My mother-in-law taught me how to make both corn and flour tortillas. She stacks the first two off the plancha on top of each other and then will flip the stack over as she adds tortillas to her kitchen towel so top becomes bottom and bottom becomes top. She told me this helps keep everything warm and steamed. It seems to work. I've found that my tortilla press is also great for helping to flatten Naan (Indian flatbread)for cooking. Those also have to be wrapped in a towel and kept warm as well as cooking in a hot, ungreased pan. I find cast iron is best. Wax paper also will work on the tortilla press but I believe parchment paper or plastic works better. I wash the plastic by hand and place in dish strainer to dry so I can get several uses. I had a bag of masa flour that got pushed to back of a high shelf. I think it was about 3 years old and the masa flour was still good. My kitchen is in the basement and unheated so cupboards stay about 65° F.
I was just thinking the same thing to look up how to make corn tortillas to give it another shot of leaning because the prices of organic corn tortillas are so expensive I need to master this if I want to save money on organic corn tortillas in my area they cost double the price then organic flour tortillas and I just bought corn masa flour yesterday so what good timing ❤️

Oh MY! What a wonderful recipe/video! I’ve attempted these off & on over the years & never got very good tortillas. You have shown the nuances to making really good ones. The resting of the dough makes perfect sense & compares to autolyse for bread. Also, turning & pressing a second time clearly makes for a better product. And the steaming/resting after cooking looks important. I guess I was thinking like pancakes before & missing several steps. I wonder if you can use parchment paper, allow it to dry out & reuse? Thank you so much for sharing your wonderful skills so well! 🌮🌮🌮
I started canning for the first time yesterday on my new Nesco and I was so anxious to try it but thanks to your direction and teaching about safety I was successful and grateful that I have learned a new skill and see myself trying new recipes to can... I'm also learning about storing food for long-term and I was wondering how do you store the masa? Thank you so much for sharing your knowledge with us and God bless you and your family
Oh that takes me back to when I was a little girl & Grandma would make fresh corn tortillas….we kids would beg for the first one & slather butter on it. Sometimes she made Gordita’s…just a smaller version but 2 or 3 times as thick so she could satisfy several of us at the same time….one again we slathered butter on them!
Sounds great! I lived in El Paso for several years and taught 6th grade at a school where I could look out the window and see across the river into Juarez!
Finally made these. Hooray. All went exactly as you instructed using the plastic. I found the thickness after pressing important for easy detachment from the plastic. Used them with the canned adobe sauce & beef chunks shredded. Good. Thank you for your tips.
My favorite! I love making tortillas! They taste so much better than packaged ones you buy at the store. We had tacos yesterday with shredded pork cooked with oregano and cumin, shredded cheese I made homemade and some of my canned chili sauce. Tomorrow I’m making tortilla soup from left over tortillas and pork. I loved watching you make yours. I recently bought a 10 inch press and cast iron tortilla pan. I like to make flour tortillas and make breakfast wraps in large quantities and freeze them. I make an assortment of eggs, beans, rice, veggies. Quick on the go breakfast, lunch or dinner.
I add the salt to the warm water. For me, it gives the tortillas a better flavor. I’ve also used my vanilla salt for using the tortillas as a dessert with apple pie filling. I lived in Houston for many decades & your method is totally accurate. Yummm!

Great video Pam. I make tortillas all the time but have never made corn tortilla’s. That press works pretty slick. I don’t have one…yet. It’s works way faster than rolling my hand. Thanks so much
I use parchment paper with my cast iron tortilla press.. I can use that 10-15 batches ( my batches are 13-18 each ). .. I never measure the MASA, you are correct it is a feel thing.. not to wet, but just beyond the it will not hold together stage. I cook them in cast iron, no oil necessary. I actually put dry masa on the bottom paper press the dough with my hand then a little masa on top before playing the top paper on ... I stack them all on a plate and then cook...
Pam, I just love watching you and I call you, Mama Red, in my house. I tell my hubby, oh Mama Red has a new video for me to watch!! Also, you are not cheap, you are frugal and I absolutely LOVE that as I reuse whatever I can! Keep up the great work!
I've made homemade tacos and tortilla chips but never thought to make tortas. Yours look amazing and delicious Mrs. Pam. I think I'll make these for dinner this weekend. I don't have a taco press, I roll mine out with my rolling pin. They're slightly thicker but I like them that way. Thank you again for sharing with us such a fabulous and economical meal.

