This is the only recipe and video I view now when making albondigas. It always comes out perfect. But I always add the zucchini in the last 10 mins of cooking since I like them less cooked. I had a version where the meatballs had been roasted and then added towards the end of the soup being fully cooked along with the juices and it was fantastic!
My old BFs mother use to cook a huge cauldron of this. She'd add onions in the pot too. A sprig of fresh cilantro after plating. She offered lime juice and heated tortillas. My bf scooped with them after drinking the liquid. Reminds me of eating fajitas. Lol. He was born in the Solare/ mid way between downtown TJ and the Playas up on the hill. If you have ever been to TJ. This was so long ago that Otay border crossing was a trickle. I'd drive up another hill to bypass sitting for hours to go a longer way but way faster. Then it was at most 5 min but usually just slow down and you were waved through if you drove a regular vehicle. Well for the most part. Lol. I dated a guy before him that owned 2 car dealerships there. Boy oh boy.. even adults are mommy whipped.. She didn't like a Guadita dating her son. Lol. We stayed friends though . Mainly because we helped each other in business. I worked in Auto auctions in California.

I’m making abondigas soup today my boy’s asked for it , I use mint in my soup but I blend it I also use turkey ground beef it’s more moist it’s not dry like beef also I use consume de chicken.
Mmm i love caldo but my family hates that i make it often lol im from the coachella valley and it gets to be 120 out here, and you know when you make caldo, thats all were eating for the next 3 days for breakfast lunch and dinner 😂

I researched recipes and found so many different ways to make it I was confused. Then while visiting Phoenix a popular restaurant had it on the menu. I finally got to taste their version. I loved it. I tried copying it and have been making it since. Lol I have tried a few other recipes, as well as trying other restaurants. The one I make has no chilis and has mint instead of cilantro. Lol plus after awhile I started buying frozen mini meatballs instead of making my own. But now I want to try your recipe and see how we like it. Thanks!

Another question not related to this really..but when you roast peppers …can you do them a day before? A lot of recipes call for the charred peppers..they take me too much time and I get flustered

I need to find Mexican squash to try in soup. I love soup but always assumed squash in soup would be mushy. Ewww! I’m guessing Mexican squash has a firmer texture? Correct??
@@jenjoy3215 At 5:45 both the Mexican squash (aka calabacita) and zucchini are mentioned. They taste the same, they cook the same and they cost the same. The only difference is the zucchini we usually see in US stores are about an inch longer and darker skin. It's like yellow squash tastes and cooks the same except they're yellow and have a weird shape. Yes, they'd all be exchangeable in the soup and they'll get mushy if they cook a while. During the lockdowns, zucchini was hard to get so your grocery order may have substituted calabacitas and the stores hoped customers would just think they got short zucchinis. However, if using chayote, as someone posted, it won't be as mushy and will be sweeter. A raw chayote is hard like an apple and is sort of pear shaped. Cut the seed part out and peel it if the skin seems too tough. It can be used raw but usually, I slice it, saute it with cinnamon and sugar and serve it with pork chops. Its cooked texture is much like apples and tastes almost like sauted apples but with a hint of squash taste.
I’m sorry girl, I followed your recipe atep by step but my potatoes were overcooked and pretty much disintegrated into the soup. And the rice in my meatballs were undercooked 😢
Great shot at making this but some advice that meatball making part way to long and too much talking I had to fast forward to ge to the point . Maybe make the video straight to the point

My dad learned this in the Army when he was a cook and my grandma would cook it. One of my favorite childhood memories.
