- Ok, food junkie followers, I got a secret to share with you, I love cucumber and vinegar. There, I said it. In the summertime, we eat this weekly. It is especially good if we have fresh cucumbers. This is my way of making cucumber and vinegar.
Sometimes I make it just like it says, with cucumber and vinegar. Other times I juice it up a bit as I did in this video. On a side note, these are not true quick pickles but they go by this name sometimes.
They also go by refrigerator pickles sometimes too. Most of us around here just call them cucumber and vinegar. Give it a try and see what you think.
Once late May hits in the south, the cucumbers start ripening on the vine. It is the time to enjoy one of the best summertime side dishes. Marinated cucumbers onion & vinegar is a great dish that is so simple and easy to make and a great way to use up those fresh veggies.
You can only eat cucumbers in so many ways. Fresh, cut up on salads, in pasta salad, and there aren’t many more ways to enjoy them. That is why this easy cucumber salad is such a treat. Whip up this quick vinegar mixture and place them in a serving bowl and you are in business!
It gives you another option to use up all those fresh crisp cucumbers you have coming off the vines. There truly aren't many things better on a hot summer day.
The sweetness of the fresh cucumbers combined with the tart and acidic nature of the white vinegar. Cut up a sweet onion and add a little bit of sugar to help cut the acid in the vinegar and you have the basic recipe.
This dish goes by a few different names depending on where you live. Some call it quick pickles or Overnight Refrigerator Pickles. It may also go by the name Cucumbers and onions in vinegar, cucumber salad, cucumber with vinegar salt and pepper, or cucumbers and vinegar. You may also see it called cucumber and onions with vinegar and sugar or cucumber salad. After watching a RUclips video on this recipe for many years, I discovered that this dish is very popular in the Philippines as well. In that country, it may be called Ensaladang Pipino, Pipino with Suka recipe, or Asian Pickled Cucumber.
You could really stop right there and you would have an easy cucumber salad recipe, but we like to add in a few fresh herbs to heighten the flavor. Below we will go over all the ingredients we like to use for the best results for this simple recipe.
INGREDIENTS
4 cucumbers
1 onion
1 cup vinegar
1 cup water
1 teaspoon dill weed
1 teaspoon Sugar
1/2 fresh squeezed lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper

Slice onion
mix water, vinegar, sugar, lemon juice, dill weed, salt, and pepper in a bowl
Add in onions and Cucumbers
Set in the refrigerator for an hour or two before eating.

My grandma made these for me when I was 5 and I’ve made them ever since. I miss my grandma 😔
It’s funny how good connects us to loved ones. I feel the same way. Prayers for you. Summer will be here soon and you will be able to enjoy some of these and reflect on great memories of your Grandma! Thanks 🙏
I know how you feel! So do I🥺🥺
So sorry. 😔
My mother made the same thing and also raw cut potatoes and brown cider vinegar. So amazing! I miss my mother so much 😭
I’ll have to try the raw potatoes in vinegar!
My dad used to make these to go along with his beer. I miss my dad.
Man I miss my dad too. Sorry for your loss and food brings us closer to those we miss. God Bless 🙏
Omg. Same 😥
🥲
I sure miss mine too.
I CANNOT believe that you just made cucumbers & vinegar like I ate allllllll my life!! I was born & raised in PA, near Pittsburgh. My mom always made these with meals..esp when we would have sweet yellow corn on the cob in late July & August. What a great thing to see again!! I thought it was only us who ate these!! These are delicious!! TY! ❤
Yes we love them so much! I’m glad it brought back memories for you. Thanks for your comment.
Same here.. I’m from SWPA and I thought it was some magical thing my mom did( she wasn’t much of a cook lol) I loved onions and cucumbers, she put them in big glass jar in the fridge. They were bomb❤️
My Gram used to slice cucumbers then add vinegar, salt and pepper. I loved it. I thought it was just a weird thing we liked and until this video I never knew it was actually something other ppl did lol.
That is how we eat ours too about 95% of the time. During the summer, we eat them this way at least once a week! I thought it was a southern thing but not sure where it actually came from. Thanks for sharing your story with us!
There are quite a few things that I thought were things that my family just did or made. Pickled cucumbers and onions, macaroni and tomatoes, slumgullian (goulash), hamburger steak, butter on saltines... Those are just a few. My family was from Pitcher, OK. They moved to California when my mom was 8.
Same!
