    Right now? a mobile pizza kitchen is the way to start. Those smaller woodfired ovens will never keep up with busy rush hours. We thought about that but decided to spend the cash for a larger commercial Breadstone oven on our trailer which can handle 4 pizzas at a time, Just make sure you have the dough and more importantly, dough management down perfectly. Also, have a good POS system with a KDS at the prep table.

    I am trying to do the pizza pop up this year. I have been making pizza for friends and family for 3 years and I have finally honed my dough recipe to the point that I am satisfied. Do you have any advice on the equipment for storage and preparation / sanitization stuff? How do people typically haul it / setup? I would LOVE this information. I have a gozney dome that I can transport pretty easily already.

    Another way to learn about the pizza business is to get a job at a pizzeria. Going to a pizza school would be a good option if you have the time and money to do so. Taking a part time job at ones pays you to learn the business. This way after working there awhile you might decide this isn't really for me. Everything looks cool from the outside in, actual work experience might change your opinion and direction.

    My take on it too if you can buy an existing Pizzeria already right? In my small little area where I live in a 5-mile radius 15 to 20 places I can get a pizza from. To start from scratch would be really tough in a small market.

    You mentioned seeing brick and mortars using gonzey and ooni ovens.... inside? As their primary??

      Why. Its still gas.
      The G can also take wood

      @@MarketingStrategies28 Wood is a lot harder to control deck temps compared to gas. You are never going to keep up with orders using a small oven. Even if you had 3 ovens good luck keeping up and not burning your pizzas. I use a wood/gas large combo oven and preheat with wood then run gas for the rest of the bake.

    Even to do a pizza pop up, at minimum, don't you need a LLC, liability insurance, Tax ID, Safeserve certification?

      If at home, you can take donations, but if your going out, yes.

      @@Peetzza is a flee marketing outside of your home? I would guess it is, so you would likely need permits, but depends on your area/country. You could always do it illegally but I wouldn't
