As a former professional cake decorator here's some life hacks: if you want a really smooth looking cake icing you can take a spray bottle (one that does a very fine mist) and spritz the icing and then do your final smoothing (less is more though). This makes a very smooth surface. Also, to reduce hand strain, underfill your bags or use larger bags and separate the icing inside the bag and make a smaller pouch of icing close to the tip and twist the bag between so the two halves are separated. This means you are having to manipulate less icing at a time and easier on your hands, plus the larger bags means you have to fill them fewer times and less mess. Love your cooking videos, I'm terrible at cooking so you give me great meal ideas.
Great tips. I used to decorate cakes for extra money and did decorative paint, mostly shirts) as well. I ended up with severe tendonitis in my wrist and never regained full strength. My day job was Radiology. I’m 65 now and retired so I still bake a lot but do minimal decorating . I wish someone had given me a few tips way back when .
This was wonderful to watch. I'm an only child and have cooked & baked with my mom all my life (I was home schooled so even more time in the kitchen) We have lived on the same farm as my parents for the last 14 years, with my parents house just a few yards away. In July my parents made the decision to move over an hour away to their extremely remote off grid cabin. No more cooking, baking or even texting my best friend. We didn't get to enjoy our shared birthdays or Christmas together because they were completely snowed in. I miss my time in the kitchen with my mom sooo bad and I'm thankful for all the freezer meals we made together over the years. I'm not goingnto lie, I cried when your mom hugged you and said how much she enjoyed your day together. Thank you for sharing it with us.

I keep at least a lb of butter in the freezer when I buy butter. It grates easier. That way it's faster to refreeze for my pastries. It's a game changer for flaky biscuits too.

thanks for showing the shredder. my mother in law (with whom i live) was shredding potatoes the other day and said she wished she had a shredder. she has a kitchen aid, so i just went online and purchased the brand name version from kohls (saved $19 and got $10 kohls cash) and am having it shipped to her name. i hadn't thought of getting one for her KA. also, your mom is a complete natural with the videos. i like how, just like you, she explains things step by step, and makes it easy to understand.

You can also use your garlic for pasta aglio et olio. Chop it all very fine, put some chili flakes in it and fill it up in a jar with a lot of oliveoil. Then you can use ist for nearly every recipe. Pasta, meat or whatever. The „perfumed“ garlic oliveoil is also very good to roast vegetables, leftover pastas or rice or for barbecue marinades…..

Whenever I make a cheese sauce I make extra and freeze it. Then when I get a craving for Mac n cheese I can warm it in the microwave and pour over noodles. Also great when you have last minute guests to whip up something.
Becky, my parents make a sweet potato dish every year since the 1980s that you might love, since you also don't like sugary sweet potatoes. These are my favorite and are so simple. It's just super thinly sliced sweet potatoes with a mandoline, butter, shredded parmesan, salt and pepper. You layer it in thin layers of each until the pie plate or baking dish is full. Starting with butter and parmesan and ending with it as well and salt and pepper to your tastes. I can't remember the temperature the use, but it's probably around 350°. My whole family loves this. I haven't been able to find the original recipe online, but it pre-dates the internet. I hope like it.😊
I learned a quick "goop" recipe to keep cakes (or anything baked) from sticking: mix equal parts flour, oil, and shortening. Blend until the consistency of mayonnaise. Use a pastry brush (or a baggie) to wipe a thin layer on your pans. Nothing sticks.

