Strawberry Shortcake Cupcakes

  • Hey guys!
    Delicious, creamy strawberry shortcake cupcakes! I made these using my sponge cake recipe for a light, fluffy cupcake. Fill it up with a fresh strawberry jam and topped with whipped cream, crumbles and strawberries for a mouthful of deliciousness!

    Ingredients for cupcake:
    4 large eggs, separated
    ½ tsp cream of tartar
    1 cup sugar (1/3 into the meringue and 2/3 into the batter)
    1/3 cup oil
    1/3 cup milk
    1 tsp vanilla extract
    1 cup cake flour
    1 tsp baking powder
    Ingredients for strawberry filling:
    1 cup strawberry puree
    ½ cup sugar
    1 tbsp water with 1 ½ tbsp cornstarch
    Ingredients for crumbles
    18 golden oreo cookies, without filling
    1 tbsp melted butter
    few drops of red food coloring
    Ingredients for whipped cream:
    3 cups heavy cream
    3 tbsp white chocolate pudding mix (to stabilize whipped cream)
    1 cup powder sugar
    And strawberries to top them off!

      Jovina Bakes you’re welcome too! Whatever works! Some of us don’t even have a food processor, so if you didn’t share it that way I wouldn’t know what to do lol.

      Also is cake flour the same as self rising flour?

      Yes, I usually bake a day ahead of time. Just store in airtight container and refrigerate over night

      And self rising flour and cake flour are not the same thing.

    Where I can find the pudding mix please ? And what flavour? Is the same as castard powder ? Thank you

      I get it from WalMart. I use it to thicken and stabilize my whipped cream. I prefer the white chocolate flavor compared to the others.

    I recommend cooking the entire 10 minutes on 350 if you’re doing proper non-convection baking otherwise they come out sticky.

    Can u substitute cream of tartar for sour cream

      No you cannot. If you don't have any cream of tartar, you can just skip it.

    So do you take them out and then bake them at 325

    I tried your recipe but when baking I had to bake it a couple minutes more for it to fully cook and when cooling upside down it would stick to my baking sheet so I used a parchment paper but it still got stuck onto it. Did I do something wrong? Need help please!!!

      Yes every oven is different do sometimes it may take longer to bake your cupcakes. And the top does get sticky and some of it will stick to the parchment paper. That is okay. You should still be able to pick up your cupcake and after decorating the top with whip cream you won't even know tjst the top is not perfect

      Sorry I think I'm confused because in another cupcake recipe a similar batter recipe made 24 cupcakes then in another one you say it makes 18 cupcakes. In this one it looks like 21 cupcakes.

      Roughly 18-22 cupcakes for most of my recipes

      Just the standard ones, not the jumbo ones. 2.75x2.13x1.38 inch is what my cupcakes pan description says for each cupcake

      @@JovinasCreations Thank you for replying. It is wilton. Also do you mind telling me what kind of cupcake wrappers do you use? they look really amazing. mine always look untidy i dont think i use correct size.
