    For me, homemade bread rolls always had something of an incredible amount of effort with a moderately satisfactory result. Fresh for breakfast, they were only an option anyway, if you either get up with the early bird or are hungry for 2-3 hours waiting for the first meal of the day. These quick rolls are light and fluffy on the inside and crunchy on the outside.
    And they taste like they came from the bakery - without anyone having to get up at two o'clock! In addition, it seemed impossible to get the slight fluffiness with the crispy crust of the baker's rolls.

    When I came across the revolutionary fridge dough method, it changed my life. No joke. The simple and uncomplicated dough conjured up excellent breakfast rolls. And in 35 minutes they are freshly scented on the breakfast table.
    But what is the secret?
    Can you leave bun dough overnight? Not only can you use this recipe, you should. The dough is mixed with a fork in the evening without kneading and then rests overnight. And everyone can do that. Then, as you indulge in your dreams, the batter triples in size and develops its aroma.
    When you wake up, the dough is ready too.
    And with just a few simple steps, you can now conjure up quick rolls on the table, which you will look at with a mixture of pride and disbelief.
    By the way, if someone wants to tell you that only kneaded dough is good dough, then that is a misunderstanding.
    Because what makes bread rolls fluffy? The air that remains “trapped” in small bubbles in the dough. And the long overnight rest does exactly what kneading usually does. As a result, long gluten compounds are formed, which give the dough its hold and smoothness, so that the air bubbles can be trapped very effectively.
    Of course, this also means that this method only works if there is enough gluten in the flour - this is the case with wheat and spelled flour (try making crispy spelled buns overnight with this recipe). With other flours and also with wholemeal flour, the result can be improved by adding a little gluten (wheat gluten). So you can also bake wholemeal rolls overnight. And the best thing about this fridge dough for quick rolls?
    The best thing about this dough is its versatility.
    You can keep it in the fridge for up to two weeks! And you can do a lot more with it than just bake quick rolls without kneading. With the fridge dough you also have the option of implementing one of the following options:
    pizza crust
    Bread
    breadsticks
    Tarte
    Sausages in a dressing gown
    Ingredients
    500g flour
    1 packet (about 2 1/4 tsp) dry baking yeast
    1 1/2 teaspoons salt
    360ml water
    extra flour for dusting
    approx. 250 ml water for baking or approx. 5 ice cubes

    Schönes Rezept und super leckere Brötchen. Wenn die Brötchen vor dem backen noch etwas "gefaltet" (stretch and fold technik) werden, werden sie etwas höher, ist aber mit dem klebrigen Teig nicht ganz leicht.
