- welcome back to cookie science! today we are looking at 4 different types of flour -- all-purpose, cake flour, whole wheat, and gluten free. we're comparing how each flour affects a cookie! let me know in the comments which cookie looks best to you.

Baked goods with just plain flour always feel empty to me, whole wheat gives it so body
Or adding some rye flour, but whole wheat is just more available
You so right with the wheat flour I made biscuit with it and they was surprisingly very good even the left overs were great!

It's been a year but I wanted to say...if you tried it and don't like it, you could probably use the trick people use with AP flour where they add cornstarch to make a cake flour sub, only you could add corn starch to the bread flour to make it more like AP.

My husband and I are both gluten-free and I use either the Bob Redmill one to one or better batter and substitute and so many recipes for wheat flour. No one ever knows the difference and I don’t find it grainy
Gluten free doesn’t translate like that typically you need more moisture and/or lower temp for longer time to achieve best results the other cookies look amazing though

the flour i have at home just says plain flour but says it's better for cakes and stuff so i think i might have cake flour :(

I love to cook but my mum is gluten free so the first time I made our usual favourite cookie recipe it came out awful I ended up doing hours of research and testing a lot of cookie recipes before finding my family’s favourite one