For those needing to make a gluten free cake, King Arthur makes an amazing GF chocolate cake mix! I made it last week for my daughter's birthday. OMG! So moist, rich and chocolatey! My hubby even agreed it didn't taste like GF! Just thought I would share this in case anyone needs to cook for a GF family member. LOVE Bob's Red Mill brownie mix! Tip for GF cooking: even if the mix doesn't tell you to do it, let the batter rest for 10 minutes minimum. GF flours need extra time to absorb liquids. This will prevent the grainy texture you sometimes can get. TY ladies for taking such good care of your family members!💕
I saw a hack for parchment paper back in the day! You fold up a sheet like you would for making paper snowflakes. Then you can measure were to cut on the radius of the pan
Had to pause the video to comment because you just absolutely blew my mind at 6:40. I have the same oxo peeler and I love it, but I missed the pointed end on my previous peeler for cutting out eyes on potatoes. It never occured to me that the little scoop on top was for just that! I thought it was just decorative which seems ridiculous in retrospect 😂 You never know what you're doing to learn from acre homestead!
I miss cooking with my mom, she passed away suddenly three years ago, we would pour a glass of wine and cook up a storm and my dad would be sitting at the table with his wine and lovingly put his two cents worth in lol! He loved to sample everything we made and let me tell you, there wasn’t much he didn’t love! I’m now starting to cook with my little grandchildren, they love to help an I have extra to clean up but it’s worth it! Great job Becky and mom!

Ghirardelli box brownies are our favorite too! We upgrade it by using a stick of melted butter versus oil and we add pecans. Plus, we butter the pan first and shake some granulated sugar all around the pan before the mix is put in. We under bake the brownies a bit. Yummy!!!

I have a tip for the kitchen towel over the kitchen aid as well whilst making frosting, if you dampen the towel before putting it over the mixer it will make the sugar cloud stick to the towel instead of fluffing out when you remove it

Everything looks delicious! I have the same exact mandolin - LOVE IT! Tell your mom to tear small strips of parchment and put them just under the edge of the cake/brownie she is frosting. Then when done just pull them out and toss. Leaves a perfectly clean presentation, and oh so simple

I meant to comment a video or two ago about your cutting board. I noticed that it moves a lot while you are cutting. As a restaurant manager I always insist that people use something under the cutting board to prevent it from moving. In the restaurant I tell them to get a damp rag to put under the board. In my own home I have a "bubble plastic foam mat" (not sure what to call it). By preventing the board from moving you can work faster, get a more consistent end result and it helps to prevent getting cut as you work. Using a rag at home is a little in convenient which is why I moved to using the mat. I keep it in a drawer close to the knives and it can double as something to help open lids that are difficult on jars. I hope you find this useful.

I miss cooking with my mom, she passed away suddenly three years ago, we would pour a glass of wine and cook up a storm and my dad would be sitting at the table with his wine and lovingly put his two cents worth in lol! He loved to sample everything we made and let me tell you, there wasn’t much he didn’t love! I’m now starting to cook with my little grandchildren, they love to help an I have extra to clean up but it’s worth it! Great job Becky and mom!

Ghirardelli box brownies are our favorite too! We upgrade it by using a stick of melted butter versus oil and we add pecans. Plus, we butter the pan first and shake some granulated sugar all around the pan before the mix is put in. We under bake the brownies a bit. Yummy!!!
Been using ready cut liners for years. Also no u don't peel the squash, the skin holds it together and the skin goes very soft and edible

If u put a damp tea towel under the cutting board or bowl it will eliminate the wiggles & moving around.
I have a tip for the kitchen towel over the kitchen aid as well whilst making frosting, if you dampen the towel before putting it over the mixer it will make the sugar cloud stick to the towel instead of fluffing out when you remove it
We have every attachment for the Kitchen Aid and this one is a favorite!! The accessories are not that expensive if you use them a lot!!

Everything looks delicious! I have the same exact mandolin - LOVE IT! Tell your mom to tear small strips of parchment and put them just under the edge of the cake/brownie she is frosting. Then when done just pull them out and toss. Leaves a perfectly clean presentation, and oh so simple
The first time I did this was a ‘duh’ moment lol, makes such a difference. Waxed paper works too.

I meant to comment a video or two ago about your cutting board. I noticed that it moves a lot while you are cutting. As a restaurant manager I always insist that people use something under the cutting board to prevent it from moving. In the restaurant I tell them to get a damp rag to put under the board. In my own home I have a "bubble plastic foam mat" (not sure what to call it). By preventing the board from moving you can work faster, get a more consistent end result and it helps to prevent getting cut as you work. Using a rag at home is a little in convenient which is why I moved to using the mat. I keep it in a drawer close to the knives and it can double as something to help open lids that are difficult on jars.