You took me back to my childhood seeing grandma making these. Those were the good days. Good seeing you Ronnie. Take care and be safe. 🙏🏻🙏🏻🙏🏻
Yeah man it does take you back doesn't it? That is what I love about food and music. Both can take you back to simpler times. Thanks Ashley, man I hope you are doing good buddy. Hope things are doing good for you.
You put more stuff in yours, but I loved this growing up as a kid. My mom would make it frequently for me. All we put in ours is just the vinegar, salt and pepper though. Still, it's so good! I even used to drink the vinegar when I was done.😂😂
About half the time that’s all I put in mine too! Thanks Bill!
I drink mine too lol
This is a great and healthy way to eat cucumbers from the garden, especially when you have a bunch. We enjoy making this similar recipe to get our daily dose of vegetables in. Looks like we eat similar things. Keep up the great job!
Yes we eat these a few times a week when it’s the summertime! Most of my garden is about done. I got some tomatoes coming on and okra is doing good.
Thank you for this recipe. My mom and grandmother made this all the time growing up and it is a really beautiful nostalgic food for me. All the best to you!
You are very welcome. Thanks 🙏
Love this recipe! Reminds me of my moms quick pickles when I was a kid. She passed away before I got her recipes …so thanks!
You are welcome. 90% of the time we do just cucumbers, vinegar and a little water. That’s it. Give it a try both ways! Thanks 🙏
My auntie used to do this🙏🏼💓💓💓💓
I love these 💖💖 I always use apple cider vinegar it’s better for me! These are so convenient too, I love sticking them in the fridge and eat them cold 😁
Yes so good! Thanks so much for your comment!
Very nice presentation, and with the soft music in the background. Love these!
I appreciate that.
I love these. I had them as a kid once when my cousin made them. They are sooo good! Definitely going to make them soon.
Yes so yummy. Thanks for stopping by!
Them thangs BUSSIN
Thanks so much.
Yes!!! I love seeing the amount of people who grew up with this as well. I’m in AZ but my family is from the Midwest. We do cucumbers, onions, vinegar, water, salt & pepper! We use ACV specifically bc it’s good for the tum and it’s always been one of my faves since I was little 😊
That’s so awesome and I love seeing ppl who love it too. We typically make it like you mentioned most of the time but I like to jazz it up with this recipe sometimes. Thanks 🙏
Just finished a batch and WOW!!!!!!!!! Great quick recipe. Thank you
Hey thanks for taking the time to come back and comment. I’m glad you liked them. Please share on your social media networks! Thanks again 😃
Your kids are adorable and look just like you!!!
Hey thanks 😊 I appreciate the comment!
Theses are the best I used to work with an old Korean man in a restraunt and he used to make these for us to snack on. He said they would make them as a bar snack in Korea, just like how places have peanuts in Korea they would have this.
Wow that is really neat to know. Thanks for sharing that with me. I love cool stories like that. Merry Christmas to you.
Quickles 😋
Ha! Yes lol 😂 Thanks for your comment.
Thank you so much for sharing this recipe this was one of my grandmother's favorites and she made this all the time and I couldn't remember what was in it ❤️
You can play with it and make it how you like. 9/10 we just cut up cucumbers add in half water abs half vinegar. Salt abs pepper and that’s it! Very clean refreshing dish! Thanks 🙏
ma made this several times as i was growing up... great dish.
Don't forget the onions and spices.
Yes onions are awesome in it as well. Brings back great memories for sure!
My grandma and mom made these. I made for a friend of mine and her daughter, about 5 years old, would only eat these as a vegetable!
That’s awesome to hear. It brings back many memories.
Ooo these look tasty. I’ll give your recipe a try. Thank you! And your kids are adorable
Thanks so much. I hope you like it!
I used to think this was something only my family ate. I come from a mixed race family so we all have a different way of eating it but they all start with a simple base of cucumbers, vinegar, salt and pepper. My mom is half black and korean her dad eats it with kimchi, her mom eats it plain some of my aunts and uncles are half haitian and they eat it with pikliz, my dad is mexican he adds tajin or just eats it plain and I was the first one in the family to add a packet of orange kool aid, my younger siblings eats it the way I do with the tajin and orange kool aid and my mom eats all versions but it depends on what we have in the fridge or cupboards at the time
Wow that’s awesome all the ways you have had it. I’ve eaten this since I was a kid but mom mainly just used vinegar mixed with a little water and that was it. 98% of the time, that’s how we eat it too. I jazzed it up a little for this video.
