    My girlfriend is going to show me how to can tomatoes thurday. I have never canned anything . I'm so excited! I'm 62 years old. I'm excited like a little girl.

      That's so fun! It's not as scary as it seems. Same with pressure canning. In fact, it's quite easy once you get the basics down! Ruthann Zimmerman, Sutton Daze and Rosered Homestead have done great instructional videos that helped me when I started canning more. Good luck! ❤

      Me too. 🥰. Same with the Hollars Homestead. Those both are simply THE BEST. Neither one acts like they’re teaching a cooking class, or a gardening class 👍. My aunt - there’s one she use to watch, she said one day THAT IS ENOUGH. I was cooking gardening and baking when she was in diapers - THEN I showed her both of these channels and she has 2 subscriptions- guess which 2. 😄😂😄

    I like to can fajitas in a jar. Bell peppers, onions, garlic and meat. Then it's a fan and go dinner. I add the spices and a little corn starch to the broth when I heat it up. Dinner done in 10 minutes.

    It is amazing just how quickly we can build our pantry stores, with small bits, and little projects. This week I found chicken leg quarters at Walmart for. 34, in 10 pounds bags. I brought home 6,and I am cooking 5 pounds per day in a solar oven, then saving bones and skin to make stock. This will inexpensively refill my chicken stock stores for the season. 😊

    We’re waiting for tomatoes to come in right now but I also need to can smoked green peppers again. They’re wonderful in chili. I love that you’re a household of no waste. It’s a skill nowadays to use all food the way you do. I grew up that way myself.

    Why have I not been using cherry pits all these years?!! Great ideas today, Jessica. Mark those pepper seeds as "green" and then save some from when the peppers ripen to yellow. There might be a difference in germination rate. At least that's what's in the back of my mind from something I heard about seed saving. Or have you already tested out that theory and it doesn't make much difference?? And my, my, you're really popping!!! I forget, when are you due? You look marvelous, simply marvelous! :)

    Today I pressure canned 4 pints beef broth, waterbathed 5 pints of pickled beets and onions, made 4 loaves of sour dough, ground up some dehydrated scapes and contemplating making dilled carrots. I also tore out my peas annd sowed yellow beans and lettuce.

    My mom always made a stuffed pepper casserole by making the filling using chopped peppers and then lining the casserole dish with peppers. Spooned in the filling and baked. Sometimes us kids ate the bigger peppers and sometimes not but it works out great. I still make mine that way.

    Hi Jessica!! Thanks for starting early! Your peppers look great!!! I don’t have a garden but I go to farmers markets and buy produce in season- and preserve them so I have them over the winter. I hope to be able to start a garden in 25!

    Great start to the challenge. Mine isn't going as planned and may be delayed. While I have been restocking our pantry/freezers and supplies for our home with items from Costco, Sam's Club, farmer's markets and local farms, and I have a massive haul from Azure that I am picking up tomorrow, I have not canned anything except Cowboy Candy and Cowboy Glaze. I did get some zucchini and yellow squash into the freezer. My husband had surgery last Monday and will be beginning radiation treatments in the next week or so. While I have made sure to have my list made, all the jars/lids/rings, and will have all of the ingredients to can beef, chicken, meals in a jar, beans, etc., it is going to be much harder than normal. We will be making a 200 mile round trip five days a week for this treatment. Right now, it is the number one priority and everything else will get done as I can manage to do it.

    You are so motivating! Yesterday I picked a big bowl of blueberries in the forest and made 2 large crumb cakes, one regular, one gluten and dairy free. We ate some yesterday and today and I froze half. Now I’m off to prune the raspberry bushes and hang the cut offs to dry for raspberry leaf tea

    Off to a good start so far. This grandma needed to travel over 200 miles to care for a soon to be 2 year old and a 6 year old. I loaded up the car with a cooler full of green beans I’d just picked, 25 lbs of peaches, pressure canner, sugar, lids rings and canning salt. Perhaps a bit extreme however I’m committed to participating and enjoying this challenge. When I drive home I’ll be using my abundance of garlic chives for some pesto, thank you for the idea. I also checked out the large rosemary in my daughter’s landscaping and will be harvesting and dehydrating it in the Las Vegas heat tomorrow. A nice addition to my spice cabinet and one more little thing to stock up.

