You could start by reading the second part of the "Introduction to literary hermeneutics" or the "Celan-Studien" by Szondi, in which he applies hermeneutics to literary texts by Friedrich Hölderlin and Paul Celan. Unfortunately many people view hermeneutics not as a method but as a theory of understanding and interpreting which is not applied much in practice. I plan on making videos in which I want to apply it myself to fictional works soon :)
