I only use my starter once a week & have been keeping it in the fridge the rest of the time & it’s fine. I’ve also gone long periods where I haven’t used it, and it got a hooch on top, it was still fine. It’s much easier than some people make it out to be!
I’ve had my starter in the fridge for five months without feeding it. It forms a black hooch on top, but I pour that liquid off and replace the liquid with water and stir, fed it and it’s amazing the bubbles in it. I usually fed it three times, 1/3 cup of flour and 1/4 cup water each feeding. Then I have plenty to bake with. I usually only keep 1/2 cup to a cup in the fridge. I’m amazed at how resilient sourdough starter is.

So glad I found your channel. You really took away my fear of not doing something right with the starter... so not trying. I didn't make my own stater though, I bought that 100-year-old starter from Etsy and followed all her directions to get it up and banging out good stuff!! I now have what appears to be pretty foolproof starter. Probably nothing like what I originally bought it. As is, I fed it every single kind of wheat berry I have and it doesn't seem to make any difference but taste and color. I'm afraid I put this leavening in just bout everything I can! Thanks for so much for helping me be brave and try... BTW I've resubscribed, am watching all your videos over again, and you'll see a lot of comments from me. Not going to let some hatefilled person ruin your hard work!
When I was learning about sourdough, I was trying to follow all the rules and then I realized that if you can do it with 90% hydration or you can do it 50% hydration, then it really doesn’t matter what the ratio is … just let the sourdough do its thing
I have watched so many sourdough starter videos and mine never worked. I found one that used a half cup of flour and 1/3 cup of warm water to start this worked for me, but then I added half cup of flour and just some warm water, it worked thicker. I was so happy. I never knew to keep in the fridge instead of doing every day like I was doing so thank you so much.

How fun. Many years ago I was gifted a sourdough cooking class where they had starter ready and sent us home with some. Well the calculations by weight were so complicated and the process so long that I basically killed off my starter in record time. You instructions make it so easy
Great advice! I got an established starter from a friend and quickly turned it acidic by not feeding it enough and not often enough. I fixed it by giving it a couple huge feedings and then feeding it peak to peak. Once I got it strong enough to store in the fridge; that was a life changer. Now it is virtually maintenance free. I also do not want a lot of discard so I just keep a very small amount and just build it up to what I need for a bake.

FINALLY, I used Rye and AP Unbleached King Arthur flour and bottled water and I’m on my 8th day and that puppy is beautiful. It rises so high and has lots of bubbles! I’m going to feed 2 more days and then bake some bread with it! I’m SO happy to hear I can put Roxie in the frig and leave her without having to feed every single day. I will watch it, of course and make sure she’s kept in good shape and not starving. Appreciate your help!! ♥️🙏🏼♥️

Yep, your my teacher, no weight measuring for me, thank you!! I'm pretty sure grandma didn't use a scale and I loved grandma's cooking! This is the video I was looking for, put flour in my liquidity starter so it was stiff, put it in the fridge (a month or so ago?) just took it out, opened it up, yeasty!!. lol, going to let it warm up and here's hoping for some ciabatta like bread later.
This video encouraged me to try again. I did start a sourdough starter, but I found it difficult to maintain. The measuring and continuous care discouraged me. I will give it another try with your less restrictive method. Thank for the inspiration.

I don't discard. I just feed and use. I always have a small amount of starter in the fridge. Thank you Mary. 😊 I make bread every 2 or 3 days.
I never understood the whole discard thing. Does it work without discarding?
@lormor460 it does for me. The discard is needed when you don't refrigerate your starter. At least that is my understanding. 😀
