Thats because his audience are casual cooks and people who don't cook. Why would he make videos about fine dining. Most of the stuff that he makes at his restaurants, you won't be able to recreate at home or most people won't have the time or money to do it

When you have a tasting menu of like 8 different courses (sometimes a lot more) you dont want to have huge portions. Small is quite okay. You want to be able to finish the meal, and if you have huge portions, you'll be full by the 3rd one.

The geese are all fed by hand and are way to valuable to be fed and raised for 120 dats to just jave them die. They do huge tasting menus instead of one dish. So you usually end up paying somewhere around $150-300 per person, depending on the restaurant. Believe me, you will be more than full. You probably won't even finish all the courses.
