Remember if you are baking bread and don't have yeast, you can make a sourdough starter. Now most of you have really clean kitchens, and you need yeast spores in your kitchen to make sourdough starter. I know because my brother-in-law lived with us for a couple of years. When I tried to make sourdough starter after he had cleaned the kitchen, it didn't work very well. The starter didn't start as easily as it did when I cleaned the kitchen. That doesn't mean that it was dirty, just that he was more fanatical about really cleaning up. Victor had worked in professional kitchens as a chef, so had my husband, Dana, his nickname was Danny Boy. I was up against some really tough competition. I cooked and baked. This is exactly what I needed. So I can start a month at a time. See how much time and money that takes then go for another month. that's what stops me is all of the unknowns, how much time, money, space. this way I can find out a month at a time. Of course I'll have food in every nook and cranny in my home but I'll make it work.

Love when people have a system that works for them. It is very comforting. When I open something, from flour to shampoo, I put some blue tape on it and write the date when I opened it. Then I make a note of when it goes empty. That way I know how long a bottle of shampoo lasts, for example, and how much I need for whatever length of time for which I am planning. It works really well for how much stuff to bring when traveling as well. I have a spreadsheet that tracks anything I purchase from TP to matches to soap to trash bags to dry goods and canned goods and formulas that figures out how much I need from 1 week to 1 year. I started out by going into my pantry, laundry, bathroom storage, etc., and writing down everything that I had that is consumable. It took some time but now I know exactly what I have and how much I need to restock.

Oh Pam….I’m so in love with you and your family. How wonderful and privileged I feel to have meet them. I have a Sister too, 10 years younger and I taught her to tie her shoes…I’ll never forget that, or the look on her little face when she understood!! Her name is Margaret. She is nothing like me..Lol….she has other qualities I wish I had…..Memories…..our Mother was the best…she canned jams and jellies, but was to frightened to can meats. Our freezer was always packed!! We grew up on wild game. Daddy hunted. Mom had her garden. We were poor in money, but rich…..8 people in a slab 3 bedroom, one bathroom home and I honestly can say I don’t remember any problems living that way. Grandma lived with us and my Dad adored her. I have learned a Lot, and appreciate Cindy coming on and explaining her Food Storage book and how to go about preparing your food storage for a day, a month, a year and helping us realize how much is needed for a year's worth of food. For example, making 2 loaves of bread a week for a year requires 17-18 cups of yeast. I would never have thought it would require to that much yeast!!! @@lilolmecj My grandmother taught me to do that. She also told me to refresh the starter once a month by adding some mashed potatoes to the jar -- to a cup of starter, I add 1/4 cup of mashed potatoes when I feed it to begin a new loaf.
@@s.leeyork3848 I have a good refrigerator dough recipe, from a 70s era Betty Crocker cookbook that uses mashed potatoes ( I use instant) to feed the yeast slowly, works great. It is an easy way to make dough once and have fresh rolls every evening. 😄

Today we canned 7 pints of vegetarian split pea soup for our older sister. Then we canned several jars of split pea soup the way we like it. I could not have done it by myself because number one, I don't have a pressure canner (she does), and number two, I don't have the knowledge and experience yet. You sisters are amazing and delightful. Cindy’s plan is an eye opener for me. I thought I was doing pretty good until she showed how much you would need for a years supply for each ingredient. Yeast, for example. I have no where near 17 cups and I make bread. I can hardly wait for the book the two of you are going to collaborate on. I know this book is going to reflect your personalities as well as your combined knowledge of and experience with food storage. Your book will be a bedrock manual for food storage.

Your sister is a hoot!! She should consider getting her own RUclips channel :D I think the trick to food storage is that it's for everyday (or almost everyday). It's not just for when things go bad, but for whenever. We eat "food storage" meals everyday for breakfast, and 3-4 dinners a week. We supplement our storage meals with fresh fruit and veggies, the occasional take out.

I’ve used a system similar to yours with 15 days of meals - no where near as organized! I started with goals of stocking everything needed for 15 days, then a month, then 2 months... I’m currently at 8 working on 9.

