In this episode, I'd like to share with you 'MERCIMEKLI KOFTE' recipe. One of the most popular appetizers of Turkish cuizine. Perfect for lunch or a light summer supper. It is extremely easy to prepare, nutritious and amazingly delicious. Moreover; no pan frying, no baking... Just form them and serve.

INGREDIENTS
1 cup red lentils
3/4 cup fine bulgur
1 large onion
7-8 sprigs green onions
1 cup parsley&fresh dill
1 tbsp tomato paste
juice of one lemon (optional)
10-12 lettuce leaf
Salt & Pepper
1 tsp sweet paprika
1 tsp ground cumin
1/4 cup olive oil
DIRECTIONS:
Transfer the rinsed lentils into a big pot.
Add 2 cups of water.
Add a pinch of salt and bring to a boil over medium high heat.
Meanwhile, finely chop the onion into cubes.
When it comes to a boil, skim off the foam and reduce the heat to low and cover,
leaving the lid slightly ajar.
Simmer for 10-15 minutes until the lentils tender.
Then remove from heat, add bulgur and allow it to absorb the remaining water.
Leave undisturbed and covered for 15 minutes.
Meanwhile, sauté the onion in olive oil for about 10 minutes stirring occasionally over medium low heat.
Add a pinch of salt and pepper.
Finely chop green onions, parsley and dill.
Place lettuce leaves to cover the bottom of a serving dish.
When the onions are tender, add paprika, cumin, tomato paste and mix well.
Remove from heat and combine with the lentil& bulgur mixture.
When cools enough to handle, knead for 2-3 minutes.
Stir in the chopped veggies.
It is optional but add the lemon juice if desired and knead gently until well combined.
Season to taste.
Form into cigar-shaped patties and place on the serving dish.
For various presentations, you can form into a smoother cylinder shape.
Or into tiny bowls and then fill them with chopped lettuce.
You can also use a cookie/biscuit cutter...

She had said no frying or baking them. Everything was cooked. She fried the onions, etc.; so you could change it up a bit. The skillet did get used. Why not?
What is the texture of it ? I assume rather mushy... Would it be insane to fry or bake them to get a bit of a crunchy crust ?
You can always dip them in flour, egg, and breadcrumbs then deep fry, if desired. But I must say, I wouldn’t call it ‘Mercimekli Kofte’ anymore.
That looks great. Are there people who bake them or saute them?

This looks so delicious! Is there a gluten-free substitute you could recommend for the bulgur? Thank you!
Hi! Bulgur is being used mostly for the texture here. If you think potato is a good gluten-free option, you can also use it. Make sure to drain the lentils very well, then add one big hard boiled, peeled and grated potato. And knead well. Potato helps to bring the dough together. I would also recommend to use corn semolina. In that case do not drain lentils, you need some boiling water left in the pot, so that semolina can absorb it and gets tender.

This may be a stupid question, but what is "1 cup parsley&fresh dill".
Is it 1 cup of parsley and 1 cup of dill,
or
1/2 cup of parsley, and 1/2 cup of dill?
(or some other ratio?)
I usually use 1/2 cup parsley and 1/2 cup dill. Actually I measure by hand and add one handful of each. But greens can be added to taste. You can add more or less greens if desired, You can also use only dill or just parsley, whatever your heart desires. Thanks for asking and happy cooking Vern C.

I never find the fine bulgur, just normal size. Could this work? or maybe if I put it on a food processor?
Fine bulgur softens by just soaking in hot water. But you need to cook coarse bulgur, you can not soften it by soaking. I would suggest to cook coarse bulgur with lentils until very tender, in plenty of water (bulgur absorbs a lot of water when cooking.) Then drain, let cool and knead well. I think the taste would be the same, but texture might be little al dente. You can also try to process uncooked coarse bulgur in a food processer, turn it to fine bulgur then use as described in the recipe. Lastly, if you can find (fine) couscous you can try to use that instead of bulgur. Hope this was helpful, happy cooking Sofia Romero...
This is wonderful...but a question. If I only have coarse bulgur, can I use it here and just knead more?
I never tried Mercimekli Kofta with coarse bulgur but I believe it might work. You need to cook coarse bulgur first though. Cook bulgur with lentil, (making sure to add plenty water) until very tender (20-25 min.) Then drain and let cool. Finally start kneading and please let me know how did it work :) Happy cooking!

I have the same problem when cooking different culture's food.
İ have the same problem trying to find the fine stuff. İ wish I'd bought some pack from holiday but it ran out of room. İ made çiğ köfte with coarse bulghur and it tasted fine but did have a much grainer texture.
Good recipe. I would add some ham and some Chia seeds and some crushed pecans or walnuts.
Can we use yellow lentils for this recipe?
Sure you can, it changes the colour a bit. But you can add more tomato paste, if desired.
If I use sundried tomato paste, will it taste different?
Never tried with sun dried tomato paste. Some people use red pepper paste, and then it tastes different, yes.

Bulgur is cracked wheat that is parboiled, dried, and then broken into various smaller pieces.
Can it be fried if you want to?
You can do that, if you really want to :)

We eat mercimekli kofta wrapped in lettuce leaves yes, but not with some bread.
Is dill necessary?
No, not at all. Especially if you don't like dill.

You can wrap them in some lettuce, or simply eat as a snack using your hands.

Never tried, to fry them is not traditional. Please let us know, if you try so.

No, not at all. Fine bulgur softenes from heat of cooked lentils, you sautee onions and the rest is fresh herbs and dressing. Just form them and enjoy :)
What is bulgur?
Bulgur wheat is a nutritious grain and has a low GI. We use two different types when cooking: fine bulgur/coarse bulgur.

Bulgur is a whole grain, that has been cracked and partially pre-cooked. There are two different types of it: coarse and fine bulgur. It is a high-fiber, low-calorie and low-fat ingredient. It can be cooked and served as a grain or used in soups, side dishes or even desserts, which I use sometimes, because of its low GI.
