Taking so much of your time to test and develop these recipes and share them with your viewers is amazing.     I started mine with 50/50 buckwheat and sweet white rice flour, but I found that it created an almost rye like flavor that my kids didn’t like when I made bread. So I switched to a 50/50 mix of brown rice flour and arrowroot flour. I have found that a 50 split of any type of whole and starch flours will work great. The brown rice and arrowroot mix is a great pick for milder flavored goods that are more palatable to kids and people transitioning to sourdough from regular bread.

    I’ve recently discovered you. Your chilled out vibe and deep knowledge of life from scratch has been a gift. I am soaking up everything you say and bought myself some brown rice flour to try to replicate your video and here I wake up to this gf video!! Keep being you. My kids are 15 and 17, I’m a classroom teacher and homeschooling IS equal but different. I’ve tried both. Looking forward to seeing how you and Luke handle your adventures in years to come. 💖

    Oh, my mum will be so happy about this one. She kept asking me to find her some info about GLUTEN free starter ❤️ I would also love to make some videos about sourdough bit with the quarantine I suddenly have kids at home full time... And I'm not as well organised as Lisa! 😆

    I've been working with gluten free sourdough starter for years. Brown rice flour works like a dream, but due to a recently diagnosed food allergy to rice, I now use a combination of buckwheat, sorghum, and millet flours with good success.

      @@kathym2563 I'm not good at exact measurements, but I use about 2 parts buckwheat and 1 part sorghum or millet when I feed my starter. I haven't experimented with Lisa's sourdough recipes (yet!!!) but I have my own gf English muffin recipe. My email address is admin@ahousewifewrites.com. I'll send it to you!

    Thank you for the sourdough starter recipe. I had to go GF back in 2015, cardiologists decided the gluten was most likely cause of my rapid heart rates, which I must say my stomach felt so much bettwr after going GF. Then 2022, had my Gallbladder removed as it decided to stop working. Dr recommended that Ibtry to slowly start eating gluten to see if I could. I did and did great, or so I thought!! At firat I didnt notice anything, but after few months the bathroom issues I had before and right after sugery never cleared up, started hurting on right side upper abdomin area. Few test later, learned my liver is enlarged. I had this issue once before, then after going gf it cleared up. So I know I needed to go back gf and my bathroom issues disappeaed aftwe going back gf, waiting on follow upnimaging in few months for the liver results.
    I hate most storebought gluten free breads but most of all hate the price and al the preservatives and additives as I am allergic to the preservatives. Hoping this recipe will help me successfully bake some nice gf breads. Plus I want the benefits of using the sourdough.

    When I didnt have a starter and I still wanted to try your recipes I just mixed flour with my milk kefir covered with a tea towel and used it the next day like my "sourdough starter" and it worked well.
    However, I now have developed a healthy all purpose flour and water starter. I keep it small like 1 cup. Because I like to keep it in the counter for pancakes, sourdough pizza crust, waffles and flatbreads.
    ... But there are days when I want to do something larger and I need more sourdough starter so I just mix flour and milk kefir.
    The good thing is now we are in Spring so the house is warmer. That helps a lot when I want to make lots of pizza...so if I prepare same day sourdough starter with kefir it does develop bubbles by 6-8 hrs!

    I'm so glad to see you delving into the world of gf sourdough! I tried for a long period of time to do gluten sourdough, but it lowered my thyroid so now I have a thriving gf starter that I usually feed brown rice flour but sometimes other gf flours I have laying around. It is pretty hardy and easy 👍💜

    Just wanted to throw in that I’ve also had great luck with millet flour too! I did a mix of brown rice flour, buckwheat flour, and millet flour to get a great texture and flavor (the best of each one) and it worked great!

    Is there a baking recipe for this once your starter is ready to make bread? Trying to figure out a buckwheat sourdough recipe without like 5 different flours, gums, and other additives. Love how simple this starter is!

    FYI: The sourdough skillet recipe on this channel works beautifully with GF sourdough starter! I always use brown rice flour for my starter, so I can't say 100% it will work for buckwheat, but it's a good one to try.

    I found what you said about sourdough not bothering some tummys to be true. My daughter who is gluten sensitive (not celiac) can handle regular sourdough. So appreciate that knowledge and will not be trying this. lol!!! ;);)

    Thank you so much for doing this! I am celiac and as I've mastered making muffins I haven't done well with bread. I've been wanting to delve into gluten free sourdough for a while now. I'm anxious to try it with oat flour. We just grind up oats and use it for everything. Seems to do better than most gluten free flours and tastes so good.

    I love using brown rice flour for my starter. Works really well. I’m still experimenting with different sourdough recipes using my gluten free starter and have loved making biscuits, English muffins and cornbread with it. I’m not a big fan of gluten free loaf bread as I haven’t found one that has a texture I like. Looking forward to seeing the recipe you come up with for loaf bread.

    Thank you for doing this! I have to have GF. And with my food allergies it has to be simply, very few ingredients, making the premixed bread flours a big no. Most of the premixed flours also have tapioca flour which I also can't tolerate. This is exactly what I was looking for. I hope in the future you do a PDF on your GF recipes so I can purchase to have on hand when needed.

    I grind brown rice for my sourdough starter and grind my own blend for gluten free flour. I pretty much stick to your recipes, but if it's too thin I'll add about a quarter of a cup of coconut flour to thicken it up, since it's not a grain and doesn't have to soak.

