MEAL PREP WITH US || SAM WADE

    Today one of my favourite people to walk Earth and the best cook I know is coming to lend his culinary skills to give us a couple meal prep ideas. A tex mex chicken chilli and a cottage pie! These two meals can be cooked in tandem as we show here.

    Tex Mex Chicken
    Ingredients:
    500g chicken thighs
    1 red capsicum
    1 brown onion
    400g tin Whole tomatoes
    3 chipotle chili's in Adobo sauce
    Garlic
    Tomato paste
    500ml enriched chicken stock
    Cumin
    Oragano
    Paprika
    Lime
    Method:
    1. Brown the chicken thighs on both sides in a large pot. Aim is to get some good colour on both sides but not cook through.
    2. Dice the onion and capsicum then add and cook down
    3. Add in a tablespoon of tomato paste and cook off to develop the flavour. Maybe about a minute.
    4. Add the garlic and spices along with a little oil. Cook off to open up the flavours
    5. Add in tomatos, chilis and stock.
    6. Let it reduce down and thicken. Stirring every now and then. You want to thicken the sauce and have tender chicken
    7. Season with salt and pepper add the juice of half a lime off the heat and serve.
    Cottage Pie
    500g beef mince
    1 brown onion
    1 carrot
    Worchestershire sauce
    4 big potatoes
    Glug if red wine
    Garlic
    Tomato paste
    500ml enriched chicken stock
    Parmesan
    Fresh tyhme and rosemary.
    Method:
    Brown the mince in a pot. Set to one side
    Dice and saute the onion and carrot.
    Add the tomato paste and garlic. Cook off with a bit of olive oil.
    Add the thyme and rosemary.
    Return the mince to the pot and add the wine. Allow it to cook off before adding the stock.
    Bring to a simmer and reduce to a thick stew.
    Season to taste
    De skin and dice the potatoes. Boil them till crazy soft.
    Heat butter and milk, then add to the potatoes and mash
    Season to taste
    Pour the stew into a casserole dish.
    Top with the mash and then score with a fork
    Bake in the oven set to 200c until the potato is crispy and delicious and the stew is bubbling up the sides.
    Let rest for 5 before serving ✨

    Oh my gosh I loved the energy of this video, so chaotic and funny but also so educational too! Definitely better than any professional cooking show I've seen!
