I love keeping myself busy with mixology stuff but also don't want to be drinking too much so these mocktail episodes are actually very exciting. I can't wait for the upcoming episodes.
Non alcoholic cocktails are such a second thought where I'm from and work. Its so depressing when mocktails are just juice and sugar. Glad there's videos coming out to support the sober drinkers. Nothing worse than everyone having nice drinks and that one person has a coke
I made an amazing mocktail for new years eve this year. 2oz over-extracted Earl Grey Tea 1/2oz Orgeat 1/2oz Lime Juice 1/2oz Ginger Beer It was very good. If I was to do it again, I'd maybe add an egg white, and use ginger beer like a seltzer for fizz-style cocktails (or half/half??). If I had these non-alcoholic bitters handy, I'd throw them on top for presentation and aroma.
I was sooooo excited when you showed that book. I went straight to google just to be disappointed that there's no way to get it to Spain. At least not under 100 euros. I usually do my cocktails non alcoholic. I have the originals with alcohol in my repertoire, and I drink them from time to time or serve them to friends, but normally I only do non alcoholic. Its easy if you aren´t looking to replicate exactly the original flavour, you can get really nice drinks. But if you have to imitate, I think the easier to do are vodka or gin cocktails, as vodka usually has no flavour, and gin has great non alcoholic options.
Thank you so much for doing this. I stumbled upon this video through my recommend - as a now lifetime sober person who loves DIY artisanal foods and beverages, I did miss seeing a cocktail being crafted for me, but now with this as a primer, and the book Zero, I feel like I can enjoy the craft again. 🍹
Great episode. To see if you like the idea of bitters alone, try adding some you already have to club soda. I have been adding regular bitters to club soda for about a year. Not all of them are great, but I found that a dash of Regan's orange bitters in a glass of club soda is a lot like Seedlip Garden, a non-alcoholic distilled "spirit." It's pretty good any time of day. Even if you're not going dry for January, adding bitters to club soda is a good way to cut out sugar and diet soda.
Try out some different peels like bitter orange (Citrus × aurantium L) or bergamot oranges and maybe potassium sorbate can help to extend the shelf life of the bitters. In general I wonder if it's possible to make alc.free gin at home using something like a steam juicer.
Hey Kevin. So glad that you have started exploring 0-proof world! Have you ever done extracts, bitters or other things with percolation method? It seems like it's pretty easy and fast way to make extracts. I think that with this method you can do better bitters, more flavorful than with sous vide. It may seem scary for some people, because the chemical stuff, some weird glass tubes, but it's really simple to use. I've been thinking about extracting with alcohol, then evaporate the alcohol. What do you think? You can evaporate it in sous vide in 80-90°C, but I don't know how long would it take.
You should be able to evaporate ethanol at around 76C - 80C to 90C would be boiling it off quite fast I would think. Probably best in a well ventilated area away from naked flame too! I need to look at the percolating method - sounds interesting!
Great content video Kevin, I love making craft cocktails at the Bar I work now, thank you for sharing your creative and innovative ideas, you should be hired at Drink Master as a Judge on this upcoming season 2
Another terrific video, Kevin! I imagine I've got no fewer than 12-15 different bitters. Only one or two of them are alcohol free, but a few of the brands out there make them. I've often thought of making my own bitters so this is great inspiration.
Many thanks for your video! Quick question, do you know of any bitters that resemble the taste of Cynar? we are looking for a non alcoholic substitute. Thanks!
Very nice, personally I'm a fan of old fashioned sodas myself, I even got a book about it called "Fix the Pumps" which has a lot of classic recipes from the time...back when a milk shake was ACTUALLY shaken in a Boston shaker and stuff like that, I've made a few and some recipes actually do call for bitters even for the non-alcoholic drinks to add a little extra flavor. I kinda wish there was a RUclips channel like this but for old fashioned soda fountain drinks...you'll find an occasional recipe done here and there but not a whole channel dedicated to stuff like egg flip drinks or milk shakes done in a Boston shaker and with either egg whites, egg yolks, or whole eggs in them...which to be honest I was dubious about as my stomach is not a fan of eggs by themselves..but I can use them in recipes and the texture of a shaken milkshake with a whole egg cracked into it a rather novel experience for someone in the modern age who's used to the kind of milkshakes from fast food places or ice cream shops. Also your mustache is nicely curled sir..I'm trying to grow mine out to do that but it's a chore to make sure both sides are the same length.
Fix the Pumps is a great book. The author of this book has an excellent RUclips channel that you might want to check it out. It's Art of Drink. Thank you for the mustache compliment. Glad you like it, and I am sure you'll find the best way to groom/trim yours. Cheers!
Is it not possible to make the bitters as normal, with alcohol. And when its done steeping just vaporice the alcohol off the liquid then? It was just a thought i had
Dear Kevin, I recently came across this and really wanna try to make these 0-proof things, however, cinchona bark is nowhere to be found where I live, is there any kind of barks/roots that can be used as a substitution for it?
Good morning Mister Kos, If the questions haven't been ask (I did look but did not found it) where did you found your copy of Zero? I have been reading quiete a lot of book on cocktails from liquid inteligence to dead rabbit book. Since my wife is not drinking a single drop of alcool is would be great to work on nice 0ABV cocktail for her.
Love the helpful alternatives given. I might have to try this for a party or so later this year. With all you're promising, and with what other channels like The Wee Pearl are putting out, high quality zero abv cocktails may soon be available to all.
I understand non-alcoholic "spirits", but I don't get non-alcoholic bitters. The amount used is so small that there is no need to remove the alcohol. I don't see people looking for non-alcoholic vanilla extract.
Thanks Kevin 😍🙈 I'm Muslim I can't drink cocktails 💔 so plzr more vds like this , more mocktails nd recipe homemade free Gin nd free vodka or whiskey or cocktails like Old Cuban with zero alcohol plzzzz 💔💔💔
This made me laugh... We are not using alcohol for extraction, but instead, we use glycerol. Which... yes, it is not ethanol, but chemically speaking is still an alcohol. 😂