    When I was a kid & we had stuffed peppers, I would do exactly what ur kids do: dump out the innards to eat, but then I use my fork to reach across the table to give it to my dad 🤣

    Such a cute kitchen assistant! I love my Food Saver. I've been using them for 30 years and hope to neve be without one.
    A couple of tricks with the bags ... make them a little longer than you need and you will be able to re-use them longer.
    For things like soups/stews, casseroles, lasagna etc, let them cool and cut them into individusl servings; then put them in zip lock bags ( to cut down on plastic, wrap meat and single serving casseroles in parchment paper). Flash freeze until solid. Lay liquods flat to freeze. Then, open the ziplock bag and place it and the food i to the vacuum seal bag and vacuum seal your food. Yes, it's one extra step, but you will save so much money on bags.
    I don't know about 4jars, but Food Saver has sales a couple of times a year. Sign up for their emails to get notified of sales. In fact, right now, they have a multi pack of two 8- inch and three 11- inch rolls for $49.99. That's the main thing I remember seeing.
    And last, when labeling your bags, label *above the seal line. That way, when you open the bag, you cut it away ... no more having to remove the previous contents off the bag.

    Do you make your recipes for canning yourself, or do you have a cook book? I have just the book that came with my mom’s presto canner, so it just tells times, pressures, and if it needs to be pressure or water bathed.
    I would love to can things other than tomatoes and green beans!
    What a labor of love you give for your family. You are truly an inspiration! ❤

      I use mostly Ball canning recipes. Things like soup I have a little more freedom in changing out veggies and spices, so long as it gets processed in the pressure canner for 90 minutes (if it has meat in it). But for things like fruits, jams, pickled items, veggies - I follow either Ball canning guides or the NCHFP website.

    EVERY SINGLE TIME you do these videos I learn a new project that I know I'll make and love. The chicken base is one I know I'll make as I love soups and my family doesn't. PERFECT for me ; LOL. Another is the picked banana peppers. At 78 I finally enjoy the taste of banana peppers on pizza and in salads. I will be making this and adding banana peppers to my garden must haves in the spring. Thank you for these simple but very good ways to make my life easier, productive and yummy!

    I have canned zucchini relish, refrigerator pickles, dry beans, and wild plum jam. Put basil pesto and peaches in the freezer. Tomorrow it’s mulberry jam with 3 grands. Thanks for the challenge!

    Everything looks great 😀 this past week I froze peppers, canned beets, street taco beef, corn salsa, regular salsa and chicken with homemade rotisserie seasoning. Today I’m making homemade peanut butter because I have about 5 lbs of raw peanuts to process and I am also pickling peppers. I have herbs drying as well.

    Because I am further south, my garden is winding down. The every little bit challenge is just that for me. I have to search for something to preserve. It's harder for me but I love a good challenge. The other day I picked the leaves off the dill that were green yet and froze them. Yesterday I picked mint leave and froze in water in ice cube trays. Today I have enough pickles to make tumeric pickles. Love following you on your challenge journey. I get some great ideas that I never thought of :)

      I've been reusing my vacuum bags for years with no problem. I only make an exception for the bags that had raw chicken in them. I'm just afraid I won't get them clean enough. I reuse those bags for things like boxes of matches, etc after washing them. You know... things that aren't ingested. I wash ALL my bags in hot soapy water, rinse well in hot water & I run them thru a bowl of hot water & a strong vinegar lastly. I put up an extra shower curtain rod in the shower with sliding hooks to hang them from a corner of the sealed end until completely dry & then store them in a plastic shoebox marked SECOND USE BAGS. Just a couple of ideas for you. God bless you & yours. 🙏🙏🙏

    Watching the making of the jelly made me remember a jelly I had as a child. I’m 73 and I vaguely remember having Red Hot Cinnamon Apple Jelly. I don’t remember if my Mom made it or if it was a gift. I do remember I liked it. I love cinnamon red hots but don’t get them often because I have a tendency to eat too many at one time and my tongue gets sore. 😂😂😂😂

    Pam says- Jessica, check the pH of your homemade vinegar straight against the store bought vinegar as mixed with water for the recipe. You may be able to use your homemade without adding the water to make up for the lower acidity. 😎

      That was my thought also. I figured once you dilute store bought with water the acidity of the homemade is probably comparable.

    Please note: Pepper seeds are super easy to save but if you are growing other peppers including hot ones the bees sometimes cross-pollinate them.(more so than tomatoes) so you can end up with a hot sweet pepper.
    (From a professional bedding plant Farmers Market growers)😊 But I love those peppers, going to order some seeds for next year.

    You inspire me so much!! I watch these videos and think “oh, ok, I can do THAT with some of my peppers”, and “hey, that’s a good idea to make cherry jelly with the pits” (beautiful, by the way!) and just bits and pieces of what you do, really makes me think how to more efficiently use my produce and not waste any of it..

