All of you out there who have found this lady's channel: she is a really, really, really good cook! I'm a 76 year old white lady who can cook all kinds of cuisines because I like to cook: Thai, Italian, German, not so much Chinese, Pacific Rim, grilling, and plain old meat and potatoes. Chris's channel is a wonder to add to my cooking knowledge. Those who know about her downhome cooking have an advantage. I'm having the joy of learning from her! Naturally, I added my own twists. But, as you can guess, I eyeball all the ingredients and have no idea about a teaspoon, tablespoon, etc., while I'm mixing this up. Thank you for the offer. I'm sure you know what I mean about making familiar recipes. Love your channel and continue to learn from you. In my case, channels like yours are refreshing.
Mitral Golden Me too! Watching Chris cook reminds me of how my mother taught me how to cook. We had a large family with a lot of big eating men and to cook for them you better know what you were doing.
Most of us over say 40 watched a mom or grandma cook like this. When Mothers chose or had to work full-time it slowly became old school. I cooked a lot after work, but I honestly began using take out on my way home. Yrs ago Long Johns had a huge family meal for $16. For a family of 4 that was great! Churches Chicken had large family meals better & better priced (KFC was way too expensive), and a lil Family Owned Restaurant had a Huge Lazagna they sold for $20 with Bread sticks. Those were my choices on my way home. I cooked Big Sat and Sunday Afternoons. Working moms have it hard unless you find good pickup instead of drive thru burgers.
I like that you don't want to waste any part of what you have prepared, Chris. Also, I appreciate that you use wooden utensils that do NOT make unnecessary noise when stirring foods in pans. God bless!
Chris, you are such a blessing. I'm 64 and started cooking with my Granny when I was 9. I helped her slaughter the chickens for Sunday dinner. I guess you could call me Old School! Everybody needs to make your smothered pork steaks. We had that meal tonight. Can't even begin to tell you how good it was!! Hubby thanks you.

Now that is home cooking ! We're from South Carolina and that's how my mom used to cook for us. Smothered pork chops, rice and collard greens or smothered chicken ! It does not matter how many times I cook something that my mom did it never tastes as good as what she used to make !! Lol. Thank you for sharing and the memories.

Had to laugh at the remark about the inside of the walmart bag being nasty. seriously? And even if it had a germ or two the cooking would kill that. I've been using grocery bags for frying things for decades just like you. Keep on cooking those wonderful meals because we all love 'em.

Remember when we all used the brown paper bags to drain our fried chicken? and that was the OUTSIDE of the bag.. And we ain't dead yet and when we are it won't be from that! LOL

I found this recipe and made it using chicken breast . I made it for my grandparents . They loved it. It’s very simple , EASY Clean up . And it’s a time saver , I will definitely be using this again .

Ur recipes are authentic southern style and delicious and ur tutorials r spot on, confident, and straight on. Natural born instructor. I also enjoyed watching the video by ur son Charles. Thank u so much for doing ur show. I don't know if u r familiar with the recipe for the chocolate candy like pour frosting. I have attempted to locate it without success. My mother would use this pour candy frosting when she made yellow, pecan cake. It was a recipe she got off the Hershey coco can.

I grew up (long ago now) in a meat-and-potatoes style of cooking. My mother cooked with lard, and food tasted good. We need fats in our diets and good butter. omg that looks so good i miss good old southern cooking i use to live in Tennessee and my boyfriends mama's use to make this all the time i so need to learn how to cook it!
I also use Uncle Ben's rice...comes out perfect every time. I add 1 tablespoon of vegetable Better Than Bouillon to the water before adding the rice, that I have toasted in butter...my family loves it...

I'll have to try this dish! I'm Japanese American living all my life in California so canned peas is a foreign dish to me. I think the last time I had canned peas was the Roadkill cafe in Twisp, WA or was it Idaho. This type of cooking just doesn't happen in California, and certainly as an Asian we don't butter our rice. But I still want to try it... but maybe not the canned peas.
I can not wait to make this tomorrow!!! The plate that you showed at the end looked DELICIOUS! Maybe one scoop of rice and one piece of chicken would be better for me - trying to lose weight :( but I'm so excited! lol :) Thank you for sharing this :)
While I do have sets that were given to me as gifts. I don't buy them. I like pieces, that way I can get just what I need and like. My brand of choice it Cuisinart. I usually get them at TJ Max Home Store, Ross, Marshall's and Bed,Bath and Beyond. I love those stores. The rice pot came from Ross. Under $15.00.

That left my mouth watering! I do feel concern about your using those used(?) bags. If they were used bags, please reconsider using them in food preparation. The belts at the registers are absolutely filthy with harmful germs & products pick up those germs before being put into the bags. Not at all sanitary for food preparation. God bless!

Is it safe to use the flour from the chicken batter for gravy? I did that before, but my mom told me is not good to do that due to raw meat and bateria. Thanks

I love using Carnation Evaporated Milk in gravy! I also like to use it in mashed potatoes...

Is it safe to use the flour from the chicken batter for gravy? I did that before, but my mom told me is not good to do that due to raw meat and bateria.
