The ONLY Salted Egg Braised Tofu (鹹蛋黃炆豆腐) Recipe You Need

- 【Ingredients】
1 box silken tofu (approx. 200 g)
1 ginger knob (5-7 mm thick), minced
200 ml chicken stock
4 salted duck egg yolks
½ salted duck egg white
1 tbsp cooking oil
1 pinch ground white pepper to taste
100-200 g crab sticks, teared (optional)
50 g shimeji mushrooms (optional)
100-150 ml slurry water (adjust to your preferred thickness)
Scallions (to garnish), finely chopped
【Steps】
1. Mince ginger. Chop scallions finely for garnishing.
2. Section crab sticks and tear them into threads.
3. Cut tofu into 1 inch cubes.
4. Separate salted egg yolks from egg whites. Mash the egg yolks and 1/2 egg white.
5. Preheat the saucepan well. Add 1 tbsp cooking oil, minced ginger and salted egg. Sauté over low heat until mushy and bubbling.
6. Add crab meat and shimeji mushrooms to the pan and continue to sauté for 1-2 minutes. Add 200 ml chicken stock to the pan and bring to a boil.
7. Once boiling, reduce the heat to medium low and gently add in the tofu cubes. Simmer for 5 minutes and add salt & ground white pepper to taste.
8. Add 1 bowl of slurry water in two batches to the pan. Garnish with chopped scallions and serve with rice.