    I so much enjoy following along on your Challenge, although I only preserve very little and have no garden!! What a great idea to save the cherry pits with bits of cherries on them, boil them up and make jelly!! Never would have thought of it!! I'm always learning some trick and tip from you, Jessica!!     Jessica, my family did the same thing with the stuffed peppers so now I make inside out stuffed peppers which is the stuffing with tons of green peppers diced up on the mixture.

    Started on the first by processing home grown peaches for jam and pie filling . My 2 yr old granddaughter helped me peel garlic and we got it all in the dehydrator. Today, the older children will powder the garlic and jar it. We also plan to can our banana peppers today. Love the turmeric idea! Thank you for that tip. Have a blessed week.

    Jessica, thank you for making these homesteading videos. They're so calming. I've been solo parenting for the last couple months and have a few more to go, since my husband is working away from home. Your videos bring me comfort during this lonely time.     I canned fig jam and balsamic fig spread, diced and frozen bell peppers, sliced and frozen jalapenos and harvested a bed of potatoes and put them in the curing rack this week. :) I love playing along.

    I’ve been looking forward to this challenge all summer. It’s great motivation to make sure I use all the herbs and vegetables I’m growing, and perseverance fresh produce from farm stands!! Thanks for the inspiration. I won’t be home the whole month of August so I modified the challenge a little bit. I made a list of 30 things to persevere this month… my list has grown to over 50 now!

    I made mandarine oranges for the first time, but it turned out bitter and only one of my kids would eat them 😢 I need to figure out how to not waste them now that they are already canned, and how to prevent this next time. I added 1/3c sugar to 4 c water as my canning liquid. Water bathed for 10 min.

    I don't have the equipment for canning, however I do use Chrystal Schmidt's book for freezing, and I have a new dehydrator, that I am enjoying. You're right. Every bit counts. Thank you for your posts, and looking forward to the seeing the canning season!

    First year in a long while that I have had nothing to preserve in august! So far I’ve had some broccoli, 4 cucumbers, 1 zucchini and several handfuls of peppers and a couple handfuls of beans - all of which we have eaten fresh. The extent of my preserving so far has been dried oregano and a half bag of frozen peas 😳😣. Tomatoes are taking FOREVER!

    I did the challenge last year. So much fun to look at all I did. Since I moved this summer I don't have a garden with all the produce to preserve up this month.

    You look so beautiful and healthy. Many blessings to you, your family and brand new baby!
    I have two huge pots of broth on the stove simmering away and will can them up tomorrow. I also learned how to bake a new bread yesterday and it turned out wonderful. Dill pickles are coming in now so I will probably be doing those once a week for a 3 more weeks.
    Life is ok here on my tiny homestead.

    I canned 11 pints and 1 half pint this morning. I still have 4 pints on the shelf. My husband helped by chopping lots of peppers and onions and zucchini up to put in the freezer. Feels good to get more on the shelf and in the freezer. I’m always thinking what I should make next but I am going to wait a week because I bought some more storage organizers to clean up the storage room.😊

    Great video, Jessica :) I love the idea of cherry marmalade, I just processed 36 pounds of cherries into light syrup for eating and then pie filling. Using up my pits to make jelly today :)

    So far, dried corn silk for tea on 1st, sauerkraut on 2nd, put up pickled garlic the 3rd, dried, then froze chili 🌶️today. Love your clear, detailed instructions!

    I canned 26 qrts of chicken this weekend. Wednesday i am going to be canning coleslaw. I try to can, freeze or dehydrate everything i can.
    I also dried my parsley and oregano.

    My children also did not like stuffed green peppers until I started stuffing red peppers. I would make a dinner of green stuffed for my husband and I and red stuffed for them. Over time they were willing to start trying the green.

    I started making my stuffed peppers as unstuffed pepper casserole. I either just mix in diced peppers or if I’m feeling extra saucy that day and have fresh pepper I’ll roast them first. So good and they eat it. ❤

    I'm doing the challenge this year! I'm having fun finding things to do each day. As I watch this I'm jaring up herbs I've been drying and will go out and cut more to replace these on my drying wrack. I found peaches on sale locally $1.49 a pound and I'll process those tomorrow.

    Great video! I have challenged my family to participate in an “every bit counts “ only we are in a different position. We are in between getting our home ready to sell and getting to our forever home/homestead. We didn’t plant this year because of being in limbo but do have herbs and I may plant some winter plants so I can work with the herbs for now. My main idea was to get people to pack, declutter, plan, prepare to move the needle closer to our end goal.

    I was reading it's so much safer to use freeze dried or dried herbs and spices in the canning process because of some herbs adding back fresh herbs from garden maybe what causes botulism to increase.

    I just froze some canteloupe and saved the seeds. First time I tried saving seeds. Don't know the variety as the local library branch was given a bunch of veg to share.