I can make homemade corn & flour tortillas, fry breads and flat breads, etc. Yours turned out beautifully. I love it when I learn new things, and I definitely learned a couple new things here. Thank you. 😁👍🏻❤
Wow! I am so excited to see you with making a taco video I can hardly stand it! I have a Mexican girlfriend that lived close by who showed me how to make these literally as she walked out the door moving back to Mexico. So I got instruction but none of the nuances of really cooking them. So I am sooo appreciative of this video. I am gluten intolerant so if there’s anything I need to learn to make grid-down, it’s these. Thank you thank you. (I’ve also heard of using cooked red lentils for flatbreads as well). Now there’s an idea for a simple food to add to our Arsenal! I join all your other commenters in loving your videos!
I've been making chips for 20 plus years. They are so good! I've got some masa in my food storage but haven't made tortillas yet because I need to get a press. I had been substituting the masa for flour in a couple of my recipes because we thought my husband had a gluten intolerance. Turns out he was sensitive to some other ingredients. I'm so glad I have that masa. I'm going to try the tortillas out soon. Thanks for the video!
While a press is nice, you don't have to have one. I've made with rolling pin, back of one of my iron pans (just press evenly), even a wooden chop block (again press evenly)
Thank you so much! I have made flour tortillas which I just rolled out with rolling pin, didnt know there was a press. Will have to look for one or ask Santa.
RoseRed Homestead Hi Pam....love your videos. I am fairly new here. I would like to request a test be done on dry canning carrots. I have been canning for almost 45 years now and have recently (year ago) begun canning my carrots without water. They are delicious and not soggy! BUT, I would like to know if the heat penetrates as well through air (as it does with meat) as it does with water. I do everything the same except, I drizzle butter and salt over the carrots and rub through before putting them in the jars. I also chunk the carrots a little larger than usual. Just my preference. I also do this method with potatoes (with the addition of citric acid) and both the carrots and the potatoes come out tasting like roasted and we absolutely love them this way. I have gotten flack (of course) from those who go strictly by the government's approval. I am curious to know if the heat is an issue. I doubt it but would be nice to know for certain. I would really appreciate your help.
I just bought 25 lbs of Masa for long term storage this weekend, but wasn't entirely sure how to use it. I tried making 4 without using the press. I will definitely be getting a press after that kitchen fail. Thanks so much for showing us! Please consider showing how to make flour tortillas. Those are my absolute favorite, but not sure if I need special flour to make them. I have bought the Quaker bag for flour tortillas and loved the end product. Just not sure what makes that flour special. I can't find it in my area in Georgia. Love your channel!!!
I made my 2nd batch of corn tortillas last night with my own Refried beans cooked from scratch in my insta pot. They are a fraction of the cost homemade vs the massive cost at our local grocery store, $6 for a pack of 8. I buy organic masa harina from Amazon, free shipping which is expensive to AK, it is worth it. A pack of 4 bags for $17, = $2 for a dozen tortillas.
I finally made good flour tortillas so now I have another kind to try. Grid down chips will be a nice treat. Thank you. Now for a good potato chip and my junk food list will be complete.
Briliant video. I loved it. Going to try this method. Thank you both for your hard work, detail and patience in passing on your wealth of knowledge. Xx
Well, I watched the video, loved it, and I did not know that Masa is made that way. I thought it was corn meal more finely ground. I do use a lot of cornmeal cause I love cornbread. Yes, and flour cause I love biscuits. Now, I'm gonna try my hand soon at making these corn tortillas. If I'm successful, Masa will be added to my storage. Would you, please, be so kind as to teach us how to make flour tortillas, if I may be so presumptuous as to ask. You teach us so much and you're so busy, I don't wish to add to your load, but, if you could do so, I would so very much appreciate it. If you can't fit it in, I totally understand...no worries. 🙂 Thank you! And, Y'all take care. 🌻🙂
Ok, this is my new favourite episode 😁 Thank you, Pam. Questions: Do you use or recommend a particular oil for tortillas? and I noticed that you only used half the tortillas, does this mean the raw batch keeps for a day? Thank you in advance.
That was fun seeing how to make those. I have all the ingredients and a press just like yours...never used, lol. It's gonna get used very soon! Thank you!

