/video/PS1B5X4a2_U/видео.html
My only complaint about hot pot is sooo many dishes! Plus it's more involved but man is it good. Thx for this. I wanna know if a small Dutch oven will work for this as well?
I read that he told someone else that you can make it in a regular pot on stove then transfer to table after you finish cooking. Or you can cook it in the donabe if your stove is a gas stove. You can't use a donabe on electric stove though.
How many times should you say “shabu” while doing the shabu motion? Does it depend on the cut of meat? Do you also say “shabu” when dipping into the sauce and if so, how many times should you say it?
it depends on the cut, how high the soup temperature (boiling or lukewarm) but also more on how rare or well done you like. I usually go 5 to 7 times back and forth. and when I am eating alone or with other people, I don't say it out loud, I say Shabu Shabu only inside, lol.
this is by far the most comprehensive hotpot/shabu shabu video i've seen so far. thank you so much for showing not only the prep but the delicious eating part as well~ 💗💗💗 i can't wait to try this out.

You put the pulp in the ponzu sauce, so that's an instant subscribe.

I love doing hot pot
This looks so simple. All one needs is staple ingredients, and the meat. I have everything but that on hand. Now to find a shabu shabu cooker!
you don't necessarily have this special pot, you can use just regular pot as well!! the taste will not change, just looks cool, i.e. authentic!!
Hello Namaste , love from Kathmandu

You're a very good teacher of your culinary talent, and I'm inspired to learn . Thank chef Taiji....NY 👏
My only complaint about hot pot is sooo many dishes! Plus it's more involved but man is it good. Thx for this. I wanna know if a small Dutch oven will work for this as well?
hahaha, I agree!
and yes Dutsch oven is actually good idea, instead of these porcelain pot, since its more of an aesthetic thing.
I would also put chopped scallion and grated daikon radish in the ponzu sauce.
Thank you.
I appreciate your slurp alert.😀
Gosh, this is making me hungry, and I’m already in bed at 10:24 pm in the US. 😋
So what actually word schabu means? I usually Froze a piece of meat and than i slice IT like for carpaccio
Any suggestions on how to put nabe together when you don’t have a portable stove; and have to cook at the stove rather than the table?
I read that he told someone else that you can make it in a regular pot on stove then transfer to table after you finish cooking. Or you can cook it in the donabe if your stove is a gas stove. You can't use a donabe on electric stove though.
Where can I find a stove like yours?
美味しいそうです
ありがとうございます!!
美味しいですよ〜、是非試してみてください!
How about mashed boiled daikon and dashi dried tuna flakes. Oishii
Can you put udon noodles in the nabe too?
What cut of beef would be preferable for this?
👍👍👍
Oh 🍶 Sake 😋
Dumb question but can I use the same broth for hot pot
Would like to see garlic chicken made with 3 different edible fungi . Would you be able to make Japanese style.
How many times should you say “shabu” while doing the shabu motion? Does it depend on the cut of meat? Do you also say “shabu” when dipping into the sauce and if so, how many times should you say it?
