Edit - I made this - doubled - this morning, 1st rise 4 hours til double, made 8 buns and 1 loaf. 2nd rise 2 hours. The buns are done and absolutely amazing! Bread is still baking and looks really good! I am beyond happy to finally have soft, fluffy buns 😊 This is my new recipe and I am so thankful to you!
Thank you SO much for sharing your amazing recipes with us! It helps so much to see what the dough should look like at the different stages.
Question for you - I'm using all fresh ground flour and wondering if I leave it to sit overnight will I have to worry it might over proof? Im fairly new to both fresh flour and sourdough and not having a ton of luck so far, I've underproofed, over proofed, never had a really good rise, but the flavor is amazing! Oh, and my starter isn't the problem, it's great, the problem is me 😄

Wow I am so glad I found your channel! I have made at least 8 loaves now using this No Knead sourdough sandwich bread recipe… and it works everytime beautifully!! I’ve tried it with all-purpose flour, bread flour, rye wheat flour, freshly milled white & red berries… it ALL worked great!!! And I’ve even shaped mine 2x as dinner rolls and the recipe still worked fantastic for me!! I’m in higher elevation of over 5000miles, so the only tweaked I did was to use 1/4less cup of flour. We need more moisture in our recipes. It was a rather sticky dough but I trusted the process and the overnight ferment helped with giving the dough some strength. Anyways just wanted to say thank YOU for making things simple!!

Made another loaf of this recipe today (started it last night before bed) and it turned out fabulous! My starter has been going for a little over two months now and I can tell my bread is getting better all the time. I do need to work on my shaping skills - my bread had a bit of a funky shape to it and it did crack a little on one side so I don't think I "shaped" it long enough. Otherwise, this recipe is easy to make and has great flavor.