I haven’t finished the video, but I just wanted to say I love your enthusiasm! There is fun in cooking.
I appreciate that
Thank you! I recently bought masa and a tortilla press just in case. We live in south Texas so tortillas are everywhere until they aren’t lol
Excellent video, Pam.
Thank you!

Hi Pam....love your videos.
Thank you for a very thorough and informative video. My mouth was watering watching you cook!
Wow, how easy you made those, thank you so much.
Looks easy and thanks for this lesson
Once again, a great educational video. Thank you!
This is price of store bought tortilla rounds ? Oh my goodness, you need to move south, but, our prices are climbing.
@@IMOO1896 gotcha and no thanks. Too many people 😆
I finally made good flour tortillas so now I have another kind to try. Grid down chips will be a nice treat. Thank you. Now for a good potato chip and my junk food list will be complete.
LOL!
Pam I put the filling mix into the crockpot on high before I start the tortilla's. Then they're both ready at the same time.
Perfect!
Thank you for the tips. I've tried these before without success.
Briliant video. I loved it. Going to try this method. Thank you both for your hard work, detail and patience in passing on your wealth of knowledge. Xx
Oh my! You've just convinced me to get one of those presses. Easy peasy. Enchiladas, yum.
You always make me so hungry! Hungry for tortillas, and hungry for more of your awesome videos! Much love and appreciation to you and Jim!!
You are so welcome--thank you for your kind words.
You are so amazing, I learned alot from you ❤, I felt very comfortable to can my own hamburger following your advice and direction 😊 thank you so much
That is so great to hear! Thanks for sharing.
Learning so much ... thank you !
Holy cow 🐄! Never knew how easy it was to make corn tortillas. Thank you. I'm going to get a press now.
Hope you enjoy
When will your cookbook be available and from where? I’ve been binge watching all your videos and telling my friends!
We are hoping for early spring and we do not have a distributor yet. We will shout the news loud and clear when we have everything ready.
You make it look so easy! Thank you.
Yummy now I'm hungry
A friend of mine uses the plastic bag from a box of cereal to line her tortilla press. It is surprisingly sturdy!
Yes, it would be! That is a great idea.
Thank you!
Hi Pam! Great video, I just bought a tortilla press similar to yours and will try and make some tortillas too. Thank you for sharing!!
You are so welcome!
I am definitely making these! 😋 Your directions and tips are very easy to follow. BTW you look great in purple!
Please teach how to make flour tortillas. It's a great quick bread to eat with so many thing or make many dishes to eat. I know there are many that would enjoy learning this. I learned how in home ec. but the neighbor lady was where I really learned the skill. Hers were fluffy heaven to eat.
Working on that!
Could you tell us what brand and size of tortilla press you bought? Thank you for everything you guys teach us; we just hang on every word!
I refer your channel whoever I can. Glad to do it. You go!
I appreciate that
I love this! I've never been happy with my tortillas and I've never known they had to rest, nor that they weren't to be browned on the griddle. I'll bet that's been my problem. Can't wait to try this again!
Tell us about your results.
You are a wonderful resource! Thank you!
Looks yummy!! Thank you!!
