- We sent the very special Andy Baraghani to the iconic Nom Wah Tea Parlor in Chinatown to learn all about dim sum and Cantonese cuisine. Joined by cookbook author and activist Grace Young, Andy tastes his way through Nom Wah's menu and then learns how to make some Chinese staples, including char siu bao (barbecue pork steamed buns), beef spare rib rice roll and pork & shrimp potstickers.

When you've watched a Chinese chef crank out dim sum like nothing and then try to make ONE yourself, it is a humbling experience.
I feel ya. I've made some Dim Sum before and it made me realize how much time and effort is needed.
but her saying dim sum means "touch heart" makes her credibility plummet for me...
@@300blackcats There’s no reason for her credibility to plummet. Dimsum is a Cantonese cuisine, and as such, dimsum is obviously a Cantonese term. Cantonese is a dialect of Chinese, and has its own variations in how words are spoken. So, yes, dim sum means “touch the heart” in Cantonese. But it’s more commonly referred to as Chinese, since it’s the umbrella term.

i really think Andy has done his homework on the rules/culture about dim sum! He even poured tea for Grace Young!! This is one of the unspoken rules when having dimsum. You pour tea for someone you respect and elderly

As a 5th gen Chinese American and long time BA fan, this brought me so much joy! Andy and Wilson make an iconic duo.

This was such an awesome episode. The habit of paying for the bill is so that you don’t “lose face” in front of other people. Sure, it’s hospitality but there’s a deep ingrained culture of the need to feel respected too - money talks in Chinese/canto culture.

as a southgern chinese (teochew specifically) thanks for educating the rest of the world of the southern specifications of taste, bc Chinese food isn't always one thing we are so vast in different varying regions of cultures taste, the south is more refreshing
We are accustomed to eating Southern Chinese food because of migration, war between China and Japan, Ww2 and how Chinese people were poor at that time. Migration was key how they brought their food heritage and culture with them. Over time, the humble beginnings and growth brought it to other countries and America's Chinatowns for over 100 years. For the past 20 years, we come to experience other regions especially East And West China like Jiang, Shanghai, Yunnan, Mongolia more slowly.

The 1848 California Gold Rush was a major factor for the Cantonese Migration; even today many Cantonese-Americans
refer to San Francisco/CA, as Gold Mountain - "Gum San".
Japan's depraved + barbaric behavior during WW II, not just in China, but throughout Asia, was not a factor.
glad to see fighting over the bill isn't primarily an asian thing... its an every culture thing! just goes to show how much we appreciate the company of our friends and how those memories are priceless.

I have to say that I relate so much to the scene of making the rice paper on the steamer so much! My boyfriend is always so amazed when I can hold hot things without kitchen mittens. It's just practice.

Jing Fong actually does spare ribs with rice rolls and other dim sum restaurants serve that as well just to edit what Grace said. Beef rice rolls and other rice rolls are always ordered at dim sum restaurants.
