I am down from Arizona for a short vacation in Mangalore till the middle of this month. Maybe you should visit this small coastal University town , with its own unique sea food and other food culture, which has become very popular across India. Also well known for its temples, a church chapel that was commissioned by Italian jesuits in the 1800s for the ceiling frescoes and 180 feet tall statue and so many other attractions. I had enjoyed your vlogs on your previous trip and it’s just amazing and fantastic that you decided to bring your Mom to india. That’s so sweet and amazing of you. Visit Andaman and Nicobar islands in India. It is really wonderful. Do some reading about it and you will definitely go there. These islands are connected by air and ships. Also visit north-eastern states. You will be amazed. If you have plans for sri Lanka, There is a newly started ferry service from India to Lanka. Try it. A one-way ticket costs approximately Rs 7,670, with a baggage allowance of up to 40 kg per passenger. The journey starts from Nagapattinam in Tamilnadu at 7 am, reaching Kankesanthurai in Sri Lanka by 11 am. I think you don't need visa for travel to Lanka. Even Indians don't need visa now. All the best.

Also went to India last year for 2.5 months. I intentionally made it as difficult as possible for me because I didn't want a typical touristy experience. Lived in mostly hostels and some new Indian friend's house. Intentionally take pubic transits like trains and really bad local buses to challenge myself, got my phone stolen on the bus, but that was probably the best thing happened to me there. Avoided Goa and Rishikesh, but did go to the world's largest slum in Mumbai and Varanassi, cultural shocks was massive, especially seeing public cremation. India changed me, only because I asked for challenges and India over delivered.
Wishing your mother a wonderful trip to India! It might be wise to steer clear of Delhi at the moment due to pollution concerns, especially for those with health issues. An N95 mask is recommended if travel there is necessary. The southern part of the country is particularly pleasant right now. Best wishes!
