    I love making yogurt. . When I make it and it is finished I take 1/4 cup of the finished yogurt and freeze it. The next time I make yogurt I place the frozen yogurt in the fridge for a day and use it for the next batch I make. You never have to buy yogurt again. Save the whey to use in so many other recipes.

    We are only 2 but I like meal prepping too! We prefer home cooked meals but I don’t want to do it (or clean up) every day! Sometimes you’re home late or tired or sick or had a wild day/week, or just don’t feel like doing dishes and cleaning the kitchen. I find it much more efficient to mess the kitchen once and make a few different meals to have ready in the freezer. It’s a gift to my future self!

      I have also been able to give friends and family members some ready meals in times of need without skipping a beat, because they were all ready to go in the freezer!

    I make regular portions recipes and we eat 1/3 and I freeze the other 2 meals for later. I keep a running list on our freezer of what's available when I just don't want to cook a full meal. Adding sides as needed to those meals make my life so much easier. Thank you for sharing these ideas. I will definitely be making them.

    We're also empty nesters. I started pre-prepping our meals to (shhhhhh) keep my husband out of the store pre-made burritos box. I use TV trays and they are sized perfect for us. I find if there're different choices they all go. We also love one dish meals like American goulash, Shepard's pie for a quick meal. I make Salisbury steak with mashed potatoes, veggies and chicken fried steak with mashed potatoes and veggies. My chicken recipes are lemon herb thighs with chicken rice , carrots or veggies and teriyaki chicken with rice. I make my spaghetti sauce in the crockpot then package it in sandwich baggies for a quick dinner. Thanks for more options 🎉

    I prep ahead every summer before our 115° stretch gets here. I'm not cooking when it's that hot. I had done an unusual amount this year and thank goodness. I have lived off them through almost 3 months of one serious illness after another. Now I'm recovering and have been advised to take it easy. Food already prepped, ready to warm in a small crockpot with a liner and few dishes is helping me to behave.

    Thanks so much for doing this video. I’m a single mom with two kids and the oldest left for college this year.
    Cooking for just my daughter and me has been quite an adjustment. You really wouldn’t have thought just one less person would make a big difference but it really has.
    I’m using my air fryer a lot more, and going to start small-scale canning of pint sized jars to help with the issue of making too much food and then being stuck eating it for a week. 😂

      Me too, rapidly from 6 to 2! I still do batch cooking and freeze. But these prepped ingredients will be so versatile.

    New to your channel. Love the idea of prepping meals. Adjusting to cooking for just two is very hard. I’ve been doing it for years and still haven’t figured it out. Lots of leftovers which usually go to our neighbor. He loves it!! Can’t wait for more videos like this and new recipes. Good luck with your new channel❣️❣️

    I have several sizes of casserole dishes and when I make casseroles I split the recipe into two Pyrex dishes that are 7 x 6 and freeze one. Some faves are Mexican style like enchilada casserole which freezes casseroles stack nicely in the freezer. So nice to have that second meal at the ready. I came across a recipe for basic meat, potato, veg leftovers in a church cookbook. Its genius. The first layer is 1” pasta, rice or potato. Second layer is 1.5” meat, the third layer is 1” veg. Then cover with a cream soup either home made or canned, and perhaps cheese if it makes sense. Cover and bake 350 for 45 mins. Great for leftover ham, pot roast, ground meat, chicken or turkey. The casserole size depends on the leftovers on hand. Certainly great got holiday leftovers.

    There is only two of us as well. I found a meat loaf recipe on you tube and made it. First night meatloaf. Second night, Tacos. 3rd night beef stroganoff. I should have known better when it called for 3 pounds of meat! LOL Thank you for sharing your recipes!

    Love having french toast ready to go in the freezer. I will cook up 6 loaves at a time, and my 2 teenagers will be set for breakfasts for a while!

    Hey, look at you with that pre-cooked ground "beef"; I hope that helps you! Having a bag of that thawed and waiting in your fridge, a jar of your homegrown tomatoes and a box of no-boil noodles will make tackling a pan of lasagna so much less overwhelming!     We use ground venison in place of ground beef! It is what we have lots of! I subscribed after you said you were going to call it that. That is our attitude here.

    🎉Empty nesters here!! My issue is I cook enough for an army (it seems). I have started preparing a few things too. I vacuum seal soups, gumbo ( south Louisiana girl), and cooked ground beef, I also bake chicken breast and package them for quick chicken salads or casseroles/pot pies. My biggest issue is the hubby doesn’t eat veggies and I love them. I batch cook and freeze them in single servings. That can become a pain if I find great products At awesome prices. But the ideas you give are so good. Thank you.

    I know exactly what you mean about cooking for 2. We became empty nesters a couple years ago and it was like I had to relearn how to cook. Sometimes I make the full recipe, and split it in half and we eat one half and make a freezer meal of the other half. Thanks for the ideas. I think I’ll make French toast but try to make French toast sticks instead.

      I always make extra and put in freezer for another meal. Saves so much time and money. I also take some and give it to my 91 year old mom - she loves to just heat and eat.

    Thank you so much for the ideal preps I sure will be getting my freezer filled properly now. And I just got nice griddle cook the all on. I'm going too prep stuffed French toast with cream cheese And raspberry sauce. Plus I make breaded tenderloins & breaded chicken tenders. I use a egg wash and cracker meal flash freeze then bag up for the freezer. But tenderize the meats first. I ran a small restraunt and that's how I kepted cost down. Customers loved my changes, plus I make hand pies with Tupperware molds they store well once they've been baked and flash frozen.

    You are sure right about cooking for two. I would rather cook or cater for up to one hundred than to cook for my husband and I. We had five children so I went from cooking for seven or more to cooking for two. My poor husband gets sick of either not having quite enough to having way too much. Thank you for sharing!

    I always love finding You Tubers who give me any kind of ideas on meal prepping for two people. Have you considered making the yogurt in your instant pot at night? Mine automatically sets for 8 hours on the yogurt setting. I cover it with a silicone 'lid' and just go to bed. In the morning I carefully take off the lid because the bottom is full of condensation. I wipe it off, and then replace it after it cools for an hour. Then it goes into the fridge in the Instant pot insert to completely cool- usually all day. If I need really thick greek style yogurt, I will then place a colander with cheese cloth inside a large bowl...dump it all in and pop it back in the fridge- usually overnight. Although it technically takes longer, it is all passive. The next morning I have super thick yogurt and whey (which I add to smoothies) Hope you give this a try.

    I can’t believe how much chips cost now. Hardly buy them anyway but do like tortilla chips sometimes. I got a shock recently. We bought corn tortillas and made our own.
    I TOTALLY agree it’s harder to cook for only 2 people. I still tend to cook as I always did and then we have leftovers or make lunch preps for the freezer for us to take to work.

    I buy ultra pasteurized milk so I can just make the yogurt. I let it go for 8 hours. It is a bit thin but I really enjoy it.

      Welcome! Oddly enough, you're not the only person to have asked that! 😂 I cut the top out so I could wear it with my ponytail/bun out in the summer. Definitely looks better on than hanging on the hook!

    Its just my husband and I. I do the same but make a full batch and freeze half. I am at the age where I hate to cook everyday and this has worked beautifully. I just made the filling for 3 2 person size chicken pot pies and put two in the freezer. Ok, I'm nosy and totally off subject...why the hole in the top of the cute pink sun hat? 🤔

    The sound of your doggies drinking is no problem for me, it is just a normal household sound and I can hear you just fine over the slurping. Could you have placed the milk in the liner in a sink of cold water too cool it faster? I do this a lot to cool things quicker to freeze etc
