Hi. I'm a new subbie. I can't believe I didn't come across your videos before; but I'm glad I've found you now. I oven-fry the same way your son does, sometimes, I don't use the flour. They will still get crispy. I just learned about using parchment paper instead of foil to keep the wings from sticking too much. It also helps with the oven frying. I sanitize my hands the same way and my dishes, especially after dealing with chicken. Thanks for your spirit. I can tell you enjoy cooking.

I add some spices and panko to the flour and now use two metal bowls: one for the chicken, one for the flour mixture. And tongs instead of hands to flour the wings. Mouth is watering!
