- I've noticed that dried mushrooms when rehydrated have a very meat like texture. Every time I mentioned that in other videos I immediately got comments to make jerky! When I asked if you wanted to see more mushrooms I knew I had to make this mushroom jerky and I am sooo glad I did!!
This is some of the best Jerky I've ever had... its meaty, chewy, smokey, sweet and spicy and the best part is that its texture is incredibly meaty!

HOLY HECK. I haven't had jerky in 10 years and it was one of my favorite meat things back in the day. I've got a ton of dried shiitake and I'm making this for Super Bowl Sunday! THANKS!

Alright, you've convinced me. Making my way over to my local Asian market to see if I can find some dehydrated Lion's Mane mushrooms. That meaty tear to the jerky is just mouth-watering.

Recipe
Ingredients:
Dried mushrooms amount not specified
1 cup coconut oil
1/4 cup soy sauce (he used low sodium)
3 tablespoons maple syrup
2 tablespoons water
1 tablespoon white miso paste
1 tablespoon mushroom seasoning
1 teaspoon ground black pepper
1 teaspoon liquid smoke
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon lactic acid (or another acid like lemon or lime)
Instructions:
cut mushroom to 1/4 inch
melt coconut oil
toss coconut oil and mushrooms in a bowl
tossing between each ingredient, add all remaining ingredients
place mushrooms in a frypan (he said saucepan but used a deep pan) and fill halfway with water
bring to a boil
place a lid on the saucepan and leave to simmer for 30 minutes, checking periodically to make sure water is left and adding water if needed
allow mushrooms to cool
place mushrooms on a dehydrator at 125 and leave for 2-6 hours (personal preference, check periodically to see if you like the texture)
for an oven place mushrooms on a baking sheet and in the oven on its lowest setting with the door cracked for about 6 hours (for his preferred texture, check periodically to see if you like the texture)

1:50 I totally agree! Plus, in my opinion it also changes the taste! Where I live, gathering and frying porcini mushrooms are very popular and honestly, this is a game-changing ingredient :D Some people dredge and fry them, others make pâtés out of them and they are a fabulous aromatic for cooking soups and beans, making burgers or Shepperd's pie! They have an incredible umami note.

I made these and they were awesome. I used the dried mushroom mix from Costco. Though I have to say, they tasted chewier and better then next day. If you make them try them same day but they are best when they sit for 24 hours or later the texture becomes perfect. Thanks so much!

I like Sumama vegan jerky from the Amazon. It tastes so great, with more texture.
I ❤️ mushrooms.... I prefer saddlebag jerky, very tough, so the oyster would be best for me.👍What's even more awesome about this is that mushrooms can be cheaper than beef so this is a win win. I have to try it.
I challenge you to make vegan calamari. Squid has the similar chewy texture of some jerkies, but it's more rubbery, kinda like mochi, and it also has a seafood taste/aroma, which you can probably replicate using kelp/kombu, seaweed/nori and algae. Maybe you can make a broth using these, then hydrate the mushrooms in it, dehydrate them a little, then batter them up and deep fry, but I'm interested to see if you have other ideas on how it might be done.
Regular oyster mushrooms (not king oyster) have a slight seafood taste. If you marinate them in a kombu broth they'll get even more fishy. You can then coat them with some flour/spice/panko mixture, oven bake them and make yourself an excellent vegan po'boy or fried calamari, etc. I didn't even think of dehydrating mine and they came out delicious. Texture was perfection.
I'm really excited to make this. If I end up liking it, I'll have something to send some friends and family who try to follow plant based lifestyle :)
Also tip for me personally I would mix those ingredients first and then toss the Mushrooms in them.

I used a bag of dried shiitake pieces and had some left over after rehydrating (too much to put on my oven trays) and I just sauteed them up in a nonstick pan and holy smokes were they delicious. They would be excellent in a stir fry, fried rice, or a pasta carbonara.

I've been getting Pan's mushroom jerky but the stuff is more expensive than gold. Picked up a lb of shiitake from the market today. If it works that $16 is going to be well worth it.
While cutting to dry I sautéed some sliced in butter and finished with soy sauce and maple syrup. Absolutely mind blowing. Very meaty flavors. Actually more meaty than meat itself. ❤