I agree with you. I love adding different bitters to soda too. Subtle but nice fizzy drink.
This is great, and I’m really looking forward to more mocktail episodes (both ingredients and recipes). Cheers!
More to come! Cheers!
Would love to see you try out a non alcoholic amaro or vermouth for this series
Thank you for the idea. Cheers!
Zero percent series would be amazing! I've never thought about the possibility of alcohol-free bitters, amazing idea!

I am sure it's the best way to do it. Dary O'Neal from the Art of Drink RUclips channel is great with this technique.

Excellent use of ingredients here. I’ll have to try it myself.
Ive recently purchased three of the books from The Aviary. Those guys do incredible stuff but they have such great equipment to get it done.
They are incredible indeed. Great book!
Out of all the things that can be made without alcohol, I definitely wasn't thinking to bitters!
Looking forward to some mocks too :)
Right! I hope you will like other zero cocktails episodes too. Cheers!
@@KevinKos how can someone not like your vids?

Hi! I bought it on Amazon. I am not sure if it's still available. Maybe check out their official website.
Indeed, i only found it in us import.
Wife… it is lucky she us nice and that I love her…
The Master....🙏
Can u plz explain of alcohol switch in next video
Blue Curaçao can you make it?
Love to see more 0abv episodes.
For these suspensions I'd try a way to centrifuge filter them, but making that would be an ordeal by itself.
Yes, that would work. A centrifuge is an expensive tool to have and I hope I will buy it one day.
After a busy December, a break from alcohol would be welcomed.
Indeed! 🥂
Would you use the same proporions of ingredients while making regular aromatic bitters with alcohol?
Probably no. I would make it differently.
@@KevinKos Can i ask you about proportions which would you use?
Love it ❤ thank you 🎉
You’re welcome 😊
Finally, free alcohol bitter
Just saw HTDs Dry January vid and was left unsatisfied, Exited for this series!
Yeah that dude was NOT feelin’ it
How much abv would a mocktail have if you just use regular bitters
Not much, but still some.
Yas! Please do more alcohol free spirits and substitutions for those of us with a lot of pregnant friends 😂
Noted. Cheers!
Not for vegans but, the whole milk or the egg yolk, help to clarify the bitter? will dirty the bitter?
I wouldn't do this extra step for bitters because you might lose a lot of flavor.
I actually would appreciate a set if alcohol free episodes. Like on a regular basis. Once a month or so
Thank you for your feedback. Cheers!
great video kevin
Thank you!
Where did you get the book? 🙏🏻
I ordered it on Amazon. It was still available back then.
the stereo is the wrong way around. the sounds i see on the left are audible on the right
