    I made apple cider & pear cider last year, both were delicious, I used 10kg of apples and made 5lt of cider, I used apple cider yeast, fermentation was complete after 8 weeks, had 12%abv

    Fun facts, cider is always made from apples. If it is made from pears it is called perry ^^ Also in UK english, cider always refer to the drink that have alcohol in it. Where as in US english this is called hard cider. So what you made here is called hard cider in the US, but cider in UK (and the rest of EU) :)

      That's true. But also here in the U.S. you can just say "cider", and based on the context people will usually understand whether you mean "hard cider" or "fresh cider" (fresh apple juice crushed by hand in a wooden bucket press).

      A Know of a town that has to make their own wine or travel to another town, the town or stores does don't allow real alcohols to be sold in stores or bars but allows homemade wines. Apple, honey and strawberry seems to be the most common wines. That just happens to be the fruit sold the most in town. The locals hate drunks and love homemade apple pie. A town that loves fake beer. No loose morals in that town. The locals want the cops to hold people for 24 hours for using the F word.

    Hi, you'll get more juice if mash or even grate the apples first before pressing. Me personally I just use a juicer then pass it through a fine cheese clothe. I get about 75 to 80 percent juice by weight of the apples. You could easily get 6 liters of juice from the apples you used,

    Andrea, what a coincidence! Just before I saw this video I bottled my own cider. I used four liters of natural juice and champagne yeast. It took two weeks to ferment and should be 3% alcohol. Great video as always! Stay safe.

      Superb Chris, the difference (in speed and taste is the natural in Andreas case) yeast you used , don’t be shy add a kilo of sugar for more kick.

    Hello from CFS! We are currently working on our 14th batch of cider at home and we appreciate you sharing your experience. Are you always using a natural fermentation and not introducing a yeast? Also, we never thought to use the hydrometer holder as a cylinder to pour your test liquid into….that saves so much juice!!! Best, David and Rachel

      You can use both wild or select yeast , different yeast different results you can make small quantity to taste it 😉

    Hi, thank you for this. I followed this recipe and the batch is currently fermenting. I used a kitchen aid tool to chop the apples into smaller pieces and got about 4l of apple juice from 5 kgs of apples. I however removed the center part from the apples. Winter is coming to Finland so not sure when this batch will be done.

    wow!! congrats your have 348k subs, i hadnt seen your videos in a while. we love your wine videos, you inspired us here in the netherlands, we bought a kit and last year made our first batch, with grapes from our backgarden vine and from our neighbor, total 8 liters ..but it came out pretty high in alcohol and sweet, more like Port. at least it was not vinegar!!! i came back to check the limoncello video, we got the special alcohol and now just need to refresh the memory. thanks for sharing your knowledge, very happy to see your channel so successful🤩

      Als je het leuk vindt wijn te maken, probeer dan eens mede te maken. Ik maak al 30 jaar fruitwijnen, ciders en mede. Met mede heb de de meeste mogelijkheden van allemaal. Van zoet naar droog en alles er tussenin. Van gewoon naar bruisend of er tussenin. Met kruiden, zonder kruiden, met fruit, zonder fruit, met graan, zonder graan, met specerijen, zonder specerijen, met alles wat ik net vernoemde tegelijk… of gewoon op zijn eenvoudigst: honing, water en gist.
      Wetenschappers denken dat mede misschien de oudste soort alcohol ter wereld was. Er zijn 8000 jaar oude vermeldingen gevonden in teksten uit China. Er eaten sporen van gegiste honing in bekers uit het oude Egypte. Niet alleen de Vikings maakten blijkbaar mede.
      Veel plezier bij het maken van jullie eigen wijnen (en andere drankjes)!

    Thanks for the recipe! I have to add, that if you will add glucose (dextrose) instead of sugar, you will get a better taste. Less 'yeasty'.

I've decided to add 300g of sugar to approximately 6 liters of cider because I like sparkling and sweet-flavored cider. How long should I wait before bottling the cider to ensure it doesn't explode? 😅
      By the way, the flavor is spectacular😃😃😃

    Very detailed and helpful explanations to get the best results. Just like to point out that at 0.36 you show 5 kg of yellow apples and 5 kg of red in the text. But only one kilo of red in the audio. I guess the audio says the right measure going by the number of red apples on the kitchen counter.

