    OK you have checked so many boxes for me both as a woman of color, a homesteader, and as someone who is gluten-free. All those symptoms you mentioned are so true, it can manifest in so many different ways. I was having severe brain fog, pain in my lady bits -- and I'm talking to severe pain for years that my doctors were telling me I would have to live with forever - - it turns out all of these symptoms in addition to stomach and G.I. issues were literally being caused by gluten. I swear the wheat industry doesn't want us to talk about these things with other people so they make us look crazy by making fun of us. Thank you for speaking the truth. And for sharing your experience with sourdough. I cannot wait to try it.

    I've been baking sourdough bread for 4 years now. I use Bake with Jack's no discard, scrapings method, which is at a 100% hydration, aka: a stiff starter. To be technically correct, a 100% hydration starter is equal parts of water and flour by WEIGHT, NOT by volume. So, technically what you discovered is actually a 100% hydration starter. Just thought you'd like to know 😉🙂!

    I have starters born on 11/20/20, brown rice, lupin, almond, oat and several gluten. I leave my starter in the refrigerator and sometimes don’t feed it for months and so far it has come back to a vigorous rise. One thing you can do, which I have in storage is spread some of your starter out very thin on parchment paper and cover with another sheet of parchment paper and let it dry ( dehydrate) crumble it and store in a vacuum sealed jar, you can rehydrate this with water and after a few feedings you will have a vigorous starter. I also have some in a jar frozen, you just take it out of the freezer, let it thaw and start to feed again..These both work great. As you can see, I love baking sourdough breads and never want to have to start a starter again. I am on Keto, so my Lupin and Almond starter is used a lot for my bread. Happy sourdough baking all….😊 Great video by the way! I wish I saw this when I first started…

      It’s amazing how they can come back to life even after neglecting them for months! I dehydrate mine on cookie sheets left out to dry and it comes back to life every time. Love that you found how to make it work for you 😀

    Thanks for the starter recipe. I'm starting a brown rice and a buckwheat today. (Locally sourced even. Look at me being green!)
    Listening to you talk about the books and especially the farmers almanac you enjoy so. I remembered about a magazine my folks use to get when I was a kid.
    MOTHER EARTH NEWS.
    If you can get your hands on some old copies I think you will love them. Yes some of the info will be dated, naturally but, a lot of it is forgotten information and it is amazing!
    My parents weren't hippies or anything but, we did lived in a very remote part of Alaska. We had a plane come out once a month to bring mail, newspapers, supplies, etc. That night I would sit on my dads lap and talk about what was in this months issue. Recipes, solar and wind powered generators, gardening tips and tricks, advise on poultry and livestock, etc.
    My dad was into trying things out, experimenting, and building things. We inacted so many projects out of those magazines over the years. The thing that sticks out is, I don't remember 1 going wrong as long as we followed the instructions.
    We won't say much about the canoe my brother and I made. Let's just say, they need to be dug out equally on both sides. Aaaaaand water in Alaska is ½ a bubble of an ice cube. Lol

    I am sure you will enjoy them.

    Excellent video: I get the almanac most years. I think it helps since I am a gardener. I have been gluten fr for over a year since I am very sensitive. I can't even touch the stuff.

    I enjoyed your video. I like that there wasn’t any discharge of the starter. Now that I have the knowledge to make the gluten free starter, I need a recipe w/o the junk.

      thank you! thats right, i only discard if its not active enough after many feedings or if i dont bake with it right away as it can get a bit too sour. I have a video with the bred recipe on my channel.

    I'm new to your chanel and I LOVE IT!!! I love the almanacs too! They are priceless gems lost to "modern" ideas. Modern doesn't mean better! I love your approach to doing it all at home, I do the same thing! I make my own ferments, tinctures etc! Just subscribed!

    Thanks for the tips. However, baker's percentages are based on weight, not volume. So 2 tsp - 1 tsp is not 50% hydration. In fact, using wheat flour, equal volumes of flour to water is 166% hydration. So a 2 to 1 mix of flour to water is 83% hydration. Rice flour is lighter than wheat so the hydration level is even higher. Typically I adjust my bread recipe to make up for the hydration level of the starter. Thanks for the GF starter recipe. My wife has Celiac so it will come in handy.

    Hi Salisha, this is my first time watching one of your videos. I enjoyed it. I didn't know that gluten free sourdough bread was possible. Perhaps that's just because I don't have a gluten allergy. But I will get a starter going and try it so that I can provide it for people who are intolerant to gluten. Also about your flowers if you are shooting for becoming more self sufficient, I would suggest planting edible varieties. And plant your own herbs. Most of them bloom into amazing little flowers that attract lots of pollinators. I'm subscribing to your channel. God bless you, keep the good videos coming.

      Feed it and put it in your fridge until you need to use it again. When you are ready to use it again feed it every day until its bubbly and ready again. Hope that helps!

    Thank you for posting a very simple and easy to follow GF starter! Quick question; is there a point when you no longer have to feed the starter and simply keep it in the fridge? Wondering about long term continuation of the starter. 😊

      Yes, just keep it in the fridge, It'll be fine, but it will need a few large feedings before you use it next. :)

    I’m trying a sourdough starter using (1/3 Sour Manioc, 1/3 Oat, 1/3 Coconut flours). Placed 6 grapes in it for 4 days, then removed grapes, and added two pieces of pineapple. Its now day 6…no bubbles, but smells reasonably sour with a hint of sweet pineapple. NOTE: I used RO water which has no minerals. So I added a pinch of sea salt on day 3. Let’s see if/when it bubbles !!

      Hmm id try some rice flour and/or buckwheat flour. Those contain natural sugars which feeds the yeast. Also dont add salt, actually yeast needs sugars to grow. Try discarding half the batch and give it double feedings every day until its bubbly. Let me know how it goes.

      @@HillsideHomesteading Has bubbles now, but even after a few days of feeding and fermenting to bubbles, it does not rise any in the jar. Not ready for bread?, or should I just add 1/2 the yeast in recipe to offset it. Now I’m wondering if the part Sour Manioc flour I used has some negating factor on the starter colony, as its a fermented flour itself, and perhaps it would do better in a sealed container..ie aerobic vs anaerobic..Dam, I went scientific already. 😮

    I make regular sourdough right now.
    Is it the same when you’re going to make the levain for the bread- ex if I need 300g of starter I’ll dk 30g of inactive starter 150g flour 150gish water would that work ?

      I don’t discard unless I don’t see it getting active. Yes you want roughly the same amount of water to flor but you may need more water if it’s too stiff

    I have a recommendation for you on your videos. This is critic not criticism.
    Do a full video on how glutten effects the body, pro's/con's, celiacs disease. . .the whole schpeal. Then at the beginning of all your videos, take 5-10 seconds to show and mention a link.
    If you care to read further, I'll explain.
    My Dr. called me the day before Thanksgiving to tell me I have celiacs. (I believe there has to be a special spot in hell for that guy.) Since then, I have watched soooo many videos. Im pretty sure i have an hour or two of people reiterating this same information. The bread could be half way to the oven in that amount of time!
    Thank you for the starter recipe.
    I am morning the starter I was using before. It was started almost 80 years ago by my great granny. I have been feeding it heavy for a week. Saturday I split it up into 2 dozen starters and started giving it to people on the condition they share it. I want it to live forever, even if I dont get to eat it any more.
