Eating an Ortolan inspired Pigeon Dish

I remember a 60 minute documentary many, many years ago showing the entire experience, from the bird in the cage in the kitchen, the chef preparing the bird and cooking it and the dining experience. A whole damn bird, eaten in one bite....ugh...guess it sort of akin to sardines, eh?

Sadly Robbie I confused people who didn't read my entire story on the adventure - always tough to share a video that is part of a larger story...it WAS delicious, it was a fun homage to a different time when people were shamed for eating Ortolan, so a napkin was draped over their head - here they just "shielded" me from the other diners as part of the theatrical nature of the dish - it wasn't Ortolan but Pigeon!
