    You are never too old to learn - at 74 I had never heard of salt cured egg yolks - this was beyond interesting. If you didn't have your beautiful family you could have a lucrative career of teaching Food Preservation. (But that wonderful family is the reason for preserving the food). I loved the handsome little spider man (?) helping with her eggs. Thank you so much.

    Jessica , do you know the feeling of,out of the blue you get someone in your mind and heart ,and you just want to tell the lord about that person ,and the hard worker they do for there family and that they still find it in there hearts to teach others so many things .. well you are the one .. i have never seen a women work that hard ,and still find the time and energy to be a mentor for others in life .. so i said a prayer for you ,and told the lord about you ,and that i hope he will bless you and your amazing family.     OMG Your Mom’s kitchen is SO amazing! If I were processing a lot of food it is definitely the one I would use as well! Love the industrial look with her dish shelves and all the stainless steel.       I was thinking also of how pregnancy is such a healthy state. That 'goddess of fertility' look. shining skin, luxurious hair, extra weight in all the right places. It is so fun to see her looking so good.

    Wow, I am impressed with the magnitude of the corn preservation. Corn in my area is $5/dozen. I am in my 50s and remember it easily $1/baker's dozen, so I cringe paying $5. This week I canned cowboy candy(jalapeños from a local farmer), apple butter, carrots, and pulled onions to cure. Picked green beans but the grand daughter ate them before I made them into dilly beans, and I am okay with her choosing that over a cupcake for her snack. Be well Jessica.

    I gotta say. I am 70 and this video took me right back to being ten years old with my brothers and sister doing the EXACT thing. At the time I just hated it. But after 50 years of canning, dehydrating, and brining in a tub, I am a grateful brat. Bless me Nan & me Mum♥

    I absolutely love gardening. I've been gardening for 3 yrs. The first year (2020) was a flop with containers. Even though it was not successful, that was my turning point. I was determined to be successful in 2021. In the fall of 2020 my father and I built raised beds. All winter long I researched and watched so many videos about gardening and canning. I got my pressure canner for Christmas 2020. Bought 2 Water bath canners and lots of canning lids and jars in 2021. I was determined to preserve anything and everything I could. My 2021 garden was great. Rough start to 2022 garden with my plants I started. But I'm able to grow quite a bit of food. Always learning how to grow different vegetables and how to preserve them. My next quest is learning to ferment. Thank you for sharing your love of preserving with everyone. Have a beautiful and blessed day.

    WOW, that is alot of corn! Our garden is ramping up here in MN. Working fermenting pickles and kraut. Canning beets and beans today. Clearing out the freezers here too for deer season! It is so nice to see all the jars on your shelves! I am so glad you do this every year, it really made me realize how much you can get done in a month to stock the shelves! Great job the children did on the corn! You are truly blessed to have such great helpers! Blessings to all!

    I love the life you live. God bless you and your family! Being raised in a more modernized society, you videos make me realize how much we have missed out on.     Jessica, I read a herbal book that had some ideas for helping livestock deal with those pesky flies. There are some herbs that are safe to use around and on your livestock. I’m not judging, please believe me, I find you very inspiring. Just felt sorry for the cow with the flies not letting her/him enjoy his treat of corn husks. I also love corn relish; my mum used to make it. I like it in cheese sandwiches,

      Fly Predators are a great way to reduce the fly population if you aren't surrounded by other farms not using them. We use them at the therapeutic riding center I work at, and they make a huge difference!

    Canned about 30lbs of beef in different ways on Friday and Saturday. I had some leftover taco sauce from one of the batches and decided to can that up too to mix in with ground burger whenever we want fast, homemade slow flavored tacos. Also this week I canned spicy peach jam, peach pie filling, peaches and pickles and froze green beans, peaches and broccoli. Thanks for the inspiration!

    Another wonderful video with your beautiful family! I love watching you preserve and all of your ideas! I think it's great to just pickle what you had for the day👏 I love seeing your home schooling and kids helping in the kitchen, and your loving on the little one in between cooking. Don't worry about all the people worried about the flies, they're always around cows much more than horses (what I'm used to). Cows always have lots of face flies, but I have seen a reduction with Farmer Tyler Ranch YT because he uses Redmond Salt blocks with Garlic! He got them as a sponsor. You might not notice in his videos, but I have recently noticed because he has around 100 cows. It doesn't totally eliminate them, but boy does it cut them down. But if you aren't worried about it, it's no big deal. Even deer and wildlife have flies! Your homestead is very nice, I love watching!💜

    You know, I revisit your videos, they that good to me. I think everyone would love to have a kitchen like your mom's. And it was so sweet of her to let you use it. I have elderberry trees and I can root some up for you and mail them to you if you wish. Just let me know. I will need to do that early Spring when they are trimmed back down. You can easily propagate them from cuttings. Let me know.

