I love softshell crab burger! I've eaten them from all around the world in different restaurants. Their price varies from $10-20 USD. I'd pay $14.50 for your burger given how its so nicely done! The buns are well grilled, the crab was fried just on point, the japanese mayo and the salad adding those incredible flavors, you don't see them too often in the restaurants! BTW the $20 softshell crab burger had gold bun so its kinda cheating: making it looks gorgeous but adding no value to favor!
In Virgnia we have access to soft shell crabs for about 5 months out of the year, fried soft shell crab sandwiches go for around 10- 12$ without the elaborate garnish, assuming theres like fries and a drink in the right part of town you're looking at something around 18-19$ good on you man!

(the batter was soggy just cheap mayo and a multipack soft bun) they were trying to sell for £9.. i ended up going with the vietnamese beef stew served with rice it was £5 the most amazing thing and i couldn't even eat it all... really got to be careful if you go to food fairs and things.. would love to try your version of the crab burger!
Where I live (California), high end seafood burgers are minimum 14 dollars. When I used to go to umami burgers, they sold raw tuna burgers and it was delicious. That was 18 dollars with no fries. But for me, it was my favorite so I always ordered it and didn't care about price. I'd say this burger would easily profit at 18 dollars.
Had fresh off the boat soft shell crabs in Carolina, was one nice thing about living there. This would be great with fresh cooked, lightly salted American potato chips(UK crisps?) Have had a similar sandwich with a remoulade instead of salsa and iceberg instead of baby gem lettuce, and happily paid $12.50US.

The Mangos we have here go reddish yellow as they ripen. But the UK is pretty far away from mango growing areas, so maybe the refridgeration has something to do with it. Or maybe it's a different kind of mango.

I feel like you should tell all the tasters to be very honest. I think a lot of the people you ask are being polite because you cooked the food and they're eating for free (of course, I don't doubt the deliciousness of your food!). It would bring more authenticity to your show. Anyway, the burgers looked amazing.
