3 - 4 dash Angostura bitters
About 20ml lime cordial (can substitute lime juice)
Top with lemonade (or lemon squash!)
Glass: schooner or large highball
Garnish: 2 lime wedges

At the bar I worked at in Brisbane (almost 20 years ago now), I was told to tilt the glass after you poured the bitters, so you literally coated half the glass and it slowly ran down the inside. Also we added the lime cordial after the lemonade, as it was heavier and sunk.
At that same bar, we had a secret staff drink called a Coke, Lime & Bitters, where you swapped the lemonade for coke, for the added caffeine hit.
You can get LLBs in Trinidad, when I was there they were marketed as the Australian drink (obviously with their bitters)

That sounds wonderful! Occasionally I'll have some ginger ale with a squeeze of lemon and a dash of some bitter - I have a wonderful grapefruit, rosemary, peppercorn bitter that goes beautifully in it.

Wow this looks so good. I've been enjoying a lot of rickeys and bucks this summer, and a dash of ango does so much to elevate them. This looks like the perfect nonalcoholic long drink for a hot day. Thanks Cara !
To anyone outside of Australia and Britain, make yourself an LLB on your next day off. You will enjoy it for its perfect blend of sweet, sharp, and bitter tastes. Lemonade is the true soda for use. Go Kirks or Solo if you want that extra lemon tartness.

Found myself in a pub near the English-Scottish border and ordered an LLB. The bartender only knew how to make it thanks to a Kiwi that had dropped in a few months prior and showed him.

I had never heard of this in Canada. I just made one, and it is delightful! I always crave a sweet/tart drink in the afternoon, and I've been trying to drink less mass-market soda. This is going in my regular rotation.

My personal favourite is to swap out lemonade with tonic water.
Never tried pub squash as a lemonade replacement. Imma try that next time
One of my first discoveries after moving to Australia. A nice go to if you’re not drinking or have to drive. Not a plain soda and a nice refreshing taste.
Yep, went overseas for the first time and tried to order a lemon lime and bitters. The waitress looked at me like I had two heads. I couldn’t really explain what bitters was back then, so I gave up and ordered a ginger ale. No where near as satisfying. I too prefer lemonade and lime juice in my LLB.
My beloved lemon and lime bitters…. 😌 our most cherished Aussie creation, right up there with Tim tams and meat pies me thinks 🤣 I love bitters so much, there are times when I have legitimately dashed some straight into my mouth 🤣🤣🤣
I've never even thought of the idea that this isn't a thing everywhere. It's the go to drink for a deso, and kids love it.
I will say though, very occasionally you will find a bartender will not serve this to children cause they just found out bitters has alcohol in it, and it is hilarious.
This is the way I've been taught to make LLB here in SA:
1. 2 lime pieces (and lemon if you're feeling extra special) slightly squashed in bottom of glass
2. Ice to fill glass
3. Lemonade (not squash) to top
4. Couple dashes of Ango bitters on top. Having the dashes on top has a beautiful layered effect where the drink starts off red and fades into a yellow, rather than being a solid colour. The drinker can choose to stir it or not.
I know, I was actually wondering if I would get any backlash from viewers in the States cause I think some can be a bit more concerned about that kind of thing than Aussie or UK parents haha. I do try and keep bitters out of some of our non alcs at Bomba in case people don’t drink for religious reasons cause I feel like that’s maybe a bit of a blurred line? But that’s for adults who can make their own decisions!
Not drinking any alcohol at all for religious reasons makes sense, but for the kids the ABV of this drink will be well under 0.5% which in the UK is considered “alcohol-free”! In fact the fancy Fentiman’s ginger beer in the UK probably has probably the same amount 😆
When I was working as a bartender in WA (ahem, late 70s early 80s), particularly in the country, you had the pony, glass and middy (5oz, 7oz, 10oz). The pony was a sod to pour beer into off a high pressure tap. Schooners didn't start to appear until the mid 80s, and pints fractionally later (driven by microbreweries, specifically the Matilda Bay Brewing Co).

To finish my shift i went with a ginger ale cranberry lime it was my refreshing rehydrating drink of choice

I was allowed these as a kid & felt so sophisticated! I was only allowed 2 😂 not sure that I was ever in danger of being intoxicated on Bitters lol.

Nice one thanks Cara . Talking of glass sizes ; I'm showing my age here , but the traditional sizes in a typical pub Victorian (Aus ) pub were: the Pot 10 oz ; the ''7'' 7oz ; ''6'' , 6 oz and ''Pony '' 5 oz . Hard work on the bar staff , but jee the good old draught used to slide down better! :)

I wonder if San Pellegrino Limonata could be used? I use their grapefruit for mixing a lot. Well, mixing is a generous term. I just chuck some gin or vodka into it and away I go. It is very good. Never thought about adding some bitters.

Didn't register that this could be considered a cocktail, I've never heard it called a LLB before though 🤣 When we're being 'healthy' at home, we sub the lemon for soda (and a splash of simple... Because... "Healthy" lol)

How do lemon squash / "lemonade" compare to what the us would call lemonade?
Is the US one usually cloudy? They’re both more soda-ish so very carbonated and a bit sweeter but the squash is maybe the closer of the two?

Sacrilege! Lemon Squash? Never … plain Lemonade please.
Step 1 run a ring of bitters around the inside of the glass. This gives a nice layered look to the drink.
Step 2 Lime Juice Cordial (Bickfords is best) .. not the pre-mixed Lime Juice.
Step 3 Lemonade
Step 4 (optional) shot of vodka 😁
The LLB is a great non-al alternative to beer if you’re the ‘skipper’.

Sort of, but those are both lemon-lime technically as opposed to just lemonade! And it’s a bit less sweet I would say, but Sprite is probably the closest.
@@BehindtheBar If they serve Coca cola products, they'd be using Sprite for LLBs, Every bar I've worked at uses Sprite. and @Frank yes, we call Sprite lemonade here in Australia. Traditional lemonade is pretty rare.

I mean it is a banger but it’s not as widely available I feel - we couldn’t do it at my bar for instance, whereas the LLB is pretty ubiquitous!
Not sure most americans (in the u.s.) are familiar with what a cordial is actually...

True! I think I do talk about them in here too, they’re usually made with fruit juice so just a really concentrated flavour but theres also lots of really artificial ones that are sort of a flavour unto themselves, like the lime haha.