    Jessica, I just watched the video where you talked about yourself, your beliefs, etc. I just wanted to tell you I think you are amazing. You stick to your beliefs, as the Holy Spirit leads you and I think the home churching is a wonderful idea in many situations. I have learned so much from you about preserving and homesteading in general. Thanks for the time you put into you-tubing.

    It's so great to see the kids learning to work/cooperate together Where I came from, every 'able bodied man' did, even if they were a toddler, somebody, while watching, would give that kid something to do, even if it had to be re-done - that wasn't the point, it was learning that everyone was useful, (and therefore important) to the group! Nothing builds self respect like that does!

    Thx for the info and the sharing. I can remember shucking corns with my mom for days to get it all processed. We had A/C so we would lay it on newspaper in the living room to keep it cool while we worked on it. Lots of work for 2 people but the results were worth it

    I love freeze dried corn!!! I tip my salad with them instead of croutons. Freeze dryer was a game changer

    I'm loving all of your preserving, ive been growing veg for quite a number of years but only enough for fresh eating, but this year I've been growing more to teach myself to preserve food too, in Australia my gardening season is just getting underway right now.     I pass this on from my grandmother who taught me a long time ago. When doing lots and lots of corn, use a cleaver or heavy knife to cut the corn just above the stem. The husks come off immediately with most of the silk. Then, if the bloom end is a bit puny, you already have the knife to cut off the top as needed. Not recommended for children, but for an adult to cut and a child to strip - very efficient. I don't know how many ears of corn we processed this way in a day, but working side by side with each other created memories I still cherish.

    Hello everyone from New Hampshire! I worked on zucchini bread for the freezer this week with some walnuts and chopped pecans. I still learn so much from this channel even at nearly 60 years old. I burnt out my oven element this week so I had to wait for a new one and did my breads in the evening when it wasn’t so hot here. Today because it’s raining I produced miniature lemon poundcakes, lemon blueberry parfait to eat on the next hot day.

    Thank you sooo much for the instructions for pickling the random little things! I was hoping you would show how you do that and I’ll be attempting it today! Also, I’m in west Michigan and I’m having the same issue with some critters eating the bases off my tomatoes as soon as they turn red! So we are also picking ours early and letting them ripen on the counter. My mom is guessing it’s chipmunks but I’ve yet to see the thief at work. 😂

      I'm super busy as well so I will do a few massive full day canning projects with market produce. I also purchase shelf stable food to fill my pantry. Do what you can and it will add up.

    I shuck corn by splitting the silks in half grab one side with each hand and pull down it will come off all together. That 1870 Homestead made corn cob syrup it does turn out pretty similar to maple syrup when cold out of the refrigerator

    #everybitcountschallenge: This week, I canned corned beef. First, I needed freezer space for the cow I'm getting next month, but secondly my family loves it and it's a lot of work to do in the process of the school year. While I was in the freezer, I decided that if the canner was going to run, I would cook up some ground meat and can it as well. The first run went well, and every thing sealed. The second run, I had 3 quarts that siphoned and didn't seal. That is informing Sunday dinner today. I've worked on herbs and squash from the garden this week. Yesterday I purchased a peck of cucumbers and a peck of tomatoes (mine are not producing well as yet). The tomatoes are cooking into sauce which I started yesterday. The canner is processing the first run of pickles, and I still have 3 quarts and a pint to process. I'm making a huge batch of pasta meals today, nearly all of which will go into the freezer as individual servings for nights after school when I'm home alone and don't want to cook. That will use up the sauce I'm cooking as well as the meat that didn't seal. Tuesday I purchased a peck of peaches and processed those for the freezer for afterschool snacks for myself in the dead of winter. I also collected 6 peppers, and made a batch of stuffed peppers - some of which I ate after my meat canning day, and some of which were put in the freezer for a meal when Mom is too tired to cook Sunday dinner. I maybe didn't work on preserving every day, but the intent was there. Now to see what I can manage when school is in session next week.

    We cut it off the cob with an electric knife. I blanch the frozen corn in ice water that is in a clean cooler.

    I was raised like this. We planted and or put up everything we would need for a year. Everyday when we went through the garden, whatever came out of it was eaten or processed in some way. It's beginning to be a lost art.

    Excited for this video! I mostly dehydrated fruit and made fruit leather and stashed tomatoes in the freezer for a big canning project later. I'm expecting 60 lbs of peaches this week though and plan to dehydrate and can them.

    another wonderful thing to do with corn cobs is corn broth. then you can feed them to the livestock corn broth is sooo good in soups stews, really any receipe that calls for vegetable stock

    Jessica, I want to give you a tip and others. Instead of using a ladel to spoon in your hot brine. Use a glass Pyrex 1 cup measure, fits perfect in the funnel. Won't burn yourself, as the kids learn and help its safer too. One or two scoops rather than 5 or 10, per jar. It will save your shoulder excessive motion. Especially lifting all the jars in and out if the canner, rotator cuff injuries. I've been canning almost 40 years, my shoulder is just now starting to bother me. I know I can all year long, with your large family you do too.