I’ve never thought of the kool aid. I would try it. Thanks for your comment!
family get togethers must be awesome!
Love those...I've never used sugar though. I usually add tomatoes and olive oil.
Yes, we put tomatoes in it too sometimes. That is the beauty of it, you can mix and match different things. Regular pickles have sugar in them, it just helps cut some of the acidity from the vinegar. You really can't taste it much. Man thanks for stopping by. I hope you are doing good.
I have never heard of this, looks like a good side dish as the weather warms up. Thanks for the video, respects from Los Angeles.
Oh yeah give it a try! I’m sure you will like it. Thanks for watching.
That looks like what we had when I was growing up. I’m going to make them this weekend.😊
Let me know how you like it! Thanks.
I will be making these when I get home. 👍👍. I saved my Claussen pickle brine and cut some spears and put in there last week. Thanks for the video.
Yeah Darren! I hope you like them.
@@SouthernFoodJunkie Made them last night and oh man, they are so good! I didn't use pepper and added a tablespoon of minced garlic and some pickling spice.
Jerome Bee Farm & Homestead Yes you can make them your own! That’s the beauty of it lol. That’s awesome Darren, glad you liked them.
You break it down simple easy and that's what I love about the way you explain simple and easy and quick to make 👍😋👌
Thanks so much! I’m just a simple person lol.
Looking good Ronnie, I make quick pickles a lot, easy to do with other veggies too. Have a great week brother!
Yes they are good with other veggies too. These are not the true quick pickles in the since but some ppl call these that so that is why I threw that in there lol. I love both types though honestly. These are really really quick to make and make a great side dish to just about anything.
Of course anything daddy cooks taste good 😅 haha kids are so sweet. Thanks for the recipe. I bought some cucumbers at Aldi's for 33c each didn't know what to do with them. Definitely trying this recipe tmr. 🙂
Thanks so much! Thats a great deal and I hope you love it!
Thanks for sharing! I like that you don't use a ton of sugar. Can't wait to try this REAL soon.
I really appreciate that. I hope you enjoy it. Thanks for stopping by and have a blessed day!
Quick and easy Summer recipe.
Take care and stay safe,
Rob
Yes sir, thanks so much Rob!
Im a Filipino and fruits with vinegar are the best, Watermelon, Mangos and Cucumbers are my favorite, especially Watermelon cus it has a sweet taste, then for Mangos its sour and the salt balances it
Wow didn’t realize that. So would you mix watermelon and vinegar the same way we make this recipe?
That's it! It's the recipe I've been looking for. I've been craving this. Thanks for the memory! I'm gonna make this and Deviled Eggs.
Yes 🙌 Glad you finally found it. P.S. you can print them out over on my website for saving for later. Southernfoodjunkie.com 👊
Don't have a printer but, all I needed was measurements and ingredients and pretty much a base line. Oh my goodness, thanks 😊
@@saundragearheart4276 Ok! Thanks.
Made my mouth water waiting on my cucumbers
Thanks 🙏 I appreciate it!
We like them cukes the same way Ronnie, I need to try using some fresh lemon in hours!! Thank ya for the share brother!! Dan
The lemons just adds a little brightness to it. I don't always do it this way, just sometimes. I mix and match it sometimes. Sometimes its just cucumbers and straight vinegar lol. Thanks Dan.
This looks delicious. Thanks for sharing.
Thanks for your comment. They are great and so easy to make and.
Thank you so much!!! I've been looking for this recipe for a long time.
You are welcome
Wow yummy cucumber with vinegar and also added red chili.
Yeah we love these! Thanks for your comment!
Thanks for the portion info and the pace bro. Making this at 1am had a craving and no such luck till now ^_^
Awesome 👏 It’s always great for a snack! Thanks for watching.
My family had been eating these for generations. We just call them pickled cucumbers. Vinegar, some water, pepper. That's how we make them.
My mom keeps these in the fridge all of the time. We are never out of these!
About 98% of the time, that’s how we make ours too. We eat them a few times a week throughout the summer when garden grown cucumbers are coming off the vines.
@@SouthernFoodJunkie I'd love to have a garden! I literally have a pool for a backyard. NOTHING is better than homegrown.
@@jennifergorges72 A pool is nice too though! Do a patio garden with a few containers!
