    Jeff, I love everything about this recipe! The spinach and cheese filling looks amazing! I love that it's low-carb, but I'll have to try this with the breading too, as you suggest. I'm heading over to your website to print the recipe out! :) Yum!!

    EXCELLENT RECIPE. Just made it tonight. Added some cut up chicken for some protein. While I didn't have any Ricotta cheese I did have some Brie. We both like the Panko "crunch" and topped them off with that. Your suggestion for a wine was excellent, however, I had a bottle of Barbera that also went well with the portabello mushrooms and your mixture. I subscribed to your site and look forward to more creative recipes.

    Me "vegetarian" but, mostly because I can not give up wine and cheese together!!! Please help!!

    I always use frozen spinach - CUT LEAF. You would need 10 or more bags of fresh spinach to make 1 pound of frozen spinach.

    Wow. This is a definite try. I believe I can find a pretty good non dairy ricotta. Do you have a suggestion for a light sauce?

    1 medium shallot, 4 large portobello mushrooms, 3 tablespoons olive oil,
    1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper

    Wow that mushroom is huge almost reminds me of Alice in wonderland 😂 you are absolutely right about fresh mushroom. This is a great video excellent recipe and I love all the ingredients you used. This one is a winner. 😂 frozen spinach how dare you 😂
    Nutmeg, basil oh my! Love the combination it looks like it is packed with flavor. Presentation looks great and I would add Panko bread crumbs because having a bit of carbs is good in moderation. Thank you for another excellent episode

    You can use nutritional yeast instead of Parmesan and cottage cheese instead of ricotta. Just saying..

      Vegetarians usually eat dairy and eggs. It's vegans that don't.
