    I bought a vacuum sealer and number of years ago to repackage meats before freezing and to say I love it would be an understatement. I have also started cooking some of those meats (sealed) slowly in a crock pot prior to searing on top of stove and it's FANTASTIC!

    i love the way you cut up your brussel sprouts! i've always cooked them whole. i'm embarrassed to say that it never occurred to me to cut them up! i will be from now on!

    In Australian butchers it is called the "Cattleman's cut". Thanks for showing the sous-vide method. If one sears both side and finish in the oven in low heat would it achieve similar result?

    Yeah the thing about cowboys not having forks is a myth, the “Wild west” period where cowboys as we know them lived spanned from 1607 - 1920 but the fork was invented way back between 301-400 BC.
    The “it has a bone because they didn’t have forks” thing is a myth. The reason they cooked it bone in is because it was easier than having to remove the bone.

      I think by not having a fork it doesn't mean it didn't exist, I think it just meant they were travelling without much kitchen equipment. That said, the cowboys must have had a decent knife, and you can cut, stab and eat your food with a knife just as well as a fork...

    well done chef mcgrady!! i LOVE ur videos. they have inspired me, as a diabetic, to expand what i prepare in the truck when im on the road (o.t.r reefer "buzz box" hauler). ive been able to keep the sugar, carbs, an starch low and drasticly improve my diabetes management. id love to get my hands on one of ur cook books. keep up the great work!!

    One trick my old chef taught me about Brusselsprouts, boil them a bit in water,after they are cleaned,and cut in 2 . Not long, a minute or so. Rinse them, and back in pot with butter and Vanilla ,just heat them and let all mix until ready. The sprouts get so sweet and good and unknown.

    I never really had brussel sprouts, but now that I'm looking at the dish, it makes me want to try it. Plus the bacon and steak will really help too. That's kinda how I grew to like mushrooms too.

    I know what you mean about the steaks in Italy. I never thought I could eat beef “ blue rare”. The cuts are so clean and everything is local.... with a good bottle of red... well delicioso 🇺🇸🇬🇧🇮🇹 holy cow, what a great meal.

    OMG, I love that cut of steak and it did look perfect. I might try your recipe for brussel sprouts but I think by the time I cut them all up like that, I'll be wanting to stab someone. I'm glad to see Winston got his snack. Good boy!

    That Winston! Love your channel and content. That said, I cringe every time my food is served on something other than a plate. I know some people love the creative alternatives. There is a funny website called "We want plates" and it shows all the crazy things people are serving on. I loved the look of your steak anyway, I just prefer mine on a plate. ; )

    While cowboys did stop at certain spots to rest overnight. Lots of times they wouldnt stop to rest until they got where they were going. So they would purchase jerky to eat.

    Nothing funnier than a Brit talking about Cowboys. You must have amazing conversations with some of those “ Good Ole Boys “? I was stationed temporarily in San Antonio. I was a Northerner. I got lots of crap for that but the Texas people are awesome. RiverWalk is spectacular. Lots of history in Texas as you probably have learned.

    Cowboys may not have had forks but they all had knives for cutting rope primarily. You can guess they grabbed the bone and cut off bites with their knives. Still, the story of them grabbing the steak and biting it like cavemen is legend.

    I like to roast brussels sprouts in a little olive oil, salt and pepper and then just before serving add them to a frying pan with butter and chestnuts or bacon lardons, best sprouts ever!

    With all due respect, cowboys have never heard of "chimichurri", since it's an Argentine dressing for our barbecue or "asado", for which our country is quite famous.

    It's funny to think that people think they didn't carry utensils. Common sense says that they needed them to eat beans, stews and soups. Actually they didn't eat beef unless it was someone elses or had to be destroyed.

    Looks great, but as a Texan, I feel I’m qualified to say that cowboys weren’t eating steaks like that. Majority of the diet of the cowboys was dried goods you could pack in the chuck wagon like beans and rice, salted or preserved meats, bacon stuff like that. I’m sure if they had to put a cow down for whatever reason they wouldn’t have wasted it but those cows were worth more than the cowboys themselves more often than not.

      North American, but yes, it was exciting trying new recipes and ingredients
