Well the good news is, if you decide to try this, you'll be eating pizza every day trying to get it right. I am making #13 tonight. My first 12 have been varying degrees of messed up shapes, and some were turned into emergency calzones because I screwed them up so bad. They've all been delicious as I learn though. I was wondering the same. The cheese won’t be soggy if you cook it hot enough and long enough. But it also won’t taste as fresh. I’ve never tried just putting fresh cheese after the bake. I think I’ll give it a shot today Interesting
I LOVE that he used the Mozzarella as garnish at the end . Perfectly done! The mozzarella gets perfectly warm to eat fresh on the cooked pizza without being soupy as do not need to cook the mozzarella when it is fresh like Bufala he used and was done perfectly just like the Master Champion he is !

Been to Brunswick couple times and found a small italian place run by bunch of young baking enthusiasts, seemingly from Italy, in the corner the old city plaza. They make the dough and the pizza exactly the way shown in this video. Results are astonishing, in a single meal those guys have completely redefined my taste in pizza and bread in general.

I made the pizza dough as described in this video and man is it good!!!! I had friends over today and yesterday decided to make pizza for today in my g3ferrari pizza oven, so the dough had all the time to rise and rest. Result was a super thin, very crispy pizza bottom and very light and a nice crispy fluffy edge (finally a pizza that is not heavy on the stomach). Got good compliments from my friends and they are too going to follow this pizza dough recipe. Thanks for this video!!

So I have to tell you now that I made a big mistake 😞 I put a small towel after the dough was ready, so when it grown up the air passed and it ruins it...I try to cook it but it was not very tasty because of that (you talked about it on the video) now I know, next time I ll put cellophane + towel and it ll be perfect 🤓

Vincenzo im from Melbourne and love cooking, italian in particular. I was hooked on italian food when i would go to my friends house who had traditional italian cooking. I loved it. I can tell you that your channel is phenomenal and you should be proud of your following but I’m surprised you dont have much more. The quality of your videos is fantastic with the music etc has really progressed from when you started and having excellent how to videos with celebrity chefs will only help. I hope to meet you one day so we can share the love of cooking. (Im Irish in hertiage) but dont hold that against me, the looks on the faces of the old nonnas working in the Italian delis when I ask for traditional Italian cuts is priceless. I made this recipe last week and it was the best crust I had ever made, though I used bread flour. Now making it for the second time with the prescribed flour. So well explained and demonstrated. I don't think any other recipe is needed now.
I make pizza all the time, usually just use plain flour and is fine, but I will look for this flour and try. Love the stretching technique in this video. The one thing I do that improves any pizza dough recipe, is substitute beer for water. Just makes better dough!
@@practiceyourart so in my opinion ( for a home oven ) you replace water with beer and the dough will rise quicker, which I assume is more yeast or some reaction with the yeast. There is a different flavour profile, does seem to taste more towards doughs that are older and if you have left over dough and use it from the fridge 24-36 hours later, it is better still. Also, and just my opinion, the sugars in the beer, leave the dough with a more crisp bottom, or certainly seem to. I don’t like to eat the pizza the Italian way, where you fold it, because for me, if the bottom is cooked right and your sauce have been reduced down ( thick with low later content ) then the slice should hold up and stay flat. Different beers do different things, but I often just use a room temp Corona beer or such. So why? , well it is about having “same day pizza” and this works!

Dough does rise if you put it straight in the fridge, it just takes longer. Leave it in 3-5 days, take it out, shape it, allow to come to room temp for 2-3 hours and it makes sensational pizza. Thanks for the video, great watching someone kneading and mixing and preparing pizza's so effortlessly. Bravo!

Caputo is THE standard flour for professional pizza in Italy. However, the "Blu Caputo" that is sold internationally is a bad type that differs from the original Blu Caputo sold in Italy and it has a different strength. The correct one is just called Caputo Pizzeria(and has a white and blu package) while the wrong one is called Caputo Blu.
This is the best pizza dough video, which is also the best dough. I love it when you follow the instructions from a pro , and it works. I def need to work on my forearm stretching. I keep throwing it past my arm.
I have been making the dough this same way and it just perfect. Whoever eat it , they always love it. I don’t have fancy brick Oven, instead have a regular Bosch oven at home and got flat cast iron griddle. Pre heat it to 550 degrees Fahrenheit and let it hot for 20 mins after pre heat done. Then drop your pizza and in 9 mins, your pizzas will be done and from bottom, you will have same burning texture and color as traditional brick oven.

