  • Hello and welcome back to 'Tea Reads,' my regular Friday videos in which my mum (Donna) joins me to bake a delicious teatime treat together and chat about our favourite short reads from the week. In today's episode, we're making a scrumptious frangipane cake with cherries & clotted cream (the recipe kindly shared by a brilliant French chef), and we're sharing some favourite poems and extracts that struck a chord with us at the start of 2021.

    RECIPE FOR FRANGIPANE CAKE:

    BAR DE FRANGIPANE AUX CERISES
    Frangipane with cherries and clotted cream
    Serves 6
    Prep: 25 mins
    Cook: 30 mins
    200g unsalted butter, cut into cubes and softened
    200g caster sugar
    200g ground almonds
    4 eggs
    ½ dessertspoon vanilla extract
    1 dessertspoon almond essence
    4 dessertspoons dark rum
    30g plain flour
    A handful of flaked almonds
    To serve
    1 tin or jar of black cherries in syrup or, preferably, kirsch
    250g clotted cream
    Icing sugar for dusting
    Pre-heat the oven to 180°C / 160°C fan / 350°F / gas 4. Line a 30cm x 20cm baking tray with baking parchment, leaving some hanging over the sides. To make the frangipane filling, simply place the caster sugar, butter, ground almonds, rum and vanilla and almond essences in an electric mixer and whisk until the mix becomes creamy and smooth. Slow down the speed of the mixer to add the eggs, one by one, adding a dessertspoon of flour after the first one to stop the mixture from 'splitting,' followed by the rest of the flour. Pour the mix into the prepared oven dish, sprinkle some flaked almonds on top, and place it in the oven to cook for about 20 minutes.
    Remove from the oven and allow to cool, covering with cling film after 10 minutes to stop it drying out. When ready to serve, release the frangipane from the tray by placing a chopping board on top and quickly (and carefully) turning it over.
    To prepare the frangipane for serving, lift off the dish and remove the greaseproof paper. Trim the edges to make a neat rectangle and then cut into pieces to make several smaller rectangles. Serve the frangipane slices on plates, with some black cherries and a generous spoonful of clotted cream on the side. Dip your spoon in boiling water to allow you to shape the spoonfuls neatly. Dust with icing sugar and enjoy the beautiful flavours with a glass of chilled sweet white wine.

    Hi Miranda and Donna Books and Bakes it’s Friday always my favourite day and now more so Fridays as a child meant weekends with my Grandmother baking and shopping frequently for books such lovely memories 😊 then as a grandmother myself baking with my Granddaughter now even more joy on a Friday watching and enjoying tea and reads with you both. I am a country girl and smiled when you said ice on the windows and when you read about hot at the front cold at the back and put another jumper on
    I remember those days in our old cottage growing up, I am still a country girl but with heating and a wood burner. The smell and taste of almonds definitely one to make Thank You both for the joy you are giving everyone during these dreadful times stay safe and warm Janet 💕

    Dear Miranda and Donna, you are a wonderful tonic in these 'hard to deal with' times. The NHS would do well to recommend your channel to everyone to help with their comfort and well-being. Sharing this time with you has made me feel safe and warm and far, far away from the 'madding' world.

    Good on you Donna your eyes are ok! Im 69 no glasses yet but that modern way of publishing with coloured text ....tsk!
    Love your reality checks girls makes your videos like little visits by friends dropping to have a cuppa and eat a delicious treat together. Sharing... snippets of good reads and enjoyments over the last few days. Perfect as we bubble along here in Oz confined to our homes fortunately only to avoid the heat of the afternoons. Being a marzipanny vanillaery girl I will definitely try this cake too. Ill make for my next bookclub gathering. Ill let you know how it goes. Thankyou so very much. Enjoy getting cosy by the fire.     Hi Miranda and Donna. I am so happy to have Tea Reads for 2021. Your bake looks delicious. Clotted cream is practically nonexistent in my area. There may be tea shop in the next town north that would have some. I have also seen Devonshire cream in a gift shop while traveling and have wondered if there is much difference in the two. I can certainly identify with your shock of ice on the inside when you awoke. The first winter of our marriage in 1980, we awoke one morning to ice on our bedroom wall. Neither one of us had ever experienced that before. Luckily, my husband's parents lived very close by and had an extra small gas heater which my husband and father-in-law installed very quickly and we never had ice on our bedroom wall again! I am already looking forward to next Friday. Have a nice weekend....... Crystal.

    So enjoyed watching this. My 3 year old joined me for the baking session and is determined that we should try this recipe. I too enjoy reading detective stories in bed and the rover Louis Stevenson poem was great as was the readings from your mums choice. Have a lovely Saturday. xo

    Happy New Year to you both and what a delicious start! Yes bring back teatime - it gives a purpose to the day at home and work, and especially since we often don't rest as much as would be good for us. I remember (years ago, sadly) being at work when the tea trolley would roll round and we would be given tea in a china cup and saucer with a biscuit and we all stopped, albeit for a short moment, and I would get out my book to read a page or two and continue work refreshed both mentally and physically. Thank you for a lovely Tea Reads and for a lovely memory too. 🫖☕️🥮📚💖

    I agree with Donna, I’ve made my own galettes over the years but I’m never happy with the results although people are very kind and eat it!🤣😂

    This was so comforting! Honestly, you should bottle ‘Essence of Tea Reads’ and sell it as an aromatherapy oil! Your fortunes would be made. Love ‘The Morville Hours’ and you have reminded me how wonderful it was to listen to it on audiobook. I’m a big Miss Read fan and must look out for her ‘Country Bunch’ collection. The almond cake looked amazing; almonds add such a beautiful aroma and texture to bakes. I really must try that recipe.     Hey Miranda and Donna that Frangipane looks Delicious and Difficult 🍰“We like what we see” Donna just saying that after reading the poem made me get emotional, because I don’t always like what I see outside of my home.. but today I will go out of my way to find beauty in what I see ...Living in the country must be a Beautiful Gift...the first Tea Read of 2021 didn’t disappoint 🥰....     Hello - welcome back both, and best wishes for a happy new year. Thank you for the great recipe, and the great reads. I have a copy of The Morville Hours, and you've reminded me to look it out again. Also the essay about reading detective stories in bed made me laugh - it was just so true for anyone who also enjoys doing that. The poems were really touching, and even though we are going through tough times, made me concentrate on the beauty of the seasons. I love a galette des rois and I normally bake one for Epiphany, but I didn't this year as things are not quite the same - I'm afraid I use chilled puff pastry from the supermarket though! 🤫🙂👑

    Enjoyed very much. I am afraid after listening to your vlogs I have been buying a lot of books that you've been recommending. Blowing my book budget. 😂My husband would say what book budget? 😉 I just received my first Persephone book Random Commentary by Dorothy Whipple. I love it. Love Miss Read too.     I went to Fabrique and tried the cardamom roll you both mentioned. I have to confess I’m not a fan of cardamom, but it wasn’t bad. The cinnamon roll though was simply divine. I eat a low carb diet, so it took me a lot of courage to actually eat it. But I don’t regret .
