What I Eat in a Day #7 // Healthy Vegan Microwave Cake Recipe

  • Hey friends!
    That voiceover thing I tried in the last video didn't work out quite how I would have liked it, so we're back to background music for the time being, but I promise I'll try to sort that out because I do prefer that format ^.^
    For now, enjoy this day of healthy vegan eating!
    00:05 BREAKFAST
    Chocolate Cake:
    » 1 cup of oats
    » 1 banana
    » 1 cup of plant milk
    » 1 tbsp chia or flax seeds
    » 1 tsp cinnamon
    » 1 tbsp cacao powder
    (» maple syrup if you don't like the bittersweet taste of cacao)
    Strawberry Tofu Frosting:
    » 1/3 block of tofu (silken would probably taste best, but all types work)
    » 1/2 cup of fresh or frozen strawberries
    » a dash of coconut milk for blending
    01:06 LUNCH
    » 100g falafel mix (this is just chickpea flour, chickpea meal, cumin, parsley, garlic powder, coriander and ground pepper)
    » 4 tbsp water
    Mix the spiced chickpea flour with water until it thickens, and either bake or cook in a nonstick pan on medium heat until it is crispy
    » 1 large sweet potato, boiled and mashed with some pepper
    » 1 red pepper, sliced
    » 1/4 cucumber, sliced
    » 1 cup of romain lettuce
    MUSTARD TAHINI DRESSING:
    » 1 tbsp tahini
    » 1 tsp mustard
    » 1 tsp maple syrup (or agave/rice malt syrup)
    Mix tahini, mustard and sweetener together, and enjoy!
    02:54 DINNER
    » 1 cup of purple or red cabbage, chopped
    » 1 red bell pepper, cubed
    » 1 zucchini, sliced
    » 1 cup of carrots, sliced
    Cook vegetables on high heat until they are cooked through and slightly crispy (you can also add some crushed garlic and ginger if you aren't lazy like me)
    » 1 cup of cooked brown rice (or rice of your choice)
    **Note: this fried rice is mainly veggies, so not too traditional (also, I ate all of it, even though I only put about half on the plate for the pretty shot
    » 1 tbsp soy sauce, tamari, coconut aminos, or fried rice sauce if you have that
    Top with sriracha if you want, and enjoy!
