hunclemike is right, thousands people still make a lot of cured meats nowadays. Especially if you grow your own pig/s with care and attentions that big livestock farms can't perform. When the pig is killed a part of the liver is checked professionally and that is enough to make sure the products will be safe, I've done it for years and I can confirm that homemade "salame"(this is a superficial definition given to the cured meats, in fact you can make at least 10 different specialities from a pig) is better than the average bought at shops(and cheaper)
