My husband and I are the same way……we need 100% fresh milled flour too………we have stomach issues with white flour or store bought bread. I love milling!
I do so much better too with just fresh ground. Especially when I bake for others I’m tempted to use some store bought. But even for them I know it’s so much healthier I want to practice and give them the best. I’ve heard a couple bloggers say when they photograph they use store flour. I really appreciate that you use freshly milled and please don’t worry about the perfect picture loaf. Although your loaves are beautiful
I started doing 100% freshly milled since the spring and building up. I used to LOVE white bread and now I don't want to even look at it. Made brownies for the community with FMF. DELICIOUS! I made my favorite scones adapting it with FMF and they are even better!

I’m saving for one of those mixers. I want to mill my own flour as well. From one of the videos, I watched you said that the KitchenAid’s can’t seem to handle the freshly milled flour. KitchenAid is what I currently own. I am looking forward to when I can do all your recipes with freshly milled. Until then I will continue making your recipes with all purpose unbleached. I’m a lucky person and I don’t have stomach issues. However, my sister does so that is the reason I want to do the change as well. And I’m sure it will taste even better than it already does. Perfect timing. I’m pretty new to milling grains and got so discouraged with my bakes that I went back to all purpose and King Arthur bread flour, mixing it in with fresh milled. I can tell a difference in how I feel with the store bought flour and fresh milled. Time to go all in with fresh milled. This video was confirmation. I will be following your journey as inspiration. We too had a lovely fall, but yes the wood stove is going, I have changed my baking , fresh milled flour but sourdough for cookies and yeast for bread, my bread was not rising properly with sourdough starter

I do use sprouted red and it doesn’t seem to bother me sometimes added with quinoa an a nine grain from Azure. There is definitely a change in the all purpose you buy in the store. Would love to use fmf, but living on a fixed income, I can not afford a grain mill. I only purchase organic, unbleached, non-enriched flour. It is what I can do for now.
I've slipped on only using FMF myself. I thought I would try doing sourdough again but it just doesn't seem to want to fit into my schedule right now. My poor starter... also I've still got a 5 gal bucket of all purpose flour and I feel guilty not using it up lol
I use only freshly milled flour except for my starter. I have found the starter works better when I use organic white flour. For any other breads or baking I use only freshly milled grains.

I've been using fresh milled flour for over a year and recently started eating things that had all purpose flour in and noticed the same tummy issues as you in me. Now I'm back to only fresh milled flour.
I had to change to organic flour. My son is now allergic to all-purpose flour. Since changing to organic flour he has had no problems eating sourdough bread.
Why do some use baking soda or baking powder while using sourdough? Doesn’t that defeat the purpose of using sourdough, might as well use yeast? Just curious 🤷🏼♀️
I was gluten free several years ago. Now, the only bread I can eat without a lot of pain and bloating is bread made with freshly milled flour. I think it's definitely worth trying!
I was gluten free for 14 years. I've been using sourdough for since the 1st of this year. I ferment all my doughs overnight and have had no problems. Praise God 😊
Oh, I do have one question, is your sourdough starter using 100% fresh milled flour? If so, does the discard keep in fridge as well as the store bought flour discard? Fresh milled is a whole new ball game. So much to learn and relearn. I love all things sourdough and prefer it over using commercial yeast.

Your stomach issues could be the whole grains have too much fiber and harder to digest as well

What type of Oat Flaker do you use?
I use a mockmill flaker. I ordered it from the biblical nutritionist's website. I use it several times a week.
