EXCELLENT RECIPE. Just made it tonight. Added some cut up chicken for some protein. While I didn't have any Ricotta cheese I did have some Brie. We both like the Panko "crunch" and topped them off with that. Your suggestion for a wine was excellent, however, I had a bottle of Barbera that also went well with the portabello mushrooms and your mixture. I subscribed to your site and look forward to more creative recipes.

I always use frozen spinach - CUT LEAF. You would need 10 or more bags of fresh spinach to make 1 pound of frozen spinach.

Nutmeg, basil oh my! Love the combination it looks like it is packed with flavor. Presentation looks great and I would add Panko bread crumbs because having a bit of carbs is good in moderation. Thank you for another excellent episode
