According to World of Thai Food here on RUclips, Jungle Curry is a misnomer, and paa ป่า is not really jungle here, but originally paa(ka) ป่าก์ from Pali referring to culinary artistry.

The specific curry I’m referring to from 1908 cookbook at 0:31 is ปลาดุกแกงป่า, not ปลาดุกแกงป่าก์

Okay okay, I know I'm gonna get a lot of flack for this, BUT what is a good substitute for a less spicy (as in HOT) way to cook some of these Thai dishes? So, I'm a super taster which means I've got extra taste buds than normal people so it hits like a goddamn truck. I am obsessed with Asian food but often find barriers when wanting to make authentic food with a little bit of a shortcut on that aspect. If that means I can't enjoy all this amazing stuff then okay 😭 but I figured it's worth asking

No Flack given - it’s a misconception that all Thai dishes need to be spicy, or that all Thais eat spicy, there are plenty of dishes to choose that are not spicy by nature. Jungle curry is not one of those dishes - however you can easily make it not spicy by removing the dried small and fresh Thai chili’s and sub in a deseeded longer chili such as guajillo or puya which has great fruitiness and aroma while providing color and not too much spice. Thanks for subscribing, more videos to come!