    I made perry using more or less this technique last autumn, and the result was very good. Two things I did differently, though:
    -Pasteurized the must, then added pectinase to reduce haziness (may increase methanol; be careful)
    -Added new yeast ('Brand X' wine yeast in first half of the batch, and a raspberry leaf bearing wild yeast from outdoors for the second)
    Next time I might use wild yeast for the whole batch, or just skip the pasteurization entirely. I intend to make my own press for next time rather than ever trying to wring a gallon of juice from fruit again, because frankly that will take less time and effort to build than to do without.

    Hello from Denmark. Hard cider looks delicious - thank you for showing!!! If I use 10 kg apples, do I just double the sugar = 400 grams? 20 kg apples = 800 grams? And so on?

      Hello again! So I made two batches. One turned really sour, so airlock probably not sealed right, the other better but still a little bit on the sour side, but I think thats more to do with the apples I used. But it made me wonder - how would you describe the taste? Should it be sweet? A little acidic? Balanced? I never tasted hard cider before trying this, so I have nothing to compare with. 😊🌟🥂 It was fun to make. 7 litres. Thank you so much!!

      When all the sugar is fermented the fermentation will stop ✋
      In the bottles the alcohol will increase of 0.5%

    in my opinion natural apple yeast is better than other yeasts Because apple yeast does not give bad taste and sour smell to wine.

      Also, some people seem to be allergic to store-bought yeast!
      Just like some people are allergic to American pasteurized milk. Mostly because of the pasteurization and perhaps the type of cow.

      @Hesifilm usually this wine is dry. If you want it sweet you need to stop the fermentation before all the sugar becomes alcohol

    Hi, Andrea! Thank for recipe! Now i have good apples from the garden, but I don't have enough time to manage the process. Can I make the juce by jucer machine and freeze it? Any idea if natural east will be alive after defrosting? If not, can I take few apples from the garden (different type) and put them (chopped or whole) inside fermentator with juce to strart the process? What do you think it will work?     I just use "Star san"(StellarSan) in my airlock. At a no-rinse concentration. The most convenient brewing product I've ever used.
    I have a local supplier who will juice apples to order, so I can just buy 40 litres which is the minimum and do two big batches, sometimes I like to dry hop it with citra or nelson sauvign or add other fruits.

    Are you shaking or mixing the contents of the first fermentation every day? If yes, for all 40+ days or only until fermentation begins (2-4 days)? Thanks!

    Dear Andrea, thanks for the great video. I noticed that you used the natural yeast from the apples only. So i was wondering if it is necessary to use cold pressed apple juice so that it contains natural yeast? I make many liters of apple juice every year, but it is hot pressed. Is the natural yeast still in the apple juice after hot pressing the apples? Or do I need to add additional yeast to get this tasty cider. Thanks and keep up with your nice videos 😊

    Hi,
    So the airlock + shaking the fermentation tank every day is essential to avoid molds ?
    I had a problem with this..
    Also any temperature above 21 celsius might make other microbes compete too much with the yeast if these and some other parameters are not controlled.

    With the sugar, what kind? Is it brewing Sugar? As I know granulated won't be good or fine sugar doesn't seem to ferment well unless I missed a step, lol.

    I always put some dry ice into container to prevent apple juice oxidise and turn too brown. But I see its not necessary....

      You have to move in a second fermenter and after 1 week in the bottles but you will always have a little bit of of yeast on the bottom 👍🏼 it is normal

    what if you put the chopped apples into a strong ziplock bag, and break with with a rolling pin? when the apples are smashed, you just cut a small hole on the plastic bag and the juice just dripping out?
    A couple of years ago I made it with red current - by accident. Just forgot a bottle of diluted, sugar sweetened red current juice in the fridge. When a couple of weeks later I wanted to free some space, opened it. Too bad that immediately the so-believed syrup sprinkled out, covering my face, the wall, the ceiling, practically the whole kitchen.
    The glassful of red current juice remained in the bottle was the best sparkling wine I've ever tasted, including some high rated champagne.