Those look good. That’s a perfect summertime snack
Yes sir. They are a great summertime snack. Man I hadn't forgotten about that pizza dough you shared with me. The one in the bread machine. Well I did forget but I keep remembering that I need to do that. I need to do a few bread machine recipes and that is one of them. Thanks again for sharing that.
I’m making your pickles today. I can’t wait to eat them tomorrow.😊
Thank you for the recipe
Thanks so much! I hope you enjoy!
@@SouthernFoodJunkie

Yes these make great side dish! Thanks 🙏
i make these all the time with my dad and i love vinegar i recomend Balsamic vinegar or red wine sometimes both they add alot of flavor
I sometimes use red wine as well! I’ll have to try Balsamic. Thanks
We use to just use cucumber, vinegar, salt, and pepper. Definitely trying this.
Most of the time that is how we make ours too. This one is a little Jazzed up though! Thanks for stopping by!
Reminds me of making these with my Nana ♥️

I'm definitely going to try this. I saw that you added bell pepper to your other pickle video, and red pepper flakes. Have you ever tried adding a jalapeno pepper? Just curious because I love jalapenos. This is the first time I have watch pickling videos. Very good!!!
Thanks for stopping by. You could really put in what ever you want. I think Jalapeños would work great in them!
I like your bracelet
Thanks so much! I appreciate that.
Good on you Rony. At last I found a no bullshit cucumber recipie. Yr the ducks nuts Rony. Yr Aussie mate Tom.
haha thanks mate
My Grandma uses Walla Walla sweet onions here in the Northwest or for folks in the South Vidalia onions. Have you used Vidalia or something else?
Yes love done Visalia onions. The real o we are seasonal though. We use red onions or white onions sometimes in this dish if we can’t get sweet or Vidalia onions.
I used maple syrup instead of sugar and added thinly sliced jalapeños for extra kick
Sounds good to me!
Thx for help these are good
You are welcome. Thanks for the nice comment.
I like to use Apple Cider vinegar and Red Onion, some time Tomato Herbs de Provence
I use apple cider vinegar sometimes as well!
I was kidding, sarcasm is a big part of midwestern culture.

Delicious!!! 😋😋 Yummy cucumbers! ~Dawn
Thanks 😊
Nice video and thank you! Cute kids by the way.
Thanks so much! I really appreciate that and thanks for your nice comments!
Awesome!
Thanks 🙏
Please forgive my dumb question, but the " 1/2 fresh squeezed lemon juice " is confusing to me. Is it simply the juice from 1/2 of a lemon, or...1/2 (cup?) (Tablespoon?) of juice from a lemon, not a bottle?
I’m sorry, I might should word that better. It’s the juice from 1/2 a lemon.
Yummy
Thanks 🙏
I did it and they be bussin
Thanks so much 🙏
That's the way we do it in Arkansas as well. Good Eats!
Amen Preacher! One of my favorite things about summer right? haha. Hope you are doing good.

Ever noticed when you buy pickles in the store they still have the skins on them? It’s because that’s where all the nutrients are you just carved off almost all the nutrients.
I was under the impression that they kept the skins on to keep them from going bad???
Dude I eat the skins but kids don’t like them. They can be bitter and done recipes call for removing the skins. Same as potatoes. I like to eat the skin from a baked potato but most people don’t. I like to eat the peelings on apples but some people don’t. Food is very subjective. That’s why we have so many recipes and variations.
Can you can these for shelf also like this or is another additive needed
No. For to be shelf stable you would have to can them.
I love the kids
Thanks 🙏
What Filipinos eat 🤤
I didn’t even know this until I posted this video. So awesome to find two cultures on different continents that eat the same dish!
Thank you I thought I was weird for liking that but looking at these comments i realize that it is ok to be a little weird!
Nothing wrong with being weird! We are all weird in our on ways if you think about it! I’m glad so many like this recipe too! Thanks 🙏
@@SouthernFoodJunkie Thank you! I just tryed new ingredients on it. I did cucumbers, vinegar, lemon pepper, and garlic salt. And to top it off (just to make it spicy) red pepper flakes. Your free to try it warning though, your mouth will be on fire! Also left some vinegar for the dumb gnats 😎
good recipe, and charming accent, which state? Bama?
Thanks and SC
Hello, Can someone who a diabetic can they eat this? Thank you inadvance
I’m not a doctor but I would just omit the sugar. 98% of the time I never add it anyways. Good luck!