I do have 1 thing organized. I purchased, store bought can organizers. You put the can on the top, and, it rolls to the bottom in the order you put them on. You take the front can from the bottom, so, your always using the oldest can first. But, I don't have a lot of store bought canned foods, and, you need 1 for each type of food, like tomatoes, or corn, etc, so, space would be a consideration for others with these. But, I love them. No need to rotate cans, because they rotate themselves.

An interesting perspective on planning! I am hoping to develop a garden that will satisfy most , if not all, of my fruit and vegetable needs. This video has inspired me to start with skeletal levels canned, frozen, and dried produce and work backwards to how much to plant, requisite garden dimensions, how many canning jars to have on hand, and how much of which type of storage space (shelves for canned goods, freezer space, cool storage for potatoes, squash, etc.) will be required. The first thing I realized is that I am going to need a lot of tomatoes. Thanks, ladies.

I am totally overwhelmed with just getting started to be self sufficient for our family. We have made so many changes quickly but over whelmed with the not knowing. Thank you so much for sharing.
😂🤣 Here is where I started. It happened during hurricane Irma. We were not supposed to "get it", and then 24 hours before she blew into town...you got it...OH CRAP...But, it was my coffee that did it for me!!! I had no way to make my coffee, and everything was shut down- no power. Now, when we get "the possible- word", I go straight to my kitchen and you guessed it... make some coffee and get it stored in the fridge or freezer!!! It's those little things that give you a head start, that turns out to be the biggest blessings. Start with the best choices. " If I ran out of ?? would people find me a monster?" 😂 Start there, and then find the next item. Once you figure that out, the rest will be a breeze.
I hear you. My Mom says "Yard by yard is hard, inch by inch is a cinch!" This is something I need to remember often, in general. 30 days of food storage is a little overwhelming but I can work on a week's worth. If I find that's overwhelming, too, then just work on one day's worth of meals. I'm really not a planner, so this will be a little challenging for me.
I have to keep a tally of my stored foods! This way, I KNOW what and how many need to be replaced. This especially is helpful with freezer foods, because I don't enjoy digging around in the freezer just to see what needs to be replaces. Thank you Pam, and Cindi! What loving and fun sisters you are.
Absolutely loved this. Thank you for sharing your sister with us and her fabulous ideas. I started buying bulk over 40 years ago when my husband was doing Army work. We always took that summer camp money that he earned in those two weeks and go to Fort Knox commissary. We would buy enough get us through the entire year. We figured out how many paper towels, toilet paper, napkins, kleenex needed. How much meat and canned goods etc. Worked out great for us.

First of all, I'm loving on Cindy with that pretty hair. I laughed when she pulled out the pointer and the charts with numbers. Obviously, this is a family of mathematics, science, and logic. But I saw the thumbnail of the breads in the pan and thought you were going to teach how to make bread. I need to watch this multiple times. I tried by hand. I tried with a breadmaker. I bought the freshest yeast. I followed the recipes to the letter. All of my breads have turned out like a fried dumpling. :( Ok, turns out the video is not about bread, but still very interesting anyway.

John Doe, in my experience bread made at home will be heavier than store bought. I haven’t watched Pam’s bread video, but I will share a couple of things I have learned. Be very careful to not over heat your yeast. Use a thermometer 85-90 is plenty hot. Mix your yeast with some sugar, I use about a tablespoon with a tablespoon of yeast and a cup of liquid, I usually use milk, but water is fine. Set that somewhere about 70 degrees F, and come back in an hour or so, it should be foamy on top. You then know your yeast is active. Then mix your dry ingredients, except for the salt, salt slows down the action of the yeast. So basically you will have flour plus maybe powdered milk. I sometimes put the flour into a warm oven in a glass or stainless steel bowl for a while to warm it through, but it is not necessary. Mix up your liquids and fat (I normally use butter but lard, extra virgin olive oil, avocado oil, or eggs are all acceptable. Mix the ingredients together, leaving it on the soupy side, set it somewhere warm, but not hot, for about an hour, then give it a good stir, and then add your salt. And at this point add more flour to bring it close to the right consistency, turn it out onto a well floured surface and knead until it is only slightly sticky, then put it in for its first official rise. I use a slow rise method so just maybe 75 degrees, it will take about 2 hours, punch it down and knead again, put enough flour in that it is not sticky on your hands. Shape and put into baking containers, first oil the cooking pan, I use spray products like “Pam”, put into a slightly warmer place, 80 works well, and give it plenty of time to double in height. It might take another 2-3 hours. Then I gently set it out of the oven and preheat to 375, replace into oven and cook until the internal temperature of the loaf is 205, it should be golden on top. Don’t go by the color, get an instant read thermometer, I like my inexpensive digital one. When you remove it from the oven immediately turn it out of the pan onto a baking rack so the crust does not get soggy. And, even if it is heavy it still makes good toast. I know that was long, but it is based on my trial and error over thirty years.

