extremely late reply, the reason this happens is that when you blend it you break up the large ice crystals into smaller crystals. if you do this repeatedly (~30 minutes between breakings) with a blender or with a fork etc, you can get a smoother texture until you let it go for it's final longer freeze.

I was half way through vacation. I had one every day until I came home to California. There's not many Rita's in Southern CA. 3 total I believe, There's was one 4 miles frome home. I was a regular until I moved. It was 104 degrees today and Rita's is too far. I had to learn how to make my own, I love it so much. I'm not even Italian! I hope I live to 116 yrs old. I missed out on the first 58 yrs thinking Slurpies were good. How wrong I was. I see Italian Ice as gourmet ice.
this is my recipe for italian ice 1 can of black cherry polar seltzer water frozen cherries a little frozen pineapple a half of a limes juice and 5 tablespoons of sugar

You added straight sugar instead of sugar dissolved in water. If you add sugar water instead of straight sugar it will be creamy.

Make a big batch in a pan then before the last freeze, put them in the cups maybe 🤔 so you don’t have to blend individually
