Best homemade recipe for Ben's Cookies | How to make Ben's cookies

  • Cookies that taste just like Ben's Cookies! They are gooey and soft.
    I discovered Ben's Cookies over 20 years ago and would often get my cookies from Kensington High Street station on my way home. They are amazing and I have tried to create something that tastes like them. During lockdown it was a nice treat.
    This recipe makes about 15-16 cookies depending on what size they are.
    You need a stiff dough and if it is not stiff add more flour, however if it is too stiff add a tiny amount of milk.
    Ingredients:
    600g plain flour
    1/2 teaspoon of salt
    3 teaspoon of baking powder
    150g unsalted butter (at room temperature and cut into cubes)
    200g light brown, soft sugar
    2 large eggs
    1 teaspoon of vanilla extract
    150g of dark chocolate (cut into big chunks)
    Preheat oven to 180C, 350F
    Getting your baking sheets ready.
    1. Mix the flour, salt and baking powder and set aside.
    2 Melt butter (in microwave) and add both types of sugars and mix well. Make sure the mixture is cool and then add the eggs and mix well.
    3. Add the vanilla extract.
    4 Now add the flour gradually to the wet ingredients.
    Once ready put the dough in the fridge for 20 minutes (overnight is even better).
    5. Roll the dough into balls the size of a medium egg or a large egg if you prefer bigger cookies.
    6.Fold individual chocolate chunks into the dough balls. Once on the baking tray place a piece of chocolate chunk on the top and press it in the dough. Be sure to leave plenty of space between the dough balls on the tray.
    Place in the oven and bake for 12-15 minutes or until slightly golden.
    If your oven is too hot - check on them after 10 minutes.
    Once out of the oven the cookies will still feel very soft in the centre and will be a golden colour.

    Hi! When u put the dough balls on the tray how much they (roughly) wheigts?

      unfortunately, i don't have the weight. Next time i make them I will weigh them. You can scoop around two table spoons of dough to keep them even.

    What to use as substitute if i dont have caster sugar?

      you can use regular sugar but caster sugar is just finer and dissolves quicker.

    I work in Ben’s cookie’s 🙃the biggest secret it’s not even the receipt himself it’s more about the oven and the fact that when we take them out they are still like raw inside and then we have to let them cool down before we sell them that’s why nobody will ever sell hot cookies in our shops even though dum people still asking for the hottest cookie🥴don’t even see how can anyone eat a super hot cookie 😒

      I think it does have something to do with the recipe, having tried out many different cookie recipes you can see how even the type of butter you use (melted or solid) or type of sugar or even flour you use changes the texture and height of the cookie. If you try a creme cookie which also has a slightly undercooked middle you can see that it doesn't have the cake-ish like softness that bens cookie has.

    Is plain flour the same as all purpose flour

      Yes - i believe it is. We can't get all purpose flour in the UK but I have used it when I lived abroad and I used it as substitute for plain flour. However, in this recipe i used plain flour. If you use all purpose let me know how it turns out.

      I would rather use the metric because it will be more accurate than using cup. Btw, you can always google and try to convert from gram to cup, if you still want to.

    Hi, I am trying to make myself Ben's cookies, but is it 600G of flour? It looks a bit too much... Now my dough is resting in fridge but I'm worried about it being failed... please help me.

      It makes a lot of cookies. You can use half and freeze other half. The dough needs be firm

    This recipe has a lot flour and it was so difficult mix in the end... I needed to use my hands and added more butter and another egg... I hope when I will oven the cookies and I'll eat I will don't break my teeth

      yes that’s what I have been thinking. I’m sure she mistakenly got 600 gm. Mine’s not even getting flat 😭 how did yours turn out ?

      try checking your oven temperature and leave them in for a minute or two less if your oven is too hot in temperature.

    Pretty sure you have messed up the quantities especially the flour ! It was just toooo much!! I am usually not a mean person but I am really upset now I just wasted all my ingredients , thanks to this recipe! Dont try this you guys!!!

    The flour was way too much and mine did not turn out this way at all. Should have known 600g was waaaayy too much. Wasted so much ingredients. Pls be more careful when sharing your recipes