    I've never tried buckwheat before and those pancakes look amazing. You've got me so hooked on sourdough Lisa. I've been using Spelt flour and that's been great. I even took some over to the UK when I visited earlier this year. I have just turned to normal wheat flour as we just have to buy what we can right now as we are only allowed to go to our nearest supermarket (I live in Spain). I'm loving wheat flour too as it does come out a lot lighter. I've also got some gluten free flours so will definitely give this a go. I bet pancakes made from rice flour sourdough would be quite nice. Thanks for sharing this. I can't wait to see how the bread turns out. Stay safe x

    Lisa, thank you for doing this video! I have tried twice to make standard sourdough starter without success. Both times it started to bubble but then stalled out and never quite doubled in size. Do you think your starters do so well because you have other fermented items in close proximity in your kitchen? The one time mine started to really take off, I was fermenting veggies. Once I put my ferment in the fridge, my starter stalled out and never really regained vigor. I ended up throwing it out after 2-3 weeks because I was fed up with it. I’ve read some people recommend against cross contamination of sourdough starter to other ferments. What is your opinion on that?

    I have a question! I have celiacs so I’ve been researching this, but don’t think I’ve clearly found an answer... how do you increase the starter? When feeding it after the 10 day period do you not take out as much but still only add a quarter cup? That is if you’re not using it everyday. Also is it however much you take out is how much you feed it? I’m confused on this part and would really appreciate some help!

    Simple reminder that rice flour is blended up/grounded up rice, almond flour is almonds in a blender (but before it turns to almond butter), oat flour is oats in the blender.

    So excited that you are paving the way for us with this gf sourdough starter. Getting my buckwheat flour and planning to start cultivating. Did you read anything about adding other ferments to help boost and activate the starter? I make water kefir, so I wasn’t sure if adding some of that would be a good idea or not.

    Yay! I’m currently on day 6 of my gf sourdough starter! I was listening to your podcasts and then this popped up! I’m so excited. Just a quick question! Did you find that your starter rose and fell after feeding it? Mine isn’t, and it’s only really bubbling when I feed it...any advice would help from anyone! Thank you!!

      I've been using a buckwheat, maize and quinoa mix(sometimes subbing in gram, rice or sorghum) and mine doubles in size and falls. However, I think this is because it's more mature and has developed in strength. Hope this helps.

      Bridget Harney yes thank you very much for your reply! It was funny the next day after I wrote this my starter completely took off and doubled then rose and fell! I think I needed to increase the feeding to really get it going and give it a bit more time to mature!

    I love how simple and easy this recipe is to follow - I’m in the Uk and finding it difficult to get hold of buckwheat flour that doesn’t cost the earth!!! So I used doves farm plain gluten free flour - which is a blend of buckwheat, rice, potato, maize and tapioca flour - and it worked perfectly! I made a nice loaf of gluten free sourdough bread - it didn’t rise very much but I think that’s maybe because my starter wasn’t mature enough as I used it on day 7 - if you have some tips on how to maintain and look after sourdough starter once it’s in the fridge that would be great! Thank you! 😍

      pull out your starter 24 hours before you plan on using it & feed it! then put it in a warm place

    Make sure that the GF flour blend that you use for making GF bread has xanthan gum in it! The xanthan gum will help give structure to the bread, since the GF flours contain no gluten that wheat flours contain!
    If the flour blend you use does not have xanthan gum in it, you can buy this ingredient to add to your flour blends!

    Sprout buckwheat groats. Blend to a mash. Sit overnight , and don’t blow up the jar😄. Add other flours to feed.

    Is your buckwheat flour sifted? My buckwheat is waaaaay darker and has a very distinctive taste.

      Lori Palczewski I agree, mine was way darker with only buckwheat and the flavor is super earthy and heavier! I had great luck mixing buckwheat with millet and brown rice flours to lighten it up!

    Thank you for the GF starter. I have white & dark rice flour. How do you use the discard in pancakes? I would definitely try the pancakes while the starter is doing it’s thing 👍🤗😘♥️🙋‍♀️🇨🇦♥️

    Lisa I love your video's, a quick question have you ever tried to do a sourdough starter with Flax flour? My hubby is a diabetic and i need a flour to bake bread etc for him with.

      I haven't. I have regular starter, a potato flake starter and a gluten free starter on my blog FarmhouseonBoone.

    Wow thanks for the detailed explanation. Which do you prefer? Wheat or gluten free which one is better. Am planning on starting a sourdough starter but now am not sure if I should go with the gluten free or whole wheat.

      i really do like both! no one in our family has gluten allergies, so I'll probably just stick w my normal starter. but the gluten free really is a good option

    I’ve had great results with brown rice and white rice flour. I’ve used the all in one or all purpose gluten free in several brands and those never turned out right. They spoiled and wouldn’t turn into a starter. Just a bit more info.

    To increase your amount of starter when its established, do you just leave it out and keep feeding it equal amounts? Also should it be pancake batter consistency? Mine is looking thick

    Can I use your whole wheat sourdough bread recipe with regular all purpose flour? I can’t find whole wheat flour these days and am even lucky to find the white. If I can’t substitute, what modifications should I make? That would be a great video! I’ve attenoted several sourdough bread recipes and none of them are very good...dense, too sour, too flat, too time-consuming. Yours sounds great but I just can’t find whole wheat flour.
