Whoo! Great to hear a shout for WSU. My wife and I came over to Washington State from the UK to do postdocs in the Dept of Biochemistry and Biophysics from 1980 to 1982. We had a great time there, and can correctly pronounce Coeur D'Alene and Spokane!
Well you did finally get to Centennial. Since it is the only hop used in Bell's Two Hearted IPA, and that has been voted the best IPA a couple of years in a row, I would have put it higher on the list. I loved Citra when it first came out and don't use it enough to pick up on the changes you noticed but I have been disappointed last few times I used it and your observations would explain that. Good show!
I brew mostly with European hops (being in Europe and all) but recently I decided to give Citra a go. Just the price tag on it here is discouraging (other US imported hops are sold for half the price). My point is, If I want to make a good hoppy Citra IPA, I'd be paying more for the hops alone than all other ingredients combined. And this is without dry hopping. Thankfully a lot of the other US hops are commercially grown throughout Europe with great success and are available for fraction of the price of imported ones. On a side note, one of my most favorite hops is Mandarina Bavaria (close to Columbus). Very aromatic, high AA, good for bittering, aroma and exceptional for dry hopping.
Dollar for dollar I would agree. Azacca, centennial, Cascade, and El Dorado are all dollar per pound better. Price aside, no way, citra destroys them all. A good way to get around it and save some cash is to use something like Cascade or centennial in the late boil or whirlpool additions and save the citra for dry hops only. The more I switch to cheaper hops at higher temps the more I realize I wasted a lot of coin in the past. Save the citra for the fermenter.
Citra is still a great hop - we're just trying to push people to use a variety rather than always falling into the same hop that everyone else uses. :)
a few of the hops your mentioned are actually on sale at my home brew supplier here in brisbane. 500 grams for $25. think ill be placing an order after seeing this. and experimenting with them. Thx guys.
Amarillo / Simcoe / Chinook ( can be relatively juicy ) / Comet / and a lot of AUS/NZ hops like Topaz, Ella, Enigma, Rakau, Riwaka, etc. I like El Dorado / Azacca / Denali as well BUT: you can get lots of great flavours mixing the right ( cheaper ) hops: German grown Brewers Gold and Comet are pure grapefruit juice and rind when used together. Hallertau Blanc and Mandarina Bavaria together are great.
Well I brewed the Citra SMaSH. Smelled great going in to the fermenter. According to my calcs my efficiency was close to 82%! I’ll be dry hopping in another week and a half or so. Messed up my hop additions, however. Did a 90 minute boil but added the hops as if it was a 60 minute boil. Should I expect more bitterness or will it be okay?
pardon the odd comment, however, just gotta say at 1:50 I had to put on subtitles for a sec because I thought you said ¨ran by us¨ instead of the actual statement (right by us) and was confused on why a brewing channel was trying to falsely claim to run Yakima Valley lol
Really enjoyed your perspective on this. Brewing seems to run in trends and fads. Sometimes you need to step back and re-evaluate things. Columbus, Centennial : reaching way back (and I agree). El Dorado rocks as well. True confession - I do use Citra quite often too.
Can't say I agree with the Citra bashing..it's an excellent hop combined or alone. I do agree however that there are other varieties as good that bring similar and different flavors and aromas to the party. I suppose this criticism was bound to happen as it often does when a hop gets "overused", however there is a reason it was and perhaps still is: it's a great hop that was key in many ways to bringing people to the IPA world. Personally, I love combining Citra with Amarillo, Galaxy and El Dorado. You can't go wrong, but most of the hops you mention work well in this combo too. Hey..variety is the spice of life. Cheers to the hop breeders and growers for bringing us their finest!!
GREAT VIDEO GUYS!!!!! I saw some Cascade hops that have an Alpha-Beta percentage a few tenths apart. They're the hops to use because they're balanced. Usually, fruit flavor, earth, cat urine, pine, etc. are signs of a failure that occurs during fermentation caused by chemically imbalanced wort. The flavors change and vary in strength according to the chemical imbalances in the wort. The infusion method is responsible for the chemical imbalances and the off flavors associated with homebrew.
Have you guys ever experimented with the Minnesota Tropica hops? Was thinking about giving them a try but can't find alot of actual experiential information on them.
@@GenusBrewing Cool, Yea i just read that somewhere. Recently I picked up mosaic to try as a tea. It seemed to just made me tired. Also, near stopped digestion for a day. I don't think i'll be stepping it up tbh. I like my guts working properly ... lol
microbrew was interesting in the 80's and early 90's. now finding a pony bottle of MHL makes my day. When people started chugging cat pee beer, i figured there were too many chefs in the kitchen.
Aside from yearly weather pattern changes, the development of the hop breed has a lot to do with what all is grown around it and how the flowers are pollinated. I can't get too deep forcuz I don't know enough about hop science to - but it has definitely evolved as a varietal.
I enjoyed your hops review compairing against Citra; however, one of my favorites using Citra is Tocobaga by Cigar City Brewing, a Red IPA, so good. My other favorites that incorporate some of the hops mentioned are Cigar City Jai-Alai, Stone IPA, Bear Republic Racer 5, Bell's Two-Hearted (Centennial) and Ballast Point's Sculpin IPA. I only drink IPA's with an occasional North Coast Old Rasputin and Orkney's Skull Splitter. Always enjoy brewing content. Thanks for your video.
I have tasted Citra hopped beers that are in short, mediocre but then again, plenty of other hops of which the same criticism can be leveled. It is the brewers art that ultimately decrees the quality (or lack of it) of the beer. In saying that, when a 100% Citra ale is brewed well, I find it my go to option. Now, I appreciate that many reading this will be from the US and I have to add that by far the best way to enjoy Citra and many of the high alpha hops is in cask conditioned form. I have never enjoyed a keg product nearly as much as I enjoy cask with US style hops.
Hop evolution has a lot to do with year to year weather variation, but even more so has to do with how it is pollinated. It's pretty complicated, but how and where all the hops are raised can make a huge difference in what is produced.
