It was a feature on the IE stage one tune. it acts as shift reminder while your in manual mode where the computer would typically shift if it was in auto mode.

The real question can downstream oxygen sensors be replaced just with removing the engine cover?

Dont take this as a jab Eli, but for a guy who usually likes to take the harder or more complicated projects to a friend in a shop Iam really surprised you undertook this job. Iam still watching the video so I dont know exactly how difficult it was yet but just looking from the top and the little I know about the S6, this job is a massive pain in the weiner.

what brand is your air intake?
Oh hey DOES ANYONE know what that small metal box is directly infront of the engine with the 2 coolant pipes running to it? If I had to guess its a heater to provide faster in car heat and even engine off key on heat but not sure. Looks interesting.
That's the stock intercooler. The hoses are for the coolant which runs through the intercooler, through the heat exchanger, and back through the coolant pump to the intercooler again. That's why the S6 heat soaks pretty quickly, even with a much larger aftermarket heat exchanger and the pump on 100%, which is how I'm currently configured. I'm strongly considering installing the FI Interchiller system to bring the coolant temperatures down to sub-freezing.
How is your redline raised to 7k rpm? Is that part of the IE TCU tune?
Its in the ECU tune, same on mine with DS1 tune

To me, way too loud. But I am up in years. Would have liked a moderate deep tone.
It is fairly moderate, but maybe stock downpipes and an AWE Touring or simply stock exhaust would be good for you!