Then I make a note of when it goes empty. That way I know how long a bottle of shampoo lasts, for example, and how much I need for whatever length of time for which I am planning. It works really well for how much stuff to bring when traveling as well. I have a spreadsheet that tracks anything I purchase from TP to matches to soap to trash bags to dry goods and canned goods and formulas that figures out how much I need from 1 week to 1 year. I started out by going into my pantry, laundry, bathroom storage, etc., and writing down everything that I had that is consumable. It took some time but now I know exactly what I have and how much I need to restock.

Oh Pam….I’m so in love with you and your family. How wonderful and privileged I feel to have meet them. I have a Sister too, 10 years younger and I taught her to tie her shoes…I’ll never forget that, or the look on her little face when she understood!! Her name is Margaret. She is nothing like me..Lol….she has other qualities I wish I had…..Memories…..our Mother was the best…she canned jams and jellies, but was to frightened to can meats. Our freezer was always packed!! We grew up on wild game. Daddy hunted. Mom had her garden. We were poor in money, but rich…..8 people in a slab 3 bedroom, one bathroom home and I honestly can say I don’t remember any problems living that way. Grandma lived with us and my Dad adored her. I have learned a Lot, and appreciate Cindy coming on and explaining her Food Storage book and how to go about preparing your food storage for a day, a month, a year and helping us realize how much is needed for a year's worth of food. For example, making 2 loaves of bread a week for a year requires 17-18 cups of yeast. I would never have thought it would require to that much yeast!!! So, thank you Miss Cindy and thank you Miss Pam for having your sister on your channel to explain how to get started preparing meal plans and figuring out how much food one needs to buy to prepare said food!!! You can stretch your yeast by growing a sourdough starter and feeding it regularly. Pam might have a video on that.
@@lilolmecj My grandmother taught me to do that. She also told me to refresh the starter once a month by adding some mashed potatoes to the jar -- to a cup of starter, I add 1/4 cup of mashed potatoes when I feed it to begin a new loaf.
@@s.leeyork3848 I have a good refrigerator dough recipe, from a 70s era Betty Crocker cookbook that uses mashed potatoes ( I use instant) to feed the yeast slowly, works great. It is an easy way to make dough once and have fresh rolls every evening. 😄

I know this book is going to reflect your personalities as well as your combined knowledge of and experience with food storage. Your book will be a bedrock manual for food storage.

I think the trick to food storage is that it's for everyday (or almost everyday). It's not just for when things go bad, but for whenever. We eat "food storage" meals everyday for breakfast, and 3-4 dinners a week.
We supplement our storage meals with fresh fruit and veggies, the occasional take out.

I do have 1 thing organized. I purchased, store bought can organizers. You put the can on the top, and, it rolls to the bottom in the order you put them on. You take the front can from the bottom, so, your always using the oldest can first. But, I don't have a lot of store bought canned foods, and, you need 1 for each type of food, like tomatoes, or corn, etc, so, space would be a consideration for others with these. But, I love them. No need to rotate cans, because they rotate themselves.

An interesting perspective on planning! I am hoping to develop a garden that will satisfy most , if not all, of my fruit and vegetable needs. This video has inspired me to start with skeletal levels canned, frozen, and dried produce and work backwards to how much to plant, requisite garden dimensions, how many canning jars to have on hand, and how much of which type of storage space (shelves for canned goods, freezer space, cool storage for potatoes, squash, etc.) will be required. The first thing I realized is that I am going to need a lot of tomatoes. Thanks, ladies.

