@@DoctorKnox monosodium glutamate is literally a salt of glutamic acid, both dissolve into glutamates with no difference in the taste end, only that certain salts dissolve faster. Just because you know basic Chemistry doesn't mean that everything applies to everything.
Also, you're not too far off about how potatoes (and other starchy vegetables like corn) are low in glutamic acid, but they both *still* add to it and aren't the main source of it in the fried rice (it's the peas, which have around twice as much as potatoes by weight).

At the CIA we are taught the difference between MSG and Glutamic acid. We do NOT use Glutamic Acid in food, it tastes like very little and has an acrid after taste. Glutamic Acid is often used to fortify foods WITH Monosodium Glutamate! Why add them both if they are the same thing?! BECAUSE THEY ARE DIFFERENT! lol. They even have different names, cmon, get over yourself. Stop pretending you know anything about MSG beyond RUclips and your Google searches lol. You should be embarrassed about how dumb you sound.

I totally agree with you. Fried rice was originally intended as an easy meal made with leftover rice and any leftovers you have in the fridge plus some veggies for crunchiness and freshness. When did it become such a sophisticated dish?

yeah every time i've ever had egg fried rice from a chinese restaurant, it always came with peas. which sucks because i like egg fried rice but hate peas
my friend's family owns a chinese restaurant back in Brazil. According to him the food kinda adopts an aspect of the local cousine, so it becomes more approachable . In his case the dished were made to have more sauce, since the local regional cousine is known for stews and such.
So it is rather common for restaurants to adopt some of the local ingredients and styles.

I was raised on the world's driest roast chicken and the cheapest bag of potatoes, the kind that comes sealed but the chips are somehow always kinda soggy and stale. And those were the "lucky" days.
While my mother had a new set of clothes every day, a bag for every day of the month (or more) and a pair of shoes for every day of the school year.