Ok I'm impressed, I just followed your recipe yesterday. I pulled it out of the fridge this morning and didn't even have to wait to stretch it and so easily. I LOVE that he used the Mozzarella as garnish at the end . Perfectly done! The mozzarella gets perfectly warm to eat fresh on the cooked pizza without being soupy as do not need to cook the mozzarella when it is fresh like Bufala he used and was done perfectly just like the Master Champion he is !

Been to Brunswick couple times and found a small italian place run by bunch of young baking enthusiasts, seemingly from Italy, in the corner the old city plaza. They make the dough and the pizza exactly the way shown in this video. Results are astonishing, in a single meal those guys have completely redefined my taste in pizza and bread in general.

I had friends over today and yesterday decided to make pizza for today in my g3ferrari pizza oven, so the dough had all the time to rise and rest.
Result was a super thin, very crispy pizza bottom and very light and a nice crispy fluffy edge (finally a pizza that is not heavy on the stomach).
Got good compliments from my friends and they are too going to follow this pizza dough recipe.

So I have to tell you now that I made a big mistake 😞 I put a small towel after the dough was ready, so when it grown up the air passed and it ruins it...I try to cook it but it was not very tasty because of that (you talked about it on the video) now I know, next time I ll put cellophane + towel and it ll be perfect 🤓

Vincenzo im from Melbourne and love cooking, italian in particular. I was hooked on italian food when i would go to my friends house who had traditional italian cooking. I loved it. I can tell you that your channel is phenomenal and you should be proud of your following but I’m surprised you dont have much more. The quality of your videos is fantastic with the music etc has really progressed from when you started and having excellent how to videos with celebrity chefs will only help. I hope to meet you one day so we can share the love of cooking. (Im Irish in hertiage) but dont hold that against me, the looks on the faces of the old nonnas working in the Italian delis when I ask for traditional Italian cuts is priceless.

I made this recipe last week and it was the best crust I had ever made, though I used bread flour. Now making it for the second time with the prescribed flour. So well explained and demonstrated. I don't think any other recipe is needed now.

I make pizza all the time, usually just use plain flour and is fine, but I will look for this flour and try. Love the stretching technique in this video. The one thing I do that improves any pizza dough recipe, is substitute beer for water. Just makes better dough!

@@practiceyourart so in my opinion ( for a home oven ) you replace water with beer and the dough will rise quicker, which I assume is more yeast or some reaction with the yeast. There is a different flavour profile, does seem to taste more towards doughs that are older and if you have left over dough and use it from the fridge 24-36 hours later, it is better still. Also, and just my opinion, the sugars in the beer, leave the dough with a more crisp bottom, or certainly seem to. I don’t like to eat the pizza the Italian way, where you fold it, because for me, if the bottom is cooked right and your sauce have been reduced down ( thick with low later content ) then the slice should hold up and stay flat. Different beers do different things, but I often just use a room temp Corona beer or such. So why? , well it is about having “same day pizza” and this works!

Dough does rise if you put it straight in the fridge, it just takes longer. Leave it in 3-5 days, take it out, shape it, allow to come to room temp for 2-3 hours and it makes sensational pizza.

Caputo is a rly good flour i think. it rly does the job well
Caputo is THE standard flour for professional pizza in Italy. However, the "Blu Caputo" that is sold internationally is a bad type that differs from the original Blu Caputo sold in Italy and it has a different strength. The correct one is just called Caputo Pizzeria(and has a white and blu package) while the wrong one is called Caputo Blu.
He just shares his secrets with everyone, what a wholesome guy.

What the size of your pizza and how many grams of dough you need for that size? Thank you
I have been making the dough this same way and it just perfect. Whoever eat it , they always love it. I don’t have fancy brick Oven, instead have a regular Bosch oven at home and got flat cast iron griddle. Pre heat it to 550 degrees Fahrenheit and let it hot for 20 mins after pre heat done. Then drop your pizza and in 9 mins, your pizzas will be done and from bottom, you will have same burning texture and color as traditional brick oven.