Food storage is such a necessity now. Just start with a few cans each week.
😂🤣 Here is where I started. It happened during hurricane Irma. We were not supposed to "get it", and then 24 hours before she blew into town...you got it...OH CRAP...But, it was my coffee that did it for me!!! I had no way to make my coffee, and everything was shut down- no power. Now, when we get "the possible- word", I go straight to my kitchen and you guessed it... make some coffee and get it stored in the fridge or freezer!!! It's those little things that give you a head start, that turns out to be the biggest blessings. Start with the best choices. " If I ran out of ?? would people find me a monster?" 😂 Start there, and then find the next item. Once you figure that out, the rest will be a breeze.
I hear you. My Mom says "Yard by yard is hard, inch by inch is a cinch!" This is something I need to remember often, in general. 30 days of food storage is a little overwhelming but I can work on a week's worth. If I find that's overwhelming, too, then just work on one day's worth of meals. I'm really not a planner, so this will be a little challenging for me.
I have to keep a tally of my stored foods! This way, I KNOW what and how many need to be replaced. This especially is helpful with freezer foods, because I don't enjoy digging around in the freezer just to see what needs to be replaces. Thank you Pam, and Cindi! What loving and fun sisters you are.

Absolutely loved this. Thank you for sharing your sister with us and her fabulous ideas. I started buying bulk over 40 years ago when my husband was doing Army work. We always took that summer camp money that he earned in those two weeks and go to Fort Knox commissary. We would buy enough get us through the entire year. We figured out how many paper towels, toilet paper, napkins, kleenex needed. How much meat and canned goods etc. Worked out great for us.

First of all, I'm loving on Cindy with that pretty hair. I laughed when she pulled out the pointer and the charts with numbers. Obviously, this is a family of mathematics, science, and logic.
But I saw the thumbnail of the breads in the pan and thought you were going to teach how to make bread. I need to watch this multiple times. I tried by hand. I tried with a breadmaker. I bought the freshest yeast. I followed the recipes to the letter. All of my breads have turned out like a fried dumpling. :(

John Doe, in my experience bread made at home will be heavier than store bought. I haven’t watched Pam’s bread video, but I will share a couple of things I have learned. Be very careful to not over heat your yeast. Use a thermometer 85-90 is plenty hot. Mix your yeast with some sugar, I use about a tablespoon with a tablespoon of yeast and a cup of liquid, I usually use milk, but water is fine. Set that somewhere about 70 degrees F, and come back in an hour or so, it should be foamy on top. You then know your yeast is active. Then mix your dry ingredients, except for the salt, salt slows down the action of the yeast. So basically you will have flour plus maybe powdered milk. I sometimes put the flour into a warm oven in a glass or stainless steel bowl for a while to warm it through, but it is not necessary. Mix up your liquids and fat (I normally use butter but lard, extra virgin olive oil, avocado oil, or eggs are all acceptable. Mix the ingredients together, leaving it on the soupy side, set it somewhere warm, but not hot, for about an hour, then give it a good stir, and then add your salt. And at this point add more flour to bring it close to the right consistency, turn it out onto a well floured surface and knead until it is only slightly sticky, then put it in for its first official rise. I use a slow rise method so just maybe 75 degrees, it will take about 2 hours, punch it down and knead again, put enough flour in that it is not sticky on your hands. Shape and put into baking containers, first oil the cooking pan, I use spray products like “Pam”, put into a slightly warmer place, 80 works well, and give it plenty of time to double in height. It might take another 2-3 hours. Then I gently set it out of the oven and preheat to 375, replace into oven and cook until the internal temperature of the loaf is 205, it should be golden on top. Don’t go by the color, get an instant read thermometer, I like my inexpensive digital one. When you remove it from the oven immediately turn it out of the pan onto a baking rack so the crust does not get soggy. And, even if it is heavy it still makes good toast. I know that was long, but it is based on my trial and error over thirty years.