    It's actually quite fun watching these videos. For all of the other "Urban Homesteaders" whose gardens are tiny or eaten by squirrels, I am following along but I do a mix of canning from market produce and buying shelf stable foods. Do what you can, be creative and you will build your urban pantry.

    Another busy week preserving here too. I free3 dried some corn, cauliflower, sweet peppers, spaghetti meat sauce and chicken Alfredo. I rendered 50 lbs of hog fat. I have enough lard for two years now at minimum. I canned some cinnamon pickles, chicken broth and chicken pot pie filling. Early this morning I filled the free.e dryer with more sweet peppers and mixed vegetables.
    I love corn relish but I’m the only one here that does so I haven’t made any for a long time.

    Holy cow! I was doing elderberries totally wrong...lol. (purple fingers and all). So NOW....4 two gallon bags of elderberries are in the freezer. And today - just going to shake those stems to get the berries to fall right off. Perfect timing BTW.

    I absolutely agree with you on corn. I support a local farmer and purchase what I need to can for winter. No where near as much as you, lol. I love the juice idea, haven’t tried that but I will now. My grapevine is about ready and what an excellent way to preserve that hard work! Thanks 🙏.

    You eat the corn relish on your plate when you got beans throw that relish in there get you some fried taters and cornbread. Heaven! And don’t forget a piece of onion, sliced tomato, and sliced cucumbers. Good eating. Let that corn relish all over your plate it’s so good!!!$

    Have you ever tried to make corn syrup with your cobs. The lady on 1870 homesteader does it. I thought I mitch it since you like to use every little bit to the end. There's nothing like fresh corn.

    Do to health issues, we couldn't have a garden this year. However we are buying corn from a local farm, and freezing it. We have put up about 16 dozen corn. I gave us around 38 quarts.

    We are enjoying your Every bit counts stuff.
    At the moment we are experimenting by eating recipes from the WW2 rationing in England
    I cheat a little, adding herbs & spices to improve the taste.
    Lord Woolton pie is delicious with such additions, for instance.
    These old recipes are to be found online.
    As we only have about a quarter of an acre, I grow much the same crops as my grandfather's. The fed their families through the rationing of two world wars.

    Jessica, on canning fruit to make juice, can I use Tangerines that are peeled and in the freezer. I originally used them for jams but I had so much left over I froze them. Or is there another way to use them. I'm trying blueberries, blackberries and grapes right now in the wb. Thank you for all the wonderful preserving ideas. I've been gardening and canning for a little over a year and love how healthy I feel. My doctor is loving my lab work , as I am a diabetic who had high cholesterol and was anemic. Now I have lowered meds and even come off some. So Thank you for all the knowledge you pass on.

    the most popular dip to have with cracker or corn chips in Australia is corn relish dip. you just mix your corn relish into sour cream or cream cheese and for a non dairy you could use a soft tofu.

    Also going to make some chow chow to put up I don’t have the room to grow like I’d like to do I buy organic locally and take advantage of that option and some people who have gardens start getting too much and often want to give it away and I take advantage of Thea’s well and I’m very thankful and it feels good to put to use something that would’ve otherwise got thrown away 🥰

    For getting the corn off the cob, I have noticed several folks have been using what appears to be an angel food cake pan & pushing the cob through the center & catching kernels in the cake pan.
    You might check it out as it appears to be really fast giung that way.
    I miss being able to eat corn ☹️ but have helped in the past on prepping it. No one I knows grows it anymore or even purchases it that way, so I can check this way of prepping it.

    Take your ball canning book apart and put into sleeves and into a 3 ring binder. That way if it gets any thing on the page you can wipe it off and you don't have to worry about it falling apart worse and loosing pages. Plus if you get anymore canning recipes you can add to the notebook.

    I love this series. Last week, I froze red and black raspberries as they came in (the ones I didn't eat), made 21 pints of salsa, 7 half pints of raspberry jam, and harvested and froze all of our sweet corn (wasn't a huge amount, just a couple gallons). I need to get one of those tools though, thanks for sharing the link!

    Awesome! Dried parsley and cinnamon basil and canned more strawberry jam yesterday. Today is dill pickle and first round of cowboy candy day! For your very loved ball book purchase some page protectors and a binder and take it apart. It will be waterproof that way too.

    I am enjoying the challenge. Today I canned chicken and freeze dried some peaches and shredded zucchini. Tomorrow I am canning potatoes 🥔 my mother-in-law has started participating as well she was making rice buckets and vacuum sealing pasta packages.

    Corn relish is delicious on top of cooked dried beans. I especially like to top pinto beans with the relish. I really only cook 2 kinds of dried beans. Pinto and navy beans. The pinto I just cook with a little onion and seasonings. The navy beans I fix as a soup with onions, celery, carrots, navy beans, tomato juice, broth and a couple potatoes to turn it into a delicious soup
